    Oy, @Marilynsretired ...that is a lot to deal with. I know the water will help...and good for you for being so diligent about getting it in. I am sure you are spacing all the bottles/glasses. How about the diet...wfpb? Is there anything by any plant doctors that would get your attention ...

    When I googled plant-based diet and kidney disease, Dr. Dean Ornish came up, along with some others. But he is one of the pioneers...and one we don't hear that much from. Maybe a look at his website could help. Some of the plant-based docs have a CONTACT US link...and do allow for consultations. My heart goes out to you...you are in my prayers.

    oof, Marilyn, that has to be tough to deal with. I hope you're able to stay off dialysis, I'll be keeping you in my thoughts.
    Magic, how'd the brussel sprouts on the stalk work out for you. Did the cook well in the air fryer? We have a screened-in back porch that we'd like to turn into a four season Carolina room. Cost of construction right now makes that probably a no-go, but maybe in the near future.
    Esmerelda, sorry to her about your laptop - did you get a new one yet? Congrats on the 12 pounds!!
    Mihani, glad to hear your company is hiring another person. Hopefully that will take a little of the plate of both you and the new person. I usually get into bed by 8:30 or 9, but don't end up falling asleep until almost an hour later.
    JNettie, electrical things are always so scary, I'm glad to hear you're getting your new one in time (almost). I had a microwave flip the circuit breaker a couple weeks ago. When I turned the circuit back on and tried to plug in the microwave, it sparked, scared the heck out of me.
    Carla, glad to hear you had positive test results; I hope Joe's monitor gives some answers for you both. Congrats on hitting your target weight, now you just have to start Portuguese lessons!

    @SparkSpringtime69 I've been super resistant to switching languages after all of the time put into Spanish, but we definitely need to get on that if we're going to move there. We are also considering Spain, but Portugal keeps winning out overall. How have you been doing?

    Yikes, JNettie! Glad nothing worse happened with the stove. I had a brand new toaster oven do that years ago. I turned it on and a few minutes later there was an awful electrical smell and then it started smoking! Thank goodness I didn't turn it on and wander away there probably would have been a fire. Glad you all are safe and getting the new stove.

    Okay all this talk of brussels sprouts my absolute favorite way to prepare is to toss with a mix of maple syrup and dijon, roast until crispy in places but not overdone. Sometimes I include chopped fresh fennel and sprinkle the chopped up fronds over the veggies while roasting which takes it right over the top delicious.

    Carla, I'm so sorry about Joe! I hope that the lifestyle adjustments you are making will help, and that he has been able to work on reducing his work stress. And for goodness sake watch your BP too. *hugs*

    Woohoo for making your goal, even though you aren't going to Mexico, and especially considering how much stress you've been dealing with.

    Nanc, sorry to hear your sprouts didn't turn out well. You are doing so great eating well and taking care of yourself. Counting down to the next new knee! How's Miss Lulu?

    Spring, I hope hiring the new person will mean I can cut back to a more reasonable number of hours working, but we'll see.

    I am going to make sweet potato casserole for my contribution to Thanksgiving dinner. I made it a few years ago and it was a big hit. When you are cooking just for yourself it's hard to get excited about spending an hour making one dish but I'll muster up some enthusiasm for the holiday.

    Carla, I'm doing well - I've been dropping a few pounds in the gym Weight Loss Challenge and have been getting a lot of extra exercise in. I still have to post my superhero pics though :D . I've read a lot of good things about Portugal, and how friendly it is to expats.
    Magic, sorry to hear you hated your brussel sprouts. I guess I'll stick to roasting instead of trying the air fryer.
    Mihani, your sprouts recipe sounds tempting, I may have to try it in a few weeks.
    We're bringing assorted crostinis to my sister's house for Thanksgiving - tomato bruschetta, olive crostini and sun-dried tomato/roasted red pepper crostini. Although, if I find endive at the Food Lion tomorrow, I may put some of the toppings on that instead of using all bread.
    If I'm not back before Thanksgiving, I hope everyone has a safe and happy one!!

    Nice job with the weight loss challenge, @SparkSpringtime69 ! Yes, I am still waiting on the superhero pics, that is, as long as it doesn't expose your true identity to the world!

    I think I'll make Dreena Burton's Festive Chickpea Tart for our Thanksgiving meal. I've made it several times now and everyone seems to like it. In my opinion it really does need some gravy to avoid being too dry, but I didn't like the gravy that was recommended. I searched for a WFPB gravy and found a nice mushroom one.

    I don't know if I mentioned it before but Joe's sister is coming out for 5 days, from Dec 3 to 8th. We're going to go to a Thai restaurant with her and Joe's dad and step-mom. Lots of mostly healthy options there. Okay for a treat. There's snow in the forecast for next week, so hopefully we get some good days where we can go out and look around town at the Christmas displays and artisan goods on sale.

    Mihani, I finally made pickled onions. Really good! I didn't do anything special, just added a few cloves of garlic and peppercorns in with the vinegar. They were really excellent in our salad last night.

    Hi all! We closed up at 1:00 today so I ran a few errands and home. Doing NO work from now until Friday morning. Going to relax the rest of today, maybe do a jigsaw puzzle, then get up in the morning to clean house and make the sweet potato casserole. Getting together with family at 3:00 so I don't want to make the casserole too early.

    Carla, I think I did originally share the chickpea tart but I haven't made it in a few years. It's in one of Dreena's cookbooks and a couple of her older cookbooks are among my favorites. I seem to recall not caring for the gravy either.

    I think I tried the chocolate pie one year too but it wasn't anything special and nobody was that excited about it. There was a chocolate mousse pie that I made some years ago that everyone raved about. It came from a random vegan blog I stumbled across and the next year I couldn't remember the blog or find the recipe anywhere. Hate when that happens! Which reminds me I should start using copymethat again.

    Glad you enjoyed the pickled onions. How something so simple can be such a huge flavor boost to a salad is beyond me, but it works.

    'Grats on the weight loss, Spring! The crostinis sound really good. I love anything on bread, or just bread to be honest. I mostly avoid it because it's a trigger food for me to overeat.

    I've decided to enjoy myself tomorrow with some wine and the starchy trifecta of dressing, potatoes, and sweet potatoes. I'll probably be eating leftovers for a couple days after that. Starting Sunday I'm going to do Mary's Mini again to get myself back on track and also get back to classes at the gym. Work has been so crazy that I have missed a couple weeks now.

    The good thing is all the gift goodies that will soon start pouring in at the office aren't vegan so I'm not tempted by those. Sweets aren't really my thing anyway though. Salty snacky and starchy all the way.

    Just have to say, in the season and spirit of being thankful, that I truly appreciate all of you here. We may be a small group but y'all are awesome sharing knowledge and support with a good dose of humor!

    Up early so I can get to Sprouts and get some more of their amazing romaine...sometimes it's bad and sometimes it's good and sometimes...it's GREAT. It's GREAT right now. Bringing a simple romaine salad with shredded parm, croutons, cranberries and pecans...Follow Your Heart ranch dressing.

    Also, made cranberry conserve. Using Gardein simple turkey cutlets...get to use my sister's toaster oven...yeah! So maybe next year, I will make Hot For Food Turkey "roast"...I just have to make it sometime...it is so special.

    Sweet potatoes but they are called Murasaki Sweet potatoes...found them at Sprouts...roast and enjoy ...really good.

    Vegan pumpkin bread and Kite Hill pumpkin cream cheese spread.

    JNettie, what a close call! Truly something to be thankful about! Marilyn and Carla, you will both be in my prayers tonight. So sorry for your troubles! I am on the road this holiday. Currently stopped in a motel in my old hometown. Really achy, but glad to see people and hang with my fur babies.

    Hi y'all... hope everyone had a nice Thanksgiving. I slept in until something like 8:30 this morning. Total food coma. LOL

    Spent all day working on bookkeeping and think I will work from home tomorrow as well. It will be lovely to hang out at home for 2 full days. Will go the office for at least part of the day on Sunday because there will be a couple days of mail piled up and I can get organized for the upcoming week. The end of the year madness will really ramp up now. I've been so confused about what day it is all week.

    Ate leftovers today and thinking a soup and salad day tomorrow.

    Just noticed your sweet potato craving. When I get home and the rain stops, I'll be harvesting this year's sweet potatoes from my little garden. Perfect timing; I just ate the last from last year about a week ago.

    Good morning, my sleep patterns are all messed up and I got up at 3:30 am. Debating on what I want to do today but I think I'll stick with the plan of staying home today and going to the office tomorrow. I need to get to the grocery for stuff to make Eat Your Greens soup. I think I'd like to do an all soup day tomorrow to get back on track. Maybe I'll just do grocery delivery.

    Esmer, what all do you have in your garden?

    I changed my mind and went to the office today. Got through some stuff and my desk is organized. I will work at home tomorrow. I made it to the grocery. Going to make the Eat Your Greens Soup and the Protein Power Goddess Bowl tomorrow (both oh she glows recipes) plus bake some potatoes and roast some broccoli. Should get me through most of the week but in my experience 4 days is about all I'm getting out of things unless I freeze them. They just start tasting a little off. Going to double the soup recipe so I have some to freeze.

    Also got power greens and going to go back to smoothies for breakfast this week. Smoothies are a good way to get a bunch of Dr. F's GBOMBS in for me. I use lots of power greens or baby spinach, add a tablespoon of chia/flax, and frozen mixed berries (raspberry, blackberry, blueberry) so all that's left after that is beans, onions and mushrooms.

    I have never been good about getting the mushrooms in every day but I try to use Austin's idea of just throwing a couple in the microwave for a minute with a little water and adding to salads or whatever. So easy!

    Those Gardein cutlets were so good...omg...I enjoyed every bite. And it had been 5 weeks since I had any processed vegan food...so it was especially yum!

    Not feeling great ...never out sick...no one to cover my desk...but...been up since 1 with a headache...so, I will go in, do the numbers my boss needs...organize the desk for the girl who took almost two weeks' vacation over TG...and then come home.

    Will make soup later...my go-to is Vegan Blueberry's Vegan Minestrone ... not hungry at all at the moment.

    Take care everyone. Tis the season to catch something or other. And my ortho appointment is tomorrow so I want to be ready for it.

    Oh no, Nanc! I sure hope you feel better soon.

    I decided not to make the protein power bowl because I was going to have too much food. Made the soup and will be eating that for lunches for 4 days. Sliced up peppers and cucumbers and set up containers of those to take to work for noshing with grape tomatoes. Baked 4 large potatoes. Will cook the broccoli and make the power bowl later in the week.

    Today was good! Back on track after nearly a week of indulging in wine and too many starches and higher fat foods.

    B (at the office around 9:30) - sliced veggies, a clementine
    L - soup and a baked potato
    S - apple
    D - smoothie, pinto beans with salsa

    This week is already shaping up to be a real PITA at the office and I need to figure out when I'm going to get to the gym. Work has really been messing with my schedule lately. I had a class scheduled for tomorrow evening but I have a gal out sick and have to cover something at 4:00 so I don't know if I can get there in time. :(

    @esmereldaSP ooh I wish I could grow sweet potatoes here! if we end up in a warmer climate with a longer growing season they will be at the top of my list

    Joe and I have really been rocking our diet and exercise. My blood sugar has been so good. I might even have to stop taking the low dose of meds I am on. I'm checking daily. Blood pressure with the increased dosage is just okay, not spectacular. I'm hoping with more weight off and all of the activity I can go back down in dose the next time I see my doctor.

    I'm obsessed with Europe right now. Especially the architecture. Facebook and google have caught on, making things worse by constantly showing me eye candy and articles about moving there.

    Joe's sister is coming out for a visit this coming Saturday. She lives in OH. She isn't WFPB but she is vegan so we shouldn't have any difficulties with our food.

    I was able to make the 6:30 class at the gym, yay! I don't really like working out later because it makes dinner late. Having a smoothie now and might eat a little of the soup if I'm still hungry but I don't like to eat too much this late in the evening.

    Not having worked out much at all for several weeks with one thing and another class kicked my rear tonight. Felt good though.

    The one co-worker is still sick, running a fever, etc. There's a lot of crud going around right now and I told her under no circumstances is she to come in until she's better. I do NOT need to catch something with so much to do before the end of the year.

    Two days sticking to my plan though. Woohoo!

    Carla, do you really want to leave your little "farm" and move out of the country? It just seems so idyllic where you are.
