Bunnies and sausage in tomato sauce is the plan for today!
Zucchini, onions, potatoes, bell peppers, covered in way too much spaghetti sauce… and "spiced" with chicken sausage.
Honest to goodness (wow! I said that) I don't see the appeal of this sausage. Way too many calories for what it is and extremely salty tasting so much so that I am trying to bury it in bunnies!It is definitely not a repeat jumper into my Costco buggy! 😕

Today's food: home hot coffee with milk. SF iced coffee chiller from 7Brew with skim milk. Leftover lasagna ish sauce with mushrooms and egg white noodles. Thermos milky Chai. Chocolate protein milk. Leftover pork loin and green beans. Lemon meringue yogurt.

getting rid of the leftovers is good! Is that the actual lemon meringue flavor yogurt or did you get some of your lemon raspberry cake and mix it into your yogurt? :)

It's lemon meringue dannon light & fit greek yogurt. I've know it existed for awhile but no one around me carried it. Found it randomly at Walmart last week, so I bought 11 of them (all they had). My new rating list is the apple pie followed by lemon meringue and key lime in a tie.

Overall I like the varieties of low-fat yogurts. But I can always taste the modified food starch additives. Like a hint of uncooked raw flour? I’ve read the ingredients and most have some kind of starch- rice, tapioca, corn…. As a stabilizer. I can sense in the mouth-feel or texture in some brands. I have no aversion to the carb factor or even the starch if I couldn’t taste it.
Might be just me. Hubby doesn’t taste it.1 -
Got called out of work, so made an egg scramble for dinner:
1 egg, 2 egg whites, 3/4oz low-fat cheese, back bacon, green onion. Also sliced a tomato and ate it as a side with salt and pepper

Snagged from the grocer, a Chef turkey salad & mixed melons, berries fruit from a party tray.

I had my stir fry with tofu that I made for lunch today - it was better the second time around (a little spicier too, think the chili peppers had time to soak into things.)
I was very pleased on how the tofu came out of the air fryer. I pressed it and marinated it (light soy sauce, ginger and red pepper flakes) the night before. Then, just popped them in the air fryer, sprayed with sesame oil spray, and cooked at 390F for 20 minutes. Were very crispy first night, and held up well to being refrigderated and reheated!

What kind of tofu did you use? Extra firm? Water or dry packed? How long did you press it and how long did you marinate?
Yup - lots of dumb questions but I’d really like to try this so any advice is appreciated 🙏

Teriyaki chicken meatballs, air fried and chopped into quarters, served over egg white noodles with gyoza dipping sauce and green onions.

Stir fry veggies and beef with a bowl of rice... just ginger broth and garlic broth for sauces and Sriracha 😇😜

I have not seen egg white noodles.
Nor have I tried tofu. I did try those konjac noodles, they were ok.
Like most yogurts but trying to stay away from added sugars, so prefer greek yogurt and sampling others. Enjoy summer berries, melons, corn - will be sad when they are out of season again, but enjoy the fall squash.
I like the chicken apple dogs from Costco.
Trying a ginger terriyaki marinade for salmon, rice and garden green beans for supper.

Happy - have you tried the cauliflower rice from Costco? I believe it’s the Tattooed Chef brand. Great with Asian flavors and very low cal substitute for rices or noodles.

I miss having a Costco card… and a car to haul my stuff back with lol.
Tonight I am making some pan fried chicken breasts, mac and cheese (Goodles brand for the first time), and broccoli.
Then Thursday I will make some chicken burgers, corn on the cob, and… maybe something else. I have some potatoes I could use.
No plans figured out for next week yet though.

Looking forward to tonight, doing mediterranean. Home made falafels with tatziki and greek salad. I'm going to be interested in how the falafels turn out - I ran out of chickpeas, so they are 1/2 chickpea and 1/2 black bean!

I'm a goblin. I woke up this afternoon and ate a couple ounces of thick sliced deli ham and a small bowl of cottage cheese while looming over the kitchen island.

Okay. So no broccoli last night. Took one look at it and stomach went uh no. Instead I made some rolls. So bland and easy to digest. The Goodles were actually pretty darn good. No one will even mistake it for Kraft as the taste and texture were quite different, but I liked them. I don't eat Mac and Cheese often but sometimes the craving hits and these will do.

So, and I don't even remember now if the post posted or it died halfway… had an interesting discussion with NP lady (which shows you why humans are still valuable in the loop)… cause there I was saying but my cholesterol is high based on the recommendations for medium to high risk heart disease patients, which is what I assumed I would be based on having a heart issue. But no she kept, saying, there are beautiful cholesterol numbers GRUMBLE: FOR YOUR AGE GROUP AND GENDER /GRUMBLE. In the end she broke the news that since my issue is not ischemic my risk is not changed and remains the 4.3 to 5 that the thingimagingy (ascvd risk estimator) calculates!
So no proposal for statins or anything like that. When I pushed her on well is there anything I could realistically do to lower cholesterol further? She replied do you still eat oatmeal and metamucil (confusing me with an older relative she also deals with ;-) To which I replied… no!
So she reiterated that she didn't think I needed to do anything but if I wanted to do something I should maybe have a glass of psyllium a day! So off I went to the bulk health
nutfood store and came back home not only with a bag of psyllium husks. But also a bag of PLAIN POTATO FLAKES where I can decide how much sodium or other goodies I want to add to my mashed potatoes. And a bag of egg white (albumen) powder — oh maybe I will use the dates and other goodies and make my own Rx-bars! AND I noticed they had bags of meringue powder (but I didn't buy). And bought some australian dried ginger. And some belgian choco…. errr let's not mention that one or the other… and….Let's just say that I had to buy a BAG 😡 to get my little bags back to the car!
Anyway… apparently psyllium fiber can be used to make non gluten baking stuff too… OH MY. And lowers cholesterol?!?!?!? So like… (within limits)… might not be a terrible idea!

Hey Mr.PAV - your favorite Costco sells a Kirkland two pack orange flavored Metamucil-look alike product. The orange flavor is meh but one tablespoon per day lowered my cholesterol by over 60 points! Well in the normal range. Definitely worth giving it a try.
The Belgian chocolate not so much - go easy on that stuff.

Lol, a bag of bags to play with!
Mine included some pure lemon juice, Ezekial sprouted grain wraps and, no idea why or how I'll use some malted barley flour (along the lines of the pearl barley is higher fiber > or ⇒ as good or better than oats, so can do more things in my rotation.
Dinner tonight - the Ezekial sprouted grain wrap with pepperjack cheese, torn roast & saute vegs. Ranch & mustard dressing. Pineapple chunks on side.

Yooly I specifically went to the health food / bulk store to get the flavour less plain psyllium that I had been told they carry. I hate the fake tang taste and wanted to avoid the either sugar or stevia options that come attached to it. Of course the little so and so's had it behind the counter so I was left unsupervised for more than half an hour of inspecting the aisle (sic) and display case.

Pav, I have not tried dried eggs, milk powder and have not heard of meringue powder but immediately thought of meringue cookies, LOL
Yooly, Thanks. I tried the Tatooed Chef cauliflower rice and liked it but have not seen it recently.
Think we will grill some shrimp & vegetable skewers to go with burgers this weekend. Picked up a nice tray of pre-cut red onion slices with some asparagus and zuchini spears. I want to try grilling the asparagus but I think I could cut the zuchini into wedges with the shrimp and baby tomatoes for the shrimp skewers. Might try grilling some pineapple too. The rings looked so refreshing pre-sliced, but I was browsing summer salads and someone had some on a platter with beautiful grill marks. So maybe.

grilled veggies are awesome and shrimp pretty low cal so sounds like a good combo… don't drop the goodies in the grill!

Sauerkraut and pork loin. Needed to move it out of the freezer. Fortunately it’s very lean pork. Skipped the potatoes.
