    Third morning in a row on the treadmill. Woohoo! I'm not breaking any records here. Too sleepy when I first get up and I don't want any more falls on the treadmill. Literally getting out of bed, throwing on shoes, and doing 2.5 mph for 20 to 30 minutes in my jammies before I jump in the shower. It does mean I'm generally over 3000 steps before I get out the door in the morning so I'm hitting my step goal of 7500 by the end of the day. Next week I'll bump it up to 3 mph.

    I totally OD'd on coffee yesterday. I rarely even drink coffee anymore, but I made a pot for the new gal and drank a bunch of it myself. I was really shaky by mid-morning. Doh!

    Sticking to the IF plan. I had bounced up 2 pounds last week and those are gone already so onward and downward.

    Up, better sleeping last two nights…feeling grateful 😇.

    Knocked a few things off my to-do list…that might have helped.

    Out of juice…making Joe’s Mean Green today…kale, celery, cucumber, apple, lemon and ginger.

    Estate planning with sister and brother in law this morning. Back for a swim. Will walk Lulu and sauna before meeting.

    Tonight office is taking my boss out for adventure and dinner. It’s called ESCAPE …not sure about details and then to a dinner that has a great vegan menu.

    That's great news about the new employee, Mihani. I think it will make a world of difference at the office. Let us know how day 2 goes with her! Nice job on the TM and with IF.

    I'm starting to get increased range of motion with my shoulder, and I'm triggering the pain less often. I only need to go in for PT once a week now, so I got to cancel my standing Friday appointment for this week.

    My intermittent fasting is continuing to work well for me. I do have some lower calorie days, but also some higher calorie days so I don't sweat it. I'm down 9 lbs since I started. I'm trying for perseverance over perfection.

    Carla, that's excellent news about your shoulder. Woohoo on 9 pounds down!

    Day 2 was another excellent day with the new employee. She comes in early, doesn't rush out the door right at 5:00, will dive in and do whatever needs to be done. I had trouble thinking it was only her second day because she got so much done.

    IF continues to go well... smoothie around 11:30 a.m., cooked veggies around 2:00, veggie and homemade E2 hummus wrap or sammich for dinner. Fruit with my cooked veggies if I feel like it, and some fruit after dinner. I am adding a tablespoon of chia/flax mix to my smoothies and eating 2 or 3 walnut halves after dinner to get the healthy fats in.

    I have started drinking coffee again. Not every day but every couple days just a cup or two. Not sure why I decided to start drinking it again after being away from it so long, but I'm keeping it in check.

    Oh, I forgot to mention, I realized that I hadn't been taking my B12 for quite a while. Started taking it again last week and really noticing increased energy and less brain fog. I know it's important to take it when you're vegan but I'm so bad about remembering vitamins. Now I have them in a weekly dispenser right on the counter by the dog's allergy pills. I would never forget his pills so this works out.

    Broke my fast last night around 8pm and binged on some baked tofu. I guess I made it too yummy for dinner! I made up my usual baked tofu but switched out some spices to flavor it for our Indian curry.

    Not much else to report. Happy to be down to 1 PT appt a week.
    I'll be working on some fabric dyeing techniques this weekend and getting in my walks.

    LOL, Carla that is too funny about a tofu binge. I have done the same! I think most people would say ummm... you binged on tofu? But yeah it's a thing. Good luck with your dyeing experiment.

    How's the watermelon, Nanc? I am so excited for summer watermelon. It really is the best.

    IF is working very well for me. I have had a couple days when I got seriously hungry around 10 a.m. but I had some green tea and kept working. I'm sticking with a 7 to 8 hour window for eating so I have my smoothie that I bring to the office around 11 to 11:30, cooked veggies and some fruit around 2:00, then a nice dinner after I get home. I really would rather do an earlier window and not eat dinner, but that would mean eating lunch and dinner at work and there's no relaxed time to eat there and I want to enjoy my dinner. Maybe I can do that on the weekends.

    Lost 3 pounds this week (really 5 but 2 were a bounce up from prior week) so I'd say it is working. Plus getting back into the treadmill habit. I will say that I'm definitely "fatter" than I was years ago at the same weight, and I need to add some strength training and daily crunches to get toned up. Maybe I'll try doing some crunches after treadmill in the morning. I can never count on having any energy left after work.

    Oh, and I know we're still in the honeymoon stage with the new employee, but she's pretty awesome. I jokingly said as I was leaving today that I was happy she was there and hoped she'd be back Monday. She said oh definitely, I love it here!

    Couldn't sleep...so I got up and made my lunch for work...stir fry veggies and I had made a batch of brown rice the other day...so that's done.

    I have juice for today...16 ounces of each.

    Might take a vegan burrito...we'll see. I also have sugar snap peas to munch on.

    I did not open the watermelon yesterday...but I did have the green grocer pick it out...I am pretty sure it is from Guatemala.

    You girls are rocking the IF...I do that too...when I sleep! LOL

    Nothing else going on. I did not sauna nor swim this past weekend and I NOW miss both so much. I was just so busy...especially, since I am still going to PT on Tues/Thurs. Two more weeks of that. I am pretty much done with it.

    I had a crazy dream today...I dreamt that I was bending my knee really well and asked someone to check the degrees! I mean I was squatting down (which is impossible for me)...I was so excited. But then I woke up. All a dream. Here is a visual for you...I can not sit cross legged...you know, sitting down on the floor with your legs folded in...nope...my knees do not bend like that anymore.

    But I can walk without pain. And I can wear shoes, FINALLY, other than tennies. So, I am wearing cuter clothes. That makes me happy. We had our picture taken at the ESCAPE place the other night. My niece said, Aunt Nanc, you are aging BACKWARDS since you got your new knee. Isn't that the sweetest compliment ever!

    Alrighty then...it's now 3:30...I am having my coffee, if you can believe that. Then I will go back to sleep for a bit.

    Speaking of TOFU. I froze a bunch. Do you guys know what to do with it then. I heard that is the best way to make it like "chik'n" . You defrost it and drain and break it off into chunks and its texture is more chik'y like. Have either of you done this before. I know there are recipes online. Just wondering if you guys have experience with this.

    PS I love tofu.

    PSS I will never ever eat meat again...NEVER. I know too much...no more chicks ... no more steaks, burgers, chops. I just can't. It started out about health for me...but NOW...oh lord, my tender heart will never allow me to consume meat/fish/chicken again.

    I've never used the freezing tofu technique although it has been in the back of my mind to do that someday. Let us know how you like it if you try it, Nanc.

    You all have me craving tofu now but I don't have any.

    I am going to make a batch of hummus probably tomorrow. I was getting really tired of eating salads but throwing all the veggies, lettuce and hummus into an ezekiel tortilla or making an ezekiel bread sammich has been so good for dinners this past week.

    First load of laundry in the dryer and once that is done I will head up to my desk. I do plan to go the office for a short time tomorrow, but working here at home today. I really hope within a couple months to stop working every weekend.

    I skipped the treadmill yesterday morning (boo!) but got back at it this morning (yay!) and going to start doing some strength and toning exercises daily starting today.

    I've frozen tofu before. We had a recipe that called for it. It does improve the texture for some recipes, but I just find it a big ol' pain in the butt to do. You have to remember to freeze it the day before. Remember and wait around for it to thaw. THEN move on to whatever the recipe is. BUT, once the tofu is thawed and you start to squeeze out the excess water, it is cool how much like a sponge it is. It really does change the texture a lot.

    I love my recipe for baked tofu in the air fryer. Have I posted it? We make it way too often. About to go to the hardware store to get some supplies, but I will post again if you'd like it, Nanc.

    AND love that your new gal is so awesome at work, Mihani.

    I will be making a pvc frame for stretching silk scarves today. I haven't used pvc before but it looks easy. I hope that is the case! Joe is going to pick up some for making hoops for our raised beds too.

    Leftover indian curry today if we're lazy, otherwise we'll freeze that for the future and make our red lentil cauliflower curry while our cauliflower is still good.

    Oh yeah, I meant to comment on the comment by Nanc's niece as well. That is awesome!

    Carla, I don't have an air fryer. I was thinking about it but I have so many kitchen gadgets. I use the Hello Nutritarian recipe for baked tofu because it's so easy. Just dip slices in coconut aminos, lay out on a baking sheet with parchment paper, sprinkle with spices, bake to desired texture. I like my tofu a bit on the chewy side so I bake it longer. I do have a recipe for ginger maple baked tofu that is SO freaking good. I should make that again one of these days.

    I ended up with a really long nap this afternoon and still have lots of work to do tomorrow. I may or may not run to the office tomorrow at this stage. The danger of working from home is the bed is right there calling my name and saying take a nap!

    Got 3 japanese sweet potatoes last week so those are in the oven now. I haven't had them in a while but I swear once baked and sliced into rounds they are like a cookie. So sweet and creamy yet firm. I leave the skin on potatoes mostly, especially white/red/yellow. The japanese sweet potatoes have a thin skin that tastes good. Regular sweet potatoes I'm not crazy about the skin.

    I did get 3 loads of laundry done. Was behind on towels and bedding.

    Tonight is a big ol' salad except it will be wrapped up in two ezekiel tortillas. I was getting burned out on salads honestly, but wrap it up and it's enjoyable again.
