Open face sandwiches - thin sliced seed & nut bread dressed with ranch & dijon mustard, torn chicken over green beans and micro-arugala. Served with pickled asparagus.

another 1800mg salt explosion from processed components. Daily target is only 1500 - for the day :( bit of rebellion)

Very hard to contain the salt even when not adding any… really not looking forward to the day when I may have to do that in earnest as opposed to by choice.

Even the chicken had some sodium which you did not add in (109); plus (depending on cut) 1.2 Cal per g seems a tad on the low side. In the unlikely event where it is important to you… double check with food data central as to the chicken entry you use ;-)

BUT: now I want me some killer bread!!!!

Omg, the thin sliced hack killer bread is phenom - similar to using smaller plates or mini-bagels. Brain perceives it as having the real deal!

The last 2 nights were a BLT salad.

Tonight will likely just be a frozen meal as I have a hair cut scheduled for after work.

Amylu chicken burger with onions and lite cheddar cheese on a hero keto bun (surprisingly soft and tasty) with BBQ sauce and mustard.

That's my dinner for today and at least the next 2 days (work, preplanned)

Amylu - sold at Costco! Comes in flavors too. Like Greek burgers

Wondered about the Amylu burgers, will give them a try.

    1000021996.jpg

Tried a new salmon recipe (modified a tad) - turned out well.

Made a 2nd topper of bell peppers, sweet onion and 1st time included 1/3 of a poblano pepper. Also turned out well.

Yeah I got em at Costco. Caramelized onion and white cheddar

I love the Greek Amylu burgers. I put them on a bun with lettuce, tomato, and tzatziki.

As for the hair cut, it did not happen last night. They called and asked to reschedule. So I am going tonight instead. Just getting a long pixie cut. I hate having hair on the back of my neck in the summer. Drives me crazy!

So since I did not get my hair cut yesterday, I made some steak fajitas with fresh pico and some mexican rice. I will have leftovers tonight when I get home. Then tomorrow I may just cook up some salmon with some Korean sweet potatoes I need to use.

We don't get the amylu North of the line!🤯 Or, *I* at least, have not spotted them!🤷🏼‍♀️

So far today..... in the sweltering heat 🤣🤣🤣... green giant restaurant cauliflower and onion 348g, edamame 150g, and California blend 221g. Used the cauli sauce to coat all of them and was far from terrible for a quick lunch.

Still felt a bit salty even diluted and even though they are a product I eat regularly🤷🏼‍♀️

Don't do edamame that often but currently have both Edamame and tofu in the fridge

Tonight I had my Amylu burger in a keto bun again, but I used tzatziki instead of bbq sauce/mustard/added cheese. Twas quite good.

I give the inside surfaces of the bun a quick toast before using, just a quick spritz of butter flavored non-stick spray (don't judge me, lol) and a sprinkle of garlic, then face down into a hot pan. Elevates the whole experience much more than you'd think.

Not sure what my major malfunction is today....

But I nuked a green giant restaurant broccoli spinach Florentine with quinoa and brown rice claiming to be about 233 Calories for 300g And added 166g of chopped spinach for 48 Cal mixed in with it!

I'm taking a picture even though it's almost gone just to be able to claim health nut status, even without any nuts other than myself around!

Yup - definitely toast the buns! With or without butter spray.

So what kind of buns is yooly toasting today?

I did one more of the combi veggies I described above. But then doubled the calories and added 859mg sodium by turning it into Indian food via the addition of one of the spicier and lower Cal ready to eat Indian meals which blended in perfectly! 🤯🤔😎 (Bindi masala if interested!🤣)

Plus fruit bunnies! Fruit bunnies probably a tad less good for long term health as compared to veggie bunnies but probably way better for silly me than candy bar non bunnies!!!🤯🤷🏼‍♀️

Fruit bunnies can become creamies too! Yooly, you would think with your weather you would be Ms number one creamie maker!!!! But you're probably saving your calories for meat and potatoes! 😎

“So what kind of buns is yooly toasting today?”

I was referencing Nics opinion that toasting hamburger buns elevates the sandwich. Definitely agreed.

Although it’s unbearably hot here all summer, I’m not a big ice cream fan. I owned an ice cream maker that got used maybe a half dozen times before I gave it away. So once in a great while I’ll have some store bought or restaurant ice cream. Spumoni or rum raisin -both unavailable here- or a shave ice in Hawaii. Definitely have to budget for it.

Rum raisin is one of my favorites. How can it not be available????🤷🏼‍♀️🤷🏼‍♀️🤷🏼‍♀️ Budget is a different story!

I can not have just a pint of ice cream in my house. It seems to be the one thing that I can not simply measure out. So I always get like the mini ice cream sandwiches, cones, or bars. That way the craving is met but I only eat the single item. Works great for me. Had a chocolate dip mini vanilla cone last night in fact.

Ended up getting a taco salad last night. Long story short, I randomly got sick yesterday and put the salmon back in the freezer before it fully thawed because I didn't want to risk wasting it. Ended up feeling better (still nauseated even this morning though) so decided a taco salad sounded yummy. They had some pickled carrots in it that has been pickled WITH the jalapenos so they were just slightly spicy… SO good. I may have to try that.

I didn’t think that jalapeños would work with nausea! Glad it worked for you Athijade 😄

Because I’m a bit of an ice cream snob, I don’t find the individual treats appealing. It’s maybe one of the few foods I’m discriminating about. Otherwise I’ll snarf down most anything!

Have fresh collards in house, 1st time ever. Any fav ways to use?

    — also jar of pickled beets and 1 ginormous purple beet. Just don't know.

A ginormous green cabbagge again, a medium red cabbage and a pile of fesh brussels.

Not uninspired, but a whole lot of chewing ahead, lol...

    And a doz limes.

    • We need a group game of chopped — what's in the veg box this week - and how would you use it?

One thing I Ivan used to do (at an mfp friend's suggestion back when these things were an option with walls and everything) is grab pre-made caulislaw mix (and you have most of the ingredients for that) and stir fry the mix by itself in place of both noodles and veggies.... So the veggies stir fried with maybe some meat. And to your two cabbages you could even add some of the beet shaved. And then you could also make the stuff into soup!!!!🤷🏼‍♀️🤷🏼‍♀️🤷🏼‍♀️

Had a broccoli slaw last week, enjoyed it sauteed.

Hand crank shredder is for the birds.... too puny for dense... knives it is!

Looking for ideas today for pumpkin pak/puree, think I'll try a pumpkin mousse.

Pav - saw this bar recipe - thought of your Q. I'm thinking I could use my dried plums in lieu of dates, but do not have a few other things. Unlikely to try at the moment. Maybe later.

Interesting. Looks like nuts and fruit puree with some pumpkin fiber! I bet ya it will be tasty... but far from zero Calories!!!🤣

I don't know how to do 7 servings out of a 9" square pan. I would whack in 1/2 - about 200 cals & 18g carb. Could be a solution on errand days.

    1000022481.jpg

I've been using these but just edible…

Nice edible or crap edible? If nice edible then that's not a bad way to go… they might grow on you while not making you grow from them! If crap edible… well that would be a pass and look for a better option!

I don’t know? I’ve given up on protein/granola/healthy bars. I find them hi calorie for minimal taste. Lots of extraneous carb fillers too. So I’m snacking on pre- measured dried fruit and nut packets from Costco. Pretty much same calories without mystery filler.

Love trail mix Yooly. I also keep peanut packs for grab & go.

Pav,the bar is edible, not ick, just doesn't ring my bell, but... a compromise from the ones my brains interpret as candy and does a yippy skippy on contact, lol
