    Mihani, I hope you're able to get back into your workout groove. It sounds like the team @ your gym is there for you. You are doing better than you realize.

    @JNettie73 oh yum! that pumpkin gnocchi sounds so good. Did you use canned or fresh pumpkin? I'm wondering if one can is close enough to the 2 cups they call for. When I make it, I will definitely try the sage butter sauce.

    Greens are all prepped for tonight's salad and my mom is going to come over and spend the night so we're going to have spaghetti and some toasted garlic ezekiel english muffins for dinner.

    Carla, I think my ezekiel addiction may be cured by inflation. A loaf of ezekiel bread is over $8 now, geeze! I did find some at a market last week for "only" $6.

    I left work a teensy bit early so I can work on a project that I need to finish tonight and I'm interrupted constantly at the office. So I guess I better get at it.

    Carla, what a bummer that you had to cancel your trip, but probably the best thing to do with your husband's tests coming up. Glad to hear you had good news with your insulin number.
    Mihani, I think I've been eating too many calories trying to hit a high protein number. I have to work on tweaking things somehow. Sorry to hear you're struggling with so much stress, but your gym sounds super supportive so that must help some. Your post about the soup has reminded me I have a big bunch of kale in the fridge that I have to get to tomorrow.
    JNettie, that gnocchi looks delicious. Definitely something I'm going to try over the winter.
    I just bought a new phone so tomorrow I'm going to get all of the photos off my old one and finally post some yard pics. We haven't finished yet, we side-tracked to work on the garage door, but we'll probably get back to it soon. I'll try to get my pics posted tomorrow.

    Home for a few to let the boy out and get him fed, then off to a party. I've had stuff to do 3 evenings this week and a birthday party tomorrow. Why do things always happen that way? Nothing to do for weeks then everything all in one week to wear you out.

    Spring, I'm totally in agreement with you. Every time I try to tweak my diet I end up gaining. I think I just have to stick with WFPB and not worry about it. Maybe do add some protein powder on serious workout days but not every day.

    JNettie, glad you liked the soup. If anyone had told me 20 years ago someday my favorite soup would be red lentil kale I would have laughed and laughed, but the first time I made it I thought okay I could seriously eat this every day!

    The Oh She Glows recipes are generally all good, but I think she's extra gifted when it comes to soups. Every single one I've made has been delicious. The first cookbook was amazing. The second one wasn't quite as good but still a couple recipes that I go back to now and again.

    Carla, Matt Frazier has so much great advice. Big fan! Hope you had a nice visit with your mom.

    Boy, am I behind...
    @Carla_wfpb smart decision to take care of the most important thing ... JOE! Get that all straightened out, and then enjoy your vacation.
    My roasted veg and rice dish for lunch is still going strong...mostly onions, zucchini, bell peppers and tomatoes...but I think I am going to add Brussel sprouts tomorrow. Is it best to buy on the stalk? I have never made them and am pretty sure have never eaten them. Time to live dangerously runnscissors.gif

    Nothing exciting going on here...I have my organizer for a few days ... everything is looking so much better and I am pretty sure I can now keep it that way since I will have another new knee, hopefully in February. The appointment is on 11/29 to set up everything with the surgeon.

    I have been having Just Egg (frozen folded...not liquid) for breakfast lately. I really miss eggs. While this tastes nothing like scrambled eggs, they are kind of fluffy and I don't know...they are helping me out for now. I just pop in the toaster and have with jam.

    AND back to Nutpods in my coffee. I just was not enjoying my morning coffee ...and now I am. I guess, for me, something things are non-negotiable for now.

    ninja creami (pumpkin spice apple sauce turned into creamy sorbet is how I would describe it)

    Nanc, I think as additions to your coffee go, Nutpods isn't so bad. I might be odd but I don't like anything added to my coffee. Well, when I was younger I loved Bailey's in my coffee but unfortunately (or maybe fortunately) that is not vegan so I don't drink it anymore. I have seen recipes for homemade vegan Bailey's but I haven't ever tried it. And I don't drink coffee later in the day anymore and don't think Bailey's Irish Cream would be a good breakfast option. LOL

    I ordered some Dr. McDougall soups. The only ones I like are the hot and sour and the miso ramen so I got those. They are cheapest directly from his right foods website. They are a great option for me at work. I think I will wilt baby spinach in them a la Nanc.

    Plan for the coming week is oats with cherries, walnuts and cinnamon for breakfast. Soup from the freezer for lunch. Smoothie for dinner.

    Okay, now you all have my yearning for Spicy Red Lentil and Kale Soup, I think I'm going to make it tomorrow.
    Mihani, I'm not sure how you find time to sleep with how much you work and now a busy social schedule, LOL. (Oh, and Bailey's for breakfast, yummmm).
    Magic, I always buy brussel sprouts on the stalk when I have the choice, it just seems like they're fresher to me, but that might just be in my head. I think the stalk might be edible too if that makes a difference to you.
    Marilyn and Bisky, hope you're both doing well.
    I spent all day yesterday getting things set up in my new phone - a lot of changes from my former phone so I have to adjust, what a pain.

    Totally get it about the budget! And everything seems to be breaking down this month, including my laptop. I've been discouraged about my slow weight loss. But I have lost almost 12 lbs. and I'm walking 2 miles a day every day except the two days I have to be on campus. I did something fun this afternoon. I went to a vegan restaurant for the first time. I can't believe tomorrow is Monday. This weekend passed really quickly. Magic, your veggies look incredible. Tell us about this Hot Logic bag?

    Esme, good to see you! Sorry about the run of bad luck. Losing 12 pounds is awesome though! I do find sometimes if I lose some and then get stalled I start to forget how much better I feel 10 pounds lighter and that's when I'm in danger of letting my good habits slide and starting to gain, so yay for you staying the course! How was the vegan restaurant?

    Nanc, I do have two TJ's not far at all from me, but they are both in areas with LOTS of traffic and shopping centers, always very crowded after work and on weekends, and I hate going. Maybe I'll try to leave work early one day the week after Thanksgiving and make a mid-afternoon run when it's not so bad.

    Today was a lazy menu day. Oats with cherries, walnuts and cinnamon for breakfast. Dr. McDougall soup for lunch. Dinner is salad and ezekiel toast. I have no fruit other than frozen so I really need to make a grocery run.

    Snacks: apple, garden salad
    Dessert: ninja creami
    *Lots to do in the house on my weekend…so meals are planned and prepped and no more decisions to interfere with my home projects! 🌸💖🌸

    So my plans did not exactly work out yesterday...

    today will be tofu scramble for breakfast

    lunch, sweet potato (white inside)...so good ...roasted and the skins get really crispy ...side of broc kinda a 1/2 & 1/2 plate

    dinner, roasted veg with rice

    dessert ninja creami

    snacks if needed: apple and chopped salad

    working on my bedroom and bath today. the organizer comes for the last time tomorrow and I need help with a few closets ...

    I am thinking of screening in my patio...I live in the desert (outside of Phoenix)...and it's just a little patio but I rarely sit out there...but if it were screened in, I could put the treadmill out there...nice view...I would have screens and windows so that in the summer I would close the windows and use the AC from the house to cool the patio. There is a sliding door from the living room to the patio.

    Anyway, just an idea...going to pursue it, however. It would give us a whole new room that we would use.

    Yummmmm... your tofu scramble looks lovely, Nanc! I don't make that too often but I always enjoy it when I do. Screening in your patio is an intriguing idea.

    I am still struggling to stay on track. I'm really stressed at work and we have a lot going on, BUT we are hiring a PT person for the front desk so we'll have 5 hours a day of someone else being front line on answering the phone and greeting clients, plus filing, making copies, scanning, typing up simple letters, ordering supplies, etc. We interviewed a young gal yesterday and I offered her the job today so we'll see. All of us there now are late 50s to early 60s so it might be nice to have some young energy in the office. I asked her if she would mind hanging out all day with old people. LOL

    Off for dinner and an early bedtime.

    Nanc, the gal we hired a while back is great! But she has skills and I have ended up giving her a lot of more substantive work, which she does well and is more than willing to do, but she is getting stressed out answering the phone and doing the other general office work on top of that. I don't want to lose her so we decided to hire a PT person to cover that at least half the day so we can all concentrate on what we need to get done.

    You have me craving broccoli and sweet potatoes.

    How are you Marilyn?

    I am going to work all weekend and see if I can get some things lined up and ready to go. The end of the year is the worst for me, and I would like to enjoy some of the holidays this year instead of working through them.

    Short update:
    I believe I mentioned that I was in the hospital end of August and first 9 days of September. Hubby sent me by ambulance and I was not aware of anything for the 1st 3 days - all I remember is getting out to the front door and then waking up in the hospital room 3 days later. My kidneys shut down - normal number is 60, mine was 44 for a couple of years and when I crashed they showed 6 which is not good. When I got out of the hospital the number was back up to 20 which is still not good so have been followed by the kidney doctors weekly. Last week had blood work down and they called to say I was starting to crash again - number went down to 15 so on Tuesday I had a large amount of blood work down - got word last night that the numbers are starting to go up again as it where 17 from the blood work but still not at all where they should be. Have not gotten the result of the other blood work - re the hormone that makes red blood cells and my hemoglobin are to low so they are monitoring that. Drinking 13 L of water a day which is about 12 glasses of water - feel water logged but it is helping the kidneys and hopefully keeping me from diaylsis.

    Marilyn, hope your lab results are good and that's great you are getting all that water in to help your kidneys. I haven't been as good about drinking lots of water lately so thanks for the reminder. I will make sure I drink at least 64 oz today.

    I am heading to the office today. Planning to get there by 8:30 ish and stay 6 or 7 hours, then home to laundry. I ordered a bunch of Dr. McD soups and plan for lunches for the next while is a soup (either Dr. McD or one of mine from the freezer) plus an apple, and I'll take some chopped veggies like carrots, cucumber, cauliflower, grape tomatoes, sweet peppers to munch on when I get peckish. I have started to get into the snacky stuff at the office again lately and need to cut that out.

    I made burritos last night. Nothing fancy just refried beans, onion, brown rice mixed with salsa and corn, baby spinach in whole wheat tortillas, served up with salsa and cashew sour cream. I haven't made the cashew cream for a while and it was super easy in the ninja. I almost never use my big blender anymore.

    Easy cashew sour cream: 1 cup cashews (soaked several hours then drained and rinsed), 1/2 to 1 cup water (I use 1/2 cup so it's thicker), 2 tsp lemon juice, 1 tsp apple cider vinegar, pinch of salt. Sometimes I add a little fresh cilantro to it.

    It dawned on me this past week that I've been staying up later and I am going to start getting to bed by 9:00 every night again. Getting proper sleep is probably the #1 priority if I want to stay on track with good habits.

    Not sure if I'm making anything to contribute to Thanksgiving dinner this year but I'm thinking on it. We always have more food than we need so it's not necessary but sometimes I like to take something.

    Sorry I didn't get a change to pop on here last week. Life has been a bit busy, nothing terribly exciting or grand, just busy.

    I had a bit of a scare on Friday. It was just me home alone in the house with all our animals. I decided to make use of my alone time to get some things done in preparation for the holidays. One of them was to clean the turtle tank. I was at the kitchen sink scrubbing filter parts when I heard a loud explosion - like a transformer blew then the power in my entire house went out. It was so loud and startled me to the point that I was actually shaking. I called my husband at work and told him I needed him to come home. Then texted my neighbor to see if they lost power too. They didn't, it was just my house. My neighbor ran right over to see if she could do anything to help. (I have the best neighbors who are like family to me) We were unable to get the circuit breaker to flip back on. My husband got home and was able to restore our power, thankfully. He mentioned that it seems like the stove is what tripped the breaker. We pulled the stove out to check the outlet and discovered the stove was giving off a pungent electrical smell. Needless to say we unplugged the stove and ordered a new one. Thankfully the new one is scheduled to arrive next Wednesday in the late afternoon, just in time for Thanksgiving. It does put a wrench in my plans as I planned on doing all my prep and pre Thanksgiving cooking all day Wednesday. It looks like it will have to be a late night of cooking instead. I am hoping for positive vibes and everything to go smoothly with our new stove. We always host holidays at our house so it would put a huge last minute speed bump in our plans if anything should happen.

    I love brussel sprouts. The store I get all my produce from doesn't usually sell them on the stalk. They have them loose in a bin that you pick from. Either way is fine. If they are charging you per pound I would say buying them on the stalk isn't the way to go because you are paying for the stalk. If the price is per stalk then it doesn't matter. I am not sure how edible the stalk is. If it is edible, like broccoli is, then you could use it to make other things. I hope you enjoy them! I just read that SparkSpringtime69 believes the stalk may be edible. That would be great if it is!

    @JNettie73 I'm glad you found out about the stove and that it didn't cause an electrical fire. Hope your oven appears in plenty of time for you to prepare. Great job with the weight loss!

    I haven't been keeping up with posts here, sorry gals.

    Joe's test results didn't come back as we'd hoped. He was in mild AFib during his stress test. "Mild" is my term for it. He couldn't feel it happening and the technician doing the test didn't notice it. The cardiologist did. We're waiting on a monitoring device that he'll wear for a month.

    Lots of stress here. At the doctor's office my blood pressure was really high, both at the start and end of the appointment. I was already on a low dose of bp meds, but now I have to double it, at least for a while. I was very surprised because I've lost a lot of weight and have been exercising daily. I guess it is all the stress with Joe right now.

    On a positive note, my doctor was very pleased with my labs and weight loss. Oh, and I went from an obese bmi to overweight. My doc told me that and I said 'this is the first time I'm happy about someone calling me overweight' lol

    I also hit my target weight for our (now canceled) trip to Mexico! With a week to spare. I'm just under 175 now. I am going to start planning a trip to Portugal for this spring or summer. Hopefully spring but we'll have to see how Joe is feeling. We have credit for our flights but it expires in early May.

    Yesterday we had a stir fry over quinoa with tofu and a mixed greens salad w/ tomatoes, carrots and that red wine vinaigrette I posted previously.

    Today:
    Millet cereal w/ blueberries, 1/2 a banana, almonds and soy milk.
    Apple
    Garbanzo bean curry with baked tofu and side salad.
