We have to dedicate this month to our Magic member. Nanc, we hope your recovery is quick and easy and you are walking tall and feeling great soon. <3

Just starting off the March thread and will post more tomorrow. It was a long day and I'm feeling really stressed/tired right now. I did make a trip to the store and got lots of stuff to prep tomorrow night so I can eat better tomorrow and through the weekend. I've been a bit off the rails here. Too much eating out lately.

    @magic71755 - Magic, we are thinking of you! I hope your recovery is continuing to go smoothly.

    @Mihani, I hope you are feeling a little (or a lot) less stressed today!

    Eating out is so hard, since at many places you don't know what they fed you. We went out last night and my husband ordered a dish that he makes himself. The restaurant's version added sugar. He was sad -- less tasty and not good for his health goals.

    Since the spinal block* wore off, reality has hit, and I am managing pain with oxy. 5 mg…you can set an alarm with the pain in my knee coming back after four hours! 🤯

    I am settled in my Lazy Boy …and think I will stay here for awhile.

    TOMORROW first PT… LOOKING forward to it…. I think I get a knee massage…I’m sure he won’t go all out on me so soon after surgery.

    Wishing you all a magical month…let’s right those ships 🚢🚢🚢🚢🚢 and ourselves our priority…one day at a time. Gather those one days and get some momentum going.

    Mihani - eating out too much can definitely create havoc, I hope you're able to get back to your better eating.

    Nanc, so glad you are home and doing well. Sorry about the pain though. Do you remember how long it took with the first knee for the pain to subside? Wish I lived closer I would bring you some of the stuff I'm prepping tonight.

    Austin, saw your post on the end of February's thread. Your broccoli dish sounds really super. Was it a salad or cooked? Please share!

    I don't think I ever asked you, but is your husband doing WFPB? I know you sometimes bake and cook things for the family that you don't eat. I admire you baking goodies and not eating any!

    Spring, eating out really is dicey! Most restaurants these days have some delicious vegan options which there certainly weren't 12+ years ago when I first decided to go full vegan, but most restaurant options aren't exactly healthful food. When I was vegetarian before that there were always things to eat but mostly they had cheese or butter. Which is why I was so fat when I was a vegetarian. LOL

    Gotta get on prepping. I got mushrooms, chard, kale and already had onions so I will make a BIG skillet full of water sauteed goodness there. Prep salads... have red and green leaf lettuce, english cucumber, yellow peppers and radishes. I bought pre-shredded carrots and some Love Beets so I don't have to mess with prepping those.

    Have any of you tried the Love Beets? I actually prefer beets raw and shredded, but the Love Beets are pretty good and awfully convenient. Some are just cooked and others are marinated, but no oil.

    Okay off to cook.

    @Mihani first two weeks…lots of pain…right now I am on top of it with my schedule of pain meds, icing, elevating and a fe prayers thrown in.

    I have spinach and beans for today.

    Simple vegan convenience foods…Dr Mc D soup.

    Rye toast dry.

    Frozen veg.

    Still working on that constipation… day five. My belly did come back. They heard gurgling noises.

    PT at 11. Looking forward.

    Nanc, how did PT go? Glad the pain is manageable.

    Long day then out with my brother for a light dinner. Still hungry probably going to eat a Dr. McD soup now I'm home. Early to bed going to the office tomorrow and Sunday. Super busy and didn't get as much done this week as I hoped.

    Didn't get to cooking last night but did prep salads. Must prep/cook tomorrow so nothing goes to waste! I decided to order a week of leafside this morning. I think Carla had tried it and wasn't impressed, but I'm going to give it a shot. I ordered the whole shebang so I can try everything and if there are some I like I'll order more for lunches and dinners and eat oats for breakfast. Just need to keep things simple until I get through tax time.

    Mornin' all. Just checking in before heading to the office for the day. All set for a few good days with salads, cooked veggies and farro, fruit.

    Plan for today:
    B - berries, cherries, cinnamon, baby spinach, oats, oat milk, chia/flax, a couple walnut halves
    L - sauteed greens andbeans (kale, chard, mushrooms, onion and chickpeas), farro, roasted broccoli, cantaloupe
    D - big ol' salad

    Finally made progress in the bathroom this morning… lord have mercy! 🙄

    Pain is manageable with oxy and extra strength Tylenol

    Your menu looks wonderful, Mihani! Totally 😋 yum!

    Oatmeal, beans, prunes, spinach are the stars of my day!

    Homemade soy yogurt with canned pears for dessert.

    @Mihani - The broccoli dish is a cooked dish. I throw half a pound of frozen spinach and a pound of frozen broccoli and cauliflower florets in a microwave dish, and heat. Hmm. I will try reserving sonme of the froizen, to get in some raw cruciferous. Anyway, after I take it out of the microwave, I drizzle on cider vinegar and various spices. Currently, the spices are black cumin, cumin seeds, garlic powder, black pepper, dried ginger and curry powder.

    My husband is not doing WFPB. He is getting more motivated lately about health, so he has started adding in some WFPB dishes. He made himself a big ppot of veggie stew for lunches this week.

    All your talk of prep is inspiring. Today is my day to get my pot of beans made. I ran out yesterday.

    I have not tried Love Beets!

    I hope leafside has some "yes" dishes for you. I thought of you last night, as I was working on taxes!

    @magic71755 -- Hurray to progress in the bathroom, and to your having a super healthy recovery diet! Are you watching anything fun on YouTube while you rest and heal in your recliner?

    @Sparkspringtim69 - Howdy! How did your weekend go?

    I got through a busy end of the week. I am co-coach for a middle school science team (homeschoolers). This weekend was a competition in a science quiz game that they all tried in person for the first time. It was out of town, so multiple meals on the road. I ended up relying on small meals of nuts and goji berries to get through. It was kind of odd, but low in sugar and easy to pack. I just didn't have the energy to pack big veggie meals. I got through and stayed WFPB, so yay for that. It was very nice to have some brocc-cauli and some steamed apples when I got home!

    Magic, glad to hear you are doing so well! How often do you do the PT exercises?

    Thanks, Austin. That sounds easy and tasty and I'll give it a try. I'm not a big fan of frozen veggies but if they are seasoned well or mixed in with other things they are fine.

    Excellent work sticking to WFPB on the go, and probably surrounded by lots of food and snacks to boot.

    Good WFPB day... actually several good days in a row. I think I'm on a roll.

    B - oats with all the usual goodies
    L - apple, banana, smidge of PB
    D - cooked veggies and broccoli on a bed of lettuce with shredded raw carrot, pickled onions and a couple love beets, plus maybe 1/2 cup of farro. It was quite the salad/bowl mashup.

    Had my knitting class tonight so I ate dinner early at the office around 4:30 and just had a little cantaloupe when I got home and now it's time for bed! Class was fun! It's only two weeks so I have to complete the project we started tonight before next Monday and we'll be starting a new one. It came back to me pretty quickly.

    Sweet peas…actually was having a hard time because I thought the lazy boy was the best place to be.

    W R O N G !

    I knew something had to change.

    Now in my bed with pillows arranged properly to help reduce swelling (I had a conversation with one of the nurses and we talked about arranging the pillows better).

    I stayed in the La-Z-Boy chair last year for two nights and then moved into my bed. So I am feeling behind schedule a little bit because I stayed five nights this year.

    My swelling is already starting to go down a little bit from the change in location and the way my leg is propped up.

    What am I watching? This is crazy but I’m watching CHOPPED!

    I don’t have the ability to concentrate too much right now so there are 20 seasons of chopped and I just put it on at the beginning and I just let it run in so if I doze off and come back, it’s OK I don’t have to follow any storyline.

    Physical therapy today and that’s about it. I just hope I can see a big change in the swelling by changing my location. That’s my goal right now.

    Long day at the office didn't get home until almost 7:00 so this is a quick check-in.

    Nanc, hope the swelling goes down soon. I've never heard of that show, what's it about?

    @Mihani - That looks like a very healthy day despire it being the busy season at work! Your knitting class sounds super fun! I have never learned to knit, and have lots of respect for those who can!

    @magic71755 - I am so glad you talked to the nurse and fugured out how to get the swelling to go down faster. I hope PT is going well!
    I haven't seen Chopped in ages, but remember it as such fun!

    Yeesh busy days this week! Got out of the office a little before 6:00 and barely made my 6:30 strength class. It was a tough class and I'm going to be sore tomorrow!

    I tried one of the leafside smoothies because it arrived today and I ate the last of my prepared food for lunch, plus it was late after class. It's surprisingly good. I'm going to keep the packing list to make notes of things I like or dislike. I mostly want these to keep me on track Thursdays and Fridays because I run out of things I made on the weekend or they aren't good anymore, so I end up not doing as well the end of the week.

    Doubt I would continue ordering smoothies since I really enjoy my oats, but we'll see what the soups and bowls are like. Going to take one of the soups to the office for lunch tomorrow.

    Off to work on my knitting "homework" for a bit then bedtime.

    @Mihani CHOPPED is on the food network

    I don’t have regular television, but I do have streaming Prime Video .I watch it there

    Four contestants compete against each other with the basket full of secret, crazy ingredients that they use and they have to make delicious meals and each round someone gets chopped so there’s breakfast dinner and dessert something like that

    It’s really quite good and it’s been on for a think 20 seasons long time so watching the very beginning has been really fun like I said it’s on Prime Video so if you have Amazon, you have Prime Video

    @AustinRuadhain the first season was 2009 so fun!

    I had a Whole Foods order today because I needed some vegetables to make fresh food

    I’ll probably just roast some vegetables and have them with rice

    I don't have regular cable anymore either, Nanc. I cut the cord maybe 2 or 3 years ago. I have tons of channels over the air with an antenna but only in the family room. Also have Amazon Prime and then I rotate one other paid streaming service. Right now I have HBO Max and have tried Hulu, Britbox and a couple others can't remember. With the roku there are another thousand things to watch. Crazy how long it took me to give up cable and I haven't missed it one bit.

    Glad to hear you are feeling well enough to do some cooking!

    Didn't get out of the office until well after 6:00 tonight then stopped to chat for a few with my brother and sis-in-law, ran to the little grocery for fresh veggies to cook this weekend.

    B - usual oats
    L - Dr. McD soup and a banana
    D - ezekiel english muffin (it's so late I didn't feel like making anything or eating much)

    @Mihani btw, Chopped really is not for vegans. Some episodes I pass on. But it is entertaining and I don’t have to think much.

    Up in the middle of the night. Pain is still severe but manageable with meds.

    I think I like Dr Mc D’s ramen soup the best.

    I now want English muffins! 🤣

    I love the miso ramen soup, Nanc. And the hot and sour. I've tried all the other varieties and didn't care much for them.

    Sorry the pain is severe and hope your meds kicked in.

    I am taking one of the leafside meals to work for lunch. I neglected to order the bowl with lid for preparing/rehydrating the meals but have one coming from amazon. I found something that will work here at home so if the bowl doesn't arrive before lunchtime I can still make it for lunch. What I have is plastic so I wouldn't want to use it long-term and looking forward to the ceramic bowl.

    Meeting up with friends tonight and planning on club soda and no food. If I'm hungry when I get home I'll have an ezekiel muffin or a small salad. Going to be in the office both tomorrow and Sunday so I am glad to have the leafside on standby. I will prep for the week either Sat. or Sun.

    I am about halfway through my knitting homework so I will need to take some time to finish that before the second/last class on Monday.

    I had a good day yesterday. Not great -- I need to add back my focus on GBOMBS. Yesterday I had greens, berries and seeds. My lentils weren't done at dinner time, so no beans, which is unusual for me. Onion powder but no actual onions, and no mushrooms yesterday. I will try to up the GBOMBS going forward.

    Off to work on a project I am behiiiind on!

    Good luck with catching up on your project, Austin! I'll join you in focusing on getting those GBOMBS in.

    I'll be off to a good start because I got two bunches of kale and one of chard, some mushrooms, and onions to make a big pot of goodness. I think I'll add pinto beans this week. A batch of that generally lasts me 4 days. Also have lettuce, radishes, carrots, pickled onions and grape tomatoes for salads.

    Had the first savory bowl from leafside for lunch today. It was pretty good although I don't think this one will be a favorite. Looking forward to trying them all out over the next few weeks. They are much higher in fat than I realized, although all healthy fats no oil. Still, I'll have to see if it affects the scale and reconsider if it does.

    Have a strength class in the morning then to the office for the rest of the day. Hopefully I can get a little more caught up this weekend.

    Oh, I forgot to add, I did stick to club soda at the restaurant and ended up ordering a salad. Used balsamic for dressing. And the group ordered a big plate of spring rolls which I looooove but I wasn't even tempted honestly. I'm going through one of my "nothing can tempt me" stages... hope it lasts! LOL

    oh man, I love those 'nothing can't tempt' me phases, Mihani! Nice work! Show us what you're knitting! I haven't gone back to knitting since my shoulder froze up during my hat-knitting-frenzy a few years ago at Christmas.

    I'm sorry you're dealing with so much pain, Nanc, but glad that the meds are working for you and that you are on the road to recovery. What all are you going to get up to with 2 good knees?! Lulu and you will be out and about together in no time.

    I just talked to Joe re: cable tv. He doesn't think he's had cable in over 20 years. I'm not 100% sure if I had it for a bit when I lived in Canada in that time, so maybe 15 years for me. It's been about 15 years since we've had a land line phone too. BUT, we do pay for Discovery Plus which has all of the home reno type shows and is $7 a month and Netflix. We have prime so we use that sometimes too. And we pay for YouTube Premium for commercial free youtube and streaming music. If we could only keep one, it would be youtube premium because we use it daily for our news programs and it is an excellent reference for my art projects. Couldn't handle those ads!

    Has anyone tried making Seitan? I had some store bought once when a recipe called for it, but it was not good. I happened to run across a youtube video where a vlogger shows how to make a gluten free version from lentils. I'm going to give it a shot. I'll report back good or bad. If it turns out decent, the same vlogger has a lentil tofu recipe too. Many others. https://www.youtube.com/@recetasdegri
