    Hi Magic, your mason jar salad looks lovely! I just add a little bit of hot water to my oats when I'm ready to eat. I don't like them soupy so I add just enough to thaw the blueberries and soften the oats a bit. I rarely use non-dairy milks anymore other than for recipes. Not sure why other than I just lost my taste for them. I prefer smoothies and oats with water.

    I got through some work today, now doing a load of laundry while I eat a salad, then back up to my desk for the evening. Hoping for a smoother week. Last week was really stressful and unproductive with constant fires to put out.

    I made up three salads...and did not steam the broccoli (wish I had...tastier than raw)...I forgot I did add some sliced olives...and the one ounce of organic raisins really helped. It totally fit in the Lock and Lock plastic container I brought to dump my salad in.

    Tomorrow, I think I might add some rice noodles (the ones from Costco...ramen that are in bricks)...I can cook them up really fast with just hot water.

    The balsamic dressing by Well Your World Dillion Holmes was tasty and SOS free.

    I'm happy with how it turned out...keep in mind I eat at my desk and I am a receptionist. Ugh. Tomorrow I will bring kitchen shears to cut the pieces smaller...also, I think I could have packed more greens in.

    I have made up to five salads ahead of time, back when I had a lunch break and ate in the lunch room. I never thought the greens would stay good...BUT...

    if you pack them in tightly and get as much air out as possible...it really works!

    These would be great for a road trip...pack them up and put in cooler and have along the way at rest stops.

    Alrightly, one last thing...I am totally with Mihani about doing all this prep...it totally keeps one away from the snack chips and crackers...too much work invested.

    PS When I dumped the salad into the Lock and Lock...all the stuff on the top is now on the bottom of the Lock and Lock. So you can't see any of the lettuce/herb salad.

    Gosh, I just saw this. Thanks for the tips on how you eat oatmeal. If I were cooking it, I would just eat it with water. I do like it the way I described. But I might just give your method a try. So it would be 1/2 cup oats...bout 1/2 cup frozen berries and flaxmeal...1-2 T...and then hot water over that? And wait a few minutes and then enjoy? Might try that.

    I just started eating mine with the milk over raw with frozen berries, cuz Dr. Esselstyn was eating that way. LOL

    I am so glad I ate my salad...I was tempted (can you believe this) to call Jimmy Johns. Now that all those good veggies are in my tummy, I'm happy and proud of my work today...staying WFPB! Yahoo!

    You guys are so encouraging...love being around you two. You are both so very WFPB...and I am slowly giving up my plant based convenience foods...(still a bunch in the freezer for emergencies)...but what a difference when I stick to real fresh food!

    Loving this new Mason Jar Salad Kick I am on...thanks Mihani for sharing with us your food prepper....made me realize I need to be my own. (You lucky dog, you...having someone to help you with your crazy work schedule...that is great!)

    Austin, so many ways to make these...personalize for husband and son.

    For my next three, I will change up ingredients.

    I also have a plan in my head to DECLUTTER my home. One room at a time. Starting tonight. Love you guys!

    Magic - I love your jar salad! And I was tickled to see the picture in front of the screen showing the post you were composing. Very fun, very meta!

    Lots of salad love in my world today, too!I made a big salad dinner for the teenager at his request, and it was even mostly vegan. I did include a couple of spoonfuls of Pad Thai sauce, which includes fish sauce, vinegar, sugar, and tamarind paste. But the rest of it was vermicelli rice noodles, cabbage, carrots, cucumber and green onions. He is happy and full and had a tasty and nearly vegan dinner. Woohoo!

    You menu inspired me to go look at recipes for oil-free balsamic vinaigrette, as I have not made one in a while. I may try the Forks Over Knives recipe for 2-Minute Oil-Free Balsamic Dressing.

    Mihani - All your food prepping is so inspiring. I am thinking about what I might want to prep, as I get ready for this week's shopping trip.

    I just spoke to the teenager, and he is interested in my making tamales this week if I have the energy. Minimalist Baker has a recipe for vegan black bean and sweet potato tamales. We'll see! It's a lot of kitchen work, but he won't be around forever! We also need to make a Russian-inspired meal, for a wrap-up of his geography studies for the year, so I may have several adventuresome cooking days this week!

    I am doing well on my plant-based menu today. I need to get myself to bed earlier to see if I can interrupt my rocky sleep thing of the last few days. So I am off to exercise and eat a big salad.
    Today's menu:
    B-green smoothie (spinach, broccoli, blueberries, cinnamon, turmeric); goji berries; almond butter; sliced peaches
    L-steamed zucchini with chopped fresh tomato & onion; steamed mushrooms & carrots; steamed acorn & butternut squash and diced fresh jicama; turnip greens & the last dab of white beans & garbanzo beans
    S-goji berries; almond butter (I was craving something extra rich; only about 100 calories, but oh, so good!)
    D(planned)-big salad, plant-based dressing (balsamic vinaigrette?), maybe some steamed acorn squash & diced fresh jicama

    Everyone seems extra veggie minded this weekend. :) I had a good day. Still working but will knock off at 10:00 and head to bed. I did some yoga earlier which helped loosen up my neck and shoulders.

    B - some of the cooked veggies, cup of the soup
    L - baked potato and asparagus
    D - big ol' salad, a clementine

    Also concentrated on lots of plain water today instead of drinking so much sparkling water. Not that there's anything wrong with sparkling water.

    Magic, I also add finely chopped greens to my oatmeal. I'm weird, I know! Your salad turned out so nice.

    I've never made tamales, Austin. I remember the first time I ordered them at a restaurant, many many years ago, and I didn't realize they were in a husk... I was glad I had someone with me to explain it wasn't like a tortilla so I didn't try to eat it. LOL

    I did make Borscht some years ago, speaking of Russian recipes. It was unbelievable, but I had just looked at several vegan recipes and then took off on my own with it. I do that a lot but I never make notes so many of those experiments can only be enjoyed once in a lifetime. I should give it another try one of these days.

    People are setting off fireworks in the neighborhood lately and it scares my dog so much.

    I love borscht...Jewish and our home always had borscht...I probably did not love it as much as I do now, when I was a kid. I really craved it when I was going through chemo. Probably a good thing. So Mihani, when you make your recipe again, write it down for us.

    I made my veggie sammy...Ezekiel sesame toasted is so good. Just the perfect dinner.

    I am going to now make my almond milk so I have oatmeal tomorrow. I think lots of peeps put greens or zucchini in their oatmeal. It's very IN!

    Ladies it was a very good food day, thanks to y'all!

    Making almond milk and then off to watch something fun on tv.

    At work...today's plan:

    coffee
    oatmeal with flax meal, cinnamon, blueberries, almond milk
    salad...dressing is seasoned rice vinegar and one teaspoon toasted sesame oil (full disclosure)
    grapes
    Toasted Ezekiel veggie Sammy featuring avocado, tomato, onion, herb lettuce, Persian cukes
    watermelon Good Pop

    Oh My Gosh! My salad today is so, so good. Granted I did use a teaspoon of toasted sesame oil on the noodles...and 1 T of seasoned rice vinegar...but man, did that make a difference today. The noodles really help to bulk up the meal...I'm in salad heaven!

    Nap as soon as I get home. Hoping for a quiet getaway to my weekend today. Last Monday, was not so good...and gave my weekend a horrible start!

    After a nap, diving into cleaning and decluttering my kitchen...breakfast, lunch and dinner are ready for tomorrow.

    Loved my oatmeal today...the blueberries were the bigger organic frozen...not the wild organic frozen, which are tiny. It was perfect … every bite, a burst of blueberry.

    Hi all... busy day at work but I got out pretty much on time. Had to run something by the bank for a client but home by 5:00. Yay! I am eating some leftover soup now, and freezing the rest because I have too much food.

    D - bowl of soup, big ol' salad, clementine

    Got all the GBOMBS 2 days in a row. Woohoo!

    Did pretty good yesterday...maybe over did the avocado.

    Today is my doctor's appointment...not til 10:15...I hate to eat before ...so will hold out til I get home and have a very late breakfast...I totally enjoyed my oatmeal yesterday.

    Glad you got home by 5, Mihani...your job is crazy busy!

    Tamales...last night I saw something on youtube about tamales...let me go look...brb.

    Hurray for friends that can share my excitement about great salads!

    Magic - Sesame oil is amazing stuff. If you are going to have a tiny bit, that's a great one to pick! You get so much flavor from that little bit.
    I hope your cleaning and decluttering is going well!

    Mihani - I keep seeing clementines on your menu, you lucky girl! I can't always get those, and then I do, The Teenager pretty much vacuums them up. I am shopping today, and hope to get more.
    Yay to the GBOMBS!

    I had a delicious start to my day -- the last mango in the house was part of my breakfast. Need. More. Mango!

    Okay, I am off to the grocery store! It's shopping day, and I am out of so much stuff!

    Had someone call in sick today so it was a bit hectic, but I made it through. I was working until almost 10:00 last night and then couldn't get to sleep so I was tired. I have a couple things to do tonight work-wise then I'm going to bed. I did yoga last night and felt great, but today oh my could I feel it. LOL

    I think the key is to keep at it and not take these days long breaks. I have to keep working at flexibility and strength. So I will do my yoga tonight too. Come hell or high water, the yoga will get done every single day. That's my vow from here on out.

    How did your appointment with the doc go Magic?

    Hope you had a safe and quick trip to the grocery Austin! Clementines are so easy and tasty, I try to keep them around all the time. Those and apples are my favorite go-to fruits.

    B - leftover cooked veggies
    L - asparagus and baked potato, small salad, clementine
    D - not sure yet, not too hungry so maybe just a little of the leftover cooked veggies and an apple

    Horrible day. Found my way there...used instar and it was 40 min away! Appointment was at 2:15 not 10:15! They goofed! Did not want to wait around...rescheduled for tomorrow at 1. Had girl write it down.

    I was depressed all day. Got nothing done!

    Will check on tomorrow.

    Sorry just not into it today...not like me.

    Thanks so much, sweetie! I did not get my declutter plan started today, cuz I wanted to be calm for the appointment and wanted to leave at 9 since I did not know where I was going. Even using ONSTAR, I got messed up at the location...so many buildings, so confusing...and hot!

    Anyway, I have to start early, since I am using the gargage to take everything out there so I can clean the kitchen top to bottom and delclutter.

    Feeling overwhelmed with this mess.

    I will try tomorrow morning. The temps are so high that you have to do all this early.

    I am going to make dinner and then just chill for the rest of the day.

    Morning glories! Better day today. Last night, after I posted the above, I stopped feeling sorry for myself and began to put my DECLUTTER FAST plan into effect. I have been fighting with clutter forever it seems. Lord!

    Anyway, I pulled out my Mimi Tanner, DeClutter Fast, ebook, which I had already printed out long ago and began to use it in earnest.

    Long story short, at this moment 6:30 am, everything in the kitchen is staged on folding tables in the garage so I can make sense of the mess. NOT SO OVERWHELMED NOW.

    Thanks so much, Mihani, for your post...it just gave the bit of support I needed to snap me out of my funk and get going. Very grateful. <3

    Love you guys. <3<3 Doc appointment today at 1, will report back to you. Back in the groove. B) The news is OFF, btw.

    The one rule that must be followed is:

    Only ORGANIZE as much as you can do in a day (two at the most)...that means, the car must be back in the garage at the end of the day...(two, at the most)!

    That way I do have another DISASTROUS MESS on my hands, while trying to fix the FIRST MESS!

    And ONLY ORGANIZING ON MY WEEKENDS.

    Austin, how are things going there?

    I had a horrible headache all day. I have a couple things to get emailed out for work tonight then I'm going to address my dining room table. I don't use that room and I tend to pile things on the table. Right now there is a bag of dog food, some pantry goods, a few cookbooks, extra storage containers. I still have Christmas wrapping paper on there. Seriously. It's June 17th! :huh: And will do my yoga. I have been looking into stress management and mindfulness classes. Think I'd like to get back to some more disciplined practice than I've managed to do on my own.

    B - one of my freezer packs of oatmeal
    L - Dr. McD soup, an apple, a couple wasa crackers
    D - will be a big ol' salad and a clementine

    I did some more research on mindfulness classes and all are remote right now. Ugh. So I signed up for a Zoom class next week, free introductory class. Ordered a webcam on amazon, which I really didn't want to do, but it should be here Friday and I'll deal with it. 2020 is SO not my favorite year. I'm off to bed to read and get to sleep early.

    Good for you, Mihani...making steps to improve oneself takes courage...I admire you for giving it a go. Especially devoting time, which I know is at a premium for you.

    Doctor's appointment went great. Just the nicest guy...easy to talk to.

    He was not concerned at the bit higher numbers on my cholesterol...but gave me a blood test today to see where I am now.

    Very happy to see I am plant based for a year...thinks I am very healthy.

    Would like me to think about knee replacement...to give me a better life. I have done everything possible to reduce the pain, but I am still limited in what I can do. Mainly long walks with Lulu. She is losing out.

    I think I might be ready next year. Winter time...early spring. Oh he also said he would be ok with me having cortisone shots...I think that's why he called them...what else would they have been, starting with a C.

    I tried the other kind of shots, they did not work.

    What he said, was I could call anytime and go in for a visit if anything was bothering me...especially how I wish to proceed with my knees...like shots for the time being.

    Today, he gave me a TDAP shot (tetanus) and pneumonia...told me to get a shingles shot...you get those at the pharmacy.

    He has ordered mammo, colonoscopy and bone density.

    Very thorough. Very caring. And most of all...he was happy with my health and the path I have been taking.

    He did ask how I came to being plant based...

    I said, first for health...trying to reduce the inflammation in my knees...and then...it became about the animals. Will never go back.

    I probably need to lose 20 - 25 pounds...but you know what? The doctor was more focused on my health and the fact that I was plant based with no lifestyle illnesses...no Rx at 71. He liked that...and said so. That was a first.

    I love my new doctor.

    Good evening, peeps!
    Tuesdays are always super busy for one of the projects (Scouts), and I had follow-ups today from that. I am caught up for now - yay! I had another round of shopping today, as I had yesterday bought a life jacket for the teenager's boating trip (which was today), and it turned out the size was wrong. So back today to a store today to return the overlarge PFD and then on to another place to get a PFD that would fit. All worked out well, and the boating trip was a huge success.

    And on a taking care of myself note, I got in my exercise and kept up with my Dr F menu today, GBOMBs and all.

    Magic - I am looking forward to hearing about that doctor appointment. I so hope it went well.
    As Mihani says - it is so great that you picked yourself back up and got going. You are our Energizer Bunny!

    Mihani - I had to smile about the Christmas wrapping paper. My holiday stuff has made it into the garage, bit it needs... work. It got left in a pile. Just to say -- you are not the only one!
    Your note about yoga reminds me that I want to do at least a few minutes of that before bed!

    Wow, sounds like your appointment went great, Magic! So difficult to find a doctor you like. I've been with mine for over 30 years. I live in fear of him retiring and having to find someone new. I know several people who have had knee replacements and it was life changing. Surgery and recovery are scary though, I get that.

    Austin, thanks for letting me know I'm not alone in still having Christmas paper lying about! Excellent day for you. Glad your son enjoyed his boating trip.

    Magic - You must have thought I was a bit of a nut, saying something about looking forward to hearing about your doctor visit. You post did not show up for me at the time I logged in. Weird!

    So, catching up now... Your new doctor sounds so great! Nice and easy to talk to are so important. He sounds caring and meticulous. How wonderful! I love that he is so focused on your health and really got how impressive it is that you have no lifestyle illness prescriptions. I think that is so huge.

    By the way -- do get that shingles vaccination! Shingles is awful. My mom had it. It was very painful and took months to subside. And this is someone who east really well, does not carry extra weight, is active daily, etc.

    Mihani - I hope that your new webcam arrives and is easy to set up. Tat mindfulness class sounds like a great idea!

    You are so lucky in having a doctor you like so much! I have a dentist that I like that much. My doctor is not someone I like that much. He's not a great listener, but he is also fabulously smart, efficient, and a very straight talker. So no warm fuzzies, but a good consultant for me on medical care!

    Austin, everyone I know who has had shingles has told me it is agonizing pain. I agree with you if the vaccine is recommended get it.

    I am not into the webcam thing at all, but seems that right now if I want any sort of face to face interaction that's what I have to do. I am very prone to anxiety and mild depression, so this year has been a chore for me and I am feeling myself getting to a point so I want to do something proactive. Feel like I'm doing something to bring myself out of it. Making sure to do my yoga every day has helped too. Especially with work going absolutely crazy over the past few weeks. As well as continuing to eat right. However, I am still indulging in alcohol on weekends and that's not good. Thing is, my tolerance for alcohol is waaaay less than it used to be, so I really can't drink that much. A silver lining to aging? LOL

    Magic, hope your day went well and you are continuing to make progress on your organizing and prepping. I am so happy to hear you so upbeat and positive about your new doc.

    Morning my sweet peas...did not check in yesterday....totally felt like crap...the nurse said I might ... because of the two shots. Felt tired and achy...only thing I did was make 5 mason jar salads.

    Today, much better.

    Good morning! Going to be a busy weekend here. Lots of work to do, plus laundry, cleaning, yard work, food prep. I have my salads of course, and I need to make a salad dressing. Have Japanese sweet potatoes to bake. Also will make a batch of cooked veggies. This week it's cauliflower, bok choy, beet greens, kale. Will probably get my beans in this week just adding to my salads, and have two packages of tofu to bake.

    I've been freezing some of my cooked veggies each week in serving size containers so I'm building up a store for days when I don't have veggies ready to go.

    Looking forward to another good WFPB week!

    I have yet to try goji berries, Austin. Will have to pick some up.

    You all are doing so great o:) ...me, not so much! A little discouraged with my numbers LIPID panel. Doc said he was not concerned...even though a bit high...and I gave up my French fries and creamer. Now, time to give up the sesame oil...(last day today, already made up)...and no more noodles for awhile...cuz I am not losing.

    Here are my numbers...if you guys know about this stuff, please chime in ...looking for help!

    Also, I thought I could have two cookies a night for dessert...tossed them this morning...ate 8 last night. Enjoy Life vegan cookies...they use evil >:) palm oil. Otherwise, the ingredients are good. But I eat too many.

    Dillion Holmes has a great recipe for oat clusters that are made with, bananas, oats, cinnamon, vanilla, flax egg and then you could add enjoy life choco chips or walnuts or NOTHING.

    What is crazy is that is nothing compared to how I used to binge. I mean massive amounts of food...no way could I do that now. So, I have improved.

    Oatmeal daily...for sure.
    NO oil...none, nada, zero, zilch.

    Ok then...today's plan:

    oatmeal
    coffee
    salad with noodles with 1 teaspoon sesame oil (last day)
    trader joes fresh corn tortillas, air fried with pico de gallo
    cantaloupe
    Bubly… white peach ginger


    Going to try for next year, early-ish for left knee replacement. In the meantime, will try some shots to get me through. I have tried shots before...they don't last.

    I should be in a good place financially, since I will be out of work with no pay. I will use my two weeks vacay and five days sick...so that's three weeks. But I am sure I will be out more...maybe 8?

    Ok...that's it from me. Have to be stricter, that's for sure.
