Well, got my I.D. for the gym in our complex...got a 9:30 slot tomorrow...will try treadmill and recumbent bike.
Taking the second french fry cutter back...way too complicated and hard to clean. goes back tomorrow.

I had a decent day... just busy as usual. I have some work yet to do this evening, but I did manage to get out of the office on time for the first time in a while.
I would say the COVID slowdown at work is officially over and I'm swamped now.

Today was good WFPB. No salty snackies. I had a bigger lunch. Salad AND soup rather than just a soup. Helped keep me full and away from the pretzels.
B - oats with all the usual additions
L - salad and a Dr. McD soup
D - will be tuno salad and lots of lettuce on ezekiel, watermelon

Just got a call from the the rec center...closed tomorrow...Covid possibility. Darn ...I had a 7 am schedule for tomorrow.

Morning all...well, the gym is closed. Someone, who had used the gym, tested positive. I did not touch anything without my clorox wipes and did not talk to anyone NOR use anything other than the recumbent bike (which I could not use, could not bend my knees) and the treadmill.
Used sanitizer on the way out.
Anyway, pot luck today...bringing things I can eat. They are having Indian FRYBREAD...bread that is FRIED...oy vey!
And chili and all kinds of stuff that will not work for me.

I am finishing my coffee and off to go grocery shopping. Here in Texas, the virus numbers are on an upswing, so I will continue to be vigilant. Which reminds me that I need to go find a ponytail holder. I have long hair and wear it pulled back when shopping so that I cannot accidentally touch my face because hairs are tickling me!
Menu today will be the usual. I am all out of fruit except for frozen blueberries and fresh apples and jicama, so I am looking forward to getting something fun (pineapple? mango?).
MihaniCongratulations on staying away from the pretzels, as you wanted! Woohoo!
Things are good here. Thanks for asking! I got COMPLETELY caught up on Scary-Behind-Project #1, which means I can now focus on Scary-Behind-Project #2. Woohoo! Starting in earnest on that today!

Oh what a bummer about your gym, Magic. Glad you were taking some safety precautions. My guy is a black lab mix and not sure what else is in him but he's on the small side for a lab (60 lbs) and smaller boned than a typical lab. He was all black with white on his chest and feet, but now his muzzle and head are speckled with grey. He's still a puppy at heart though, loves to play, and charges into the yard to rid of the squirrel menace at every opportunity!
Austin, yay for getting one project caught up! That's a big relief when we can get something off the plate and concentrate on the next task. Good luck with grocery shopping. I have Prime Now coming this afternoon. I worked from home today. To be honest the main reason was I am feeling a bit depressed right now. I think COVID immediately followed by all the unrest just has me in a total funk. I hope a day of quiet and cleaning up a couple projects will help me reset my attitude.

I just cleaned out the fridge and tossed everything that was just not so. I see I need to make some veggies that are not going to last much longer, but also need some salad things...so one quick trip to Sprouts early tomorrow.

I have had a good start to the day. Rest of the veggies are washed and ready to go. Housework in progress, and checking in here to say hello. I'll be working on project stuff today - yay!

L-steamed zucchini with chopped fresh tomato & onion; steamed mushrooms & carrots; steamed acorn squash & diced fresh jicama; turnip greens & white beans with my fave hot sauce (anyone else love Valentina?)
S-apple slices & cashews
D-big salad, plant-based dressing, maybe some steamed acorn squash & diced fresh jicama

Hi Ladies... hope everyone had a good day today. It was really busy at work and had some issues with a couple things that were just the icing on my cake of a week. I have a couple things to finish tonight but not going to do much work and go to bed early.

D - will be more salad and an apple
I didn't get around to making my soup last night and will probably wait until tomorrow now. I've been adding beans to my salads but think I'd like to make some E2 hummus and the soup to get my beans in.

My Monday...not doing so great ... watched the news, which I had no business doing. Sicker than ever over whats going on now. Today, NO NEWS.
Not ready with food for work...not sure what I am going to do. I have Amy's frozen in the freezer...might just go that route for today.

Oh wait, I do have a bit of good news that I could surely focus on. I have a doctor's appointment next Tuesday with A PLANT BASED DOCTOR. Well Your World, Dillion Holmes, who lives in Phoenix recommended him. I had asked him if he knew any here...that would take my insurance. Medicare plus Aetna Advantage.
So that's kind of exciting.

I picked up my goodies from my salad prepping friend and stopped at the grocery after work. All set for a good week just need to do a little putting salads together, make a salad dressing, bake some potatoes and maybe some quinoa, and chop up a red onion to make pickled onions. I am addicted to pickled onions! I don't feel like my salads are as good without those. I also got two packages of mushrooms and will make balsamic roasted mushrooms. Those are always the hardest thing for me to get in daily, even though I love mushrooms.
I see someone posted a new thread so I'm off to welcome and respond.

She puts everything separate but I sort it into containers for each day of the week myself (except onions since they would overpower the salads), then I know what I have and I reserve extras for a batch of cooked veggies. If she gives me red onions I pickle them and keep separate. If not then I make my own pickled red onions. She's really great about mixing it up for me so I have a variety every week. Lifesaver!1

I should point out... some weeks my lettuce doesn't seem to stay as fresh, but I don't blame her. She uses a variety of lettuces week to week, but it's not her fault I have the same problem when I prep my own. Lettuce is fragile at times, but most weeks my lettuce lasts. If it looks fragile then I grab a box of spring mix or romaine to supplement and I don't add the lettuce to the daily mix until the day I eat that salad.1

Alrighty then...everything is in separate containers when she gives it to you, YOU go ahead and make up containers with all the veggies in each (except the onions). The lettuce sometimes does not last ...so you supplement that.
You know, I used to make mason jar salads...and they KEPT REALLY WELL. I just thought of that! The hard veggies that last go on the bottom...and then you just layer. I am going to try that...if fact, will make up three salads tomorrow morning. YES … that's the ticket. The delicate herb/leafy greens go on the very top. Take dressing with you on the side.

Then at work, I dump it all into a bowl and mix it up and eat it. I used to work 5 days a week and needed five salads...and it worked. I can't believe I forgot about this.

Oh, and I just found out the girl that always pushes my buttons will be going to Tue/Wed/Thur only beginning September. I will NEVER see her. Oh happy days.

Hope your prepping went well, Magic! I would not eat my salads every day if I didn't have them prepped and ready to go. I love salad and have no problem eating one every day, but chopping every day? Not happening! LOL
I have to take the boy for a veterinary appointment this morning. Going to work until then and back to work when we get home. I have a lot of work I brought home and I need to get through as much as possible today and tomorrow because I'm feeling way too overwhelmed right now. I'll take time tomorrow to do a big prep for the week and catch up laundry. I want to concentrate on work today. My prep plans include a big batch of cooked veggies and greens, balsamic roasted mushrooms, E2 hummus, baked potatoes, quinoa, un-honey mustard dressing.

I did not prep when I got home...I forgot, I would be tired. It sounded good at work, but after 12 hours, I got home and wasn't feeling it.
Sunday morning is free, will prep three salads, since that is as much Trader Joe's herb salad I have.
Good luck with all the work...and the appointment for your boy! Clean bill of health.
Today, just 11 hours...tomorrow 8 and Monday, 7 and then it's my weekend again. Lordy Bee!

I quit on work and started doing some cooking tonight. Made baked potatoes, balsamic roasted mushrooms, cooked veggies with 3 bunches of kale, glowing spiced lentil soup, set up my salads and will make un-honey mustard dressing here in a few. I forgot I got two bunches of asparagus so I will cook those up in a skillet with soy sauce and ginger. Should be all set for a super healthy week. Skipping hummus and quinoa. Will make later this week when I start running low on what I have already.
Dinner will be some of the soup and corn on the cob.1 -

I, too, have found Mason Jar salads a great prep system. I'll nudge my husband about that, and see if he'd like me to make him a set this week. In the past, he has sometimes gotten into a groove of eating more veggies that way.
And whoa - you connected with Dillon Holmes to ask ask about a plant-based doctor? Wow to your asking! I hope the appointment goes well.
Mihani - I hope that your day is going well. It sounded like you had a lot to do, especially with all that work and the vet appointment. I hope all is going smoothly!
I have had kind of an odd day. I had a couple of days in a row of not sleeping so well, and today I just seemed to need to catch up, so I actually took a nap. Getting back to Saturday to-do items now!
My menu is on track today. I do need to get in some more exercise, so will likely tackle that soon.

Yay for naps, Austin. My favorite thing to do on the weekends. I think I was a cat in a past life. LOL
I made a huge stock pot worth of cooked veggies yesterday. Onion, carrot, broccoli, purple cabbage, yellow squash, peppers, and 3 bunches of kale wilted in at the end. It was so much I filled a 2.5 quart container and still had to use another 4 cup container for the rest. Going to try Chef AJ's veggies for breakfast again this week and eat a big bowl of the cooked veggies every morning. Then I'll take my oatmeal (1/2 cup oats with blueberries, a couple walnut halves, tablespoon of chia seeds, chopped baby spinach, tumeric, cinnamon, black pepper) to eat at the office. I filled up 6 serving containers and threw them in the freezer.
Forgot to make the asparagus last night so I just cooked that. I had two bunches so I cut into about inch long pieces and water sauteed with a splash of bragg's and some ginger.
My plan for the week is now super simple since I have enough food prepped for 5 or 6 days. It may seem repetitive but I don't mind eating the same things every day. I enjoy cooked veggies cold either mixed into my salad or alone. I definitely feel different when I know I have a fridge full of healthy options. Like it would be a waste of all that work not to eat what I've prepped and stay away from the salty snackies.
One other thing I plan to do, which I don't have this week but will start next week, is to keep a container of raw veggies in the fridge at work. Like carrot and celery sticks and pepper strips, cucumbers, grape tomatoes. That way if I do decide I want a snack those will be ready to go and keep me away from the dreaded snack cabinet at the office.
I also didn't make the corn on the cob last night. I think I will roast it today with a lemon tahini mixture, parsley and black pepper.

I eat my oats raw with almond milk and frozen blueberries and flaxmeal. No milk made, so no oats today.
