    idk for sure Mihani. That's why we're thinking an apartment we can rent out when we're not there and keep this place for now. Drive the doggos to my mother-in-laws in KY and try it out for a few months. We've been home almost every day for 5 years now...overdoing the idyllic a little. But to start, we'll just go for a vacation, 2 weeks or less, to check things out. One step at a time and big dreams that could come crashing down when reality hits.

    It is freezing here now and snow is falling. Pretty for a day or two but hard to walk in and hard to drive anywhere. It is getting dark at 4pm and the days are still getting shorter.

    Yay for getting in your class at the gym! Hope your coworker recovers soon and stays away until then.

    I bought a pomegranate the other day and I am loving it. It is like candy.

    Hahaha... who knew one could overdo idyllic? Your plans sound sensible. What do you do with your pomegranate? I have to admit I've never been a fan of them, but I know they are a superfood. I found them a bit too tart maybe? Can't remember now. Maybe I got one that wasn't ripe or something and it put me off so I should try again.

    LOL I'd never have been one to think idyllic could be overdone. Maybe 2 weeks a year of galivanting about will be enough. That would be a lot easier!! (of course when we went to the Netherlands 8 or so years ago, I wanted to move there, too.)

    I haven't had a lot of pomegranates. Last time I tried, probably almost 10 years ago, it was super hard to get all of the little niblets out and then had a nasty tart "reward". I told myself I was done with them, but I saw them in the store and thought I'd power through one for the benefits. I have no idea how to pick the best one, I just grabbed one from the pile. Still a pain in the butt to open up and prepare but wow the flavor.

    We've been managing to remember to have a salad before our dinner and that is working really well for me. My eyes are still too big for my stomach but I almost always have leftovers on my plate for the next day.

    I've switched to millet over oats for my breakfast since it doesn't spike my blood sugar as much, but now that my numbers have improved I want to try the oats again for the benefits. I've had a few smoothies too for the extra greens but I get too cold this time of year.

    Today
    probably oats w/ blueberries, 1/3 banana, cup of blueberries, few raw walnut halves
    little bit of leftover banza pasta w/ sauce and tofu
    stir fry w/ homemade stir fry sauce, vegetable medley and quinoa

    oh yeah, we've decreased our fasting window. Joe needs to eat more frequently with a new medication he's taking and so I've been fasting from 4 or 4:30 pm until 8 or 9 am. I don't even know that I can call that a fast, but it is working for us so far.

    oh and I just eat the pomegranate as-is by handfuls LOL though if I have too big of a mouthful I end up with just the chewy seeds left. I was thinking they would be great on a salad too. will try that tonight if I remember and have any left

    Sounds like everyone had a nice Thanksgiving and is working to get back on track. We ate at my sister's place - her son, his wife and their 18-month old daughter were there too. This is a pic of my sister's spread (she's an excellent cook). She's a vegetarian but put meat in the lasagna for her son's family and my DH Phil; the eggplant parm and everything else was vegetarian (except of course the turkey and gravy).

    I tried a pomegranate once a long time ago, but didn't like what a pain it was to open and get the seeds out of, and it stains everything it touches. I'll stick to the bottled juice when I get an urge for pomengranate, ;)

    Nice Thanksgiving spread there, Spring! You reminded me of the other reason I decided to give pomegranates a pass. The mess!

    Carla, I am definitely a volume eater. I like food and there are times I feel like I'll never be full! But if I stay completely WFPB then those cravings don't start and I can eat as much as I want of veggies, fruit and beans. I do have to watch the starches, which are my favorite thing, but I've found potatoes or sweet potatoes satisfy those cravings just as well as bread or grains.

    I have some work to do yet tonight. I wanted to cook the broccoli and power bowl tonight but I don't have it in me. I've been getting home later than usual most days for a couple months now. I'll get this project out of the way and go to bed.

    Eating the same things this week just switching up for which meal. Cut veggies and grape tomatoes, Eat Your Greens Soup, baked potatoes with pinto beans and salsa, apples, clementines, smoothies. Whenever I consider getting in the dratted snack cabinet at work I just grab another clementine instead.

    looks delish, Spring! you're right on with the mess w/ pomegranates. pretty sure when I tried it years ago I ended up buying a bottle of Knudson Just Pomegranate juice!

    that said...

    I had a fantastic salad tonight. Pickled onions, a diced olive, some pomegranate seeds, and shredded carrot with lots of greens and a creamy red wine vinaigrette.

    It looked really pretty with the carrot and pomegranate seeds on the bed of greens. I'm thinking I'll make a salad like that for Christmas dinner. (craisins would also provide the color and some flavor without all the hassle.)

    Mihani, I have to be so careful with my starches. Joe makes toast in the morning and the air is fragrant with temptation LOL
