I've never tried making seitan myself, Carla, although I've thought about it. I think Isa has a method for making it in Veganomicon if I recall correctly. I have used some ready-made products but not the plain in recipes.
I think the first time I got a streaming service was two presidential elections ago. I thought if I saw one more political ad I'd go insane so I paid the extra for no commercial TV. LOL
How is your shoulder doing these days?
I slept in until 7 am this morning which was nice. Had some tea and light breakfast, then my strength class then the office. I only stayed about 4 hours because I wanted to get all my stuff done today. Ran to the grocery for a few odds and ends, came home and got a load of laundry done and did my cooking. Need to get back in there tomorrow and put in a full day.
Baked 4 garnet sweet potatoes, sheet pan of roasted broccoli. Big pot of onions, mushrooms, kale, collards, black eyed peas, spices. I thought I got chard the other day but remembered when I got in the crisper drawer that the chard didn't look very good and the collards were lovely.
Tried one of the leafside sweet bowls (more fruit than veggies it appears) and was not a fan at all. The flavor wasn't bad but the texture was extremely off-putting. Maybe those need to soak longer because the pear bits were like little pencil erasers. I got busy and it actually soaked close to 20 minutes and it's supposed to take 10. Maybe an hour would work, but not getting that one again. So far I'm 1 for 3.
B - half an ezekiel muffin with a smidge of PB, half an apple (pre-workout fuel)
Later B/L - leafside goji pear bowl (yuck)
D - half a baked sweet potato with some of the greens/beans concoction and broccoli
Off to try to finish my knitting homework before bedtime. I forgot about the time change so I need to remember to get to bed on time for my body not the clock.
I will share a pic of my knitting project after class on Monday. We'll be finishing and binding off then and starting the next project.

Most of the Leafside meals we tried did not cook/soften properly. AND we bought the recommended bowls, so it isn't the bowl you are using Mihani.
It is starting to look like spring around here! This year I'm going to plant a little herb garden on our patio so the herbs are nice and close when I'm cooking.
I made up the batch of seitan but haven't tried it yet. It is super easy, the only bit of work is whisking it on the stove for 10 or so minutes.

Carla, I have a bunch more leafside to try so we'll see. I don't care much about having the sweet bowls or smoothies but if I like 6 or 8 of the savory bowls and soups then I'll be good to go on the days when I need food and don't feel like cooking. I will say I'm very full and have a lot of energy after eating one.
Got home from the office and got busy with a few more chores around here. Changed the bed and started a load of linens. Load of towels next and laundry will be caught up. Also prepped my salad goodies which I didn't get to last night.
Probably only a few more rows to finish my knitting project. My hand was starting to cramp up so I left it last night. Must get finished tonight for class tomorrow.

Need to make salad dressing. Maybe Shane & Simple vinaigrette. It's kind of my go-to now because it's good and super easy. Gotta say, I'm much more energetic this weekend after 7 days in a row of 100% eating right and exercise. Always makes me wonder why I start slacking off knowing I feel so much better when I stay the course.

I am so happy it's spring break. There's time to catch up on class planning and working on enrollments for the fall. The big thing tomorrow is my son getting some big college news. There's a college at the top of his list that releases decisions tomorrow. He is in already at a place he is really happy with, but we get decisions n the stretch places this month. Tomorrow's the place at the top of his list.0 -

Austin, how exciting! I hope that your son gets into his top pick but it sounds like he'll be happy with the other one too.
Didn't get home until after 8:30 as class ran a little long. A lot to learn and absorb tonight and we got a start on the next project, but now I'm on my own. The instructor was great though and she said she or anyone in the shop can help if we run into trouble. Just have to stop in and see if they can get us back on track.
B - cantaloupe at home, oats with all the usual at the office around 9:30
L - sweet potato, greens and beans, broccoli, a handful of pistachios
D - half a whole wheat pita stuffed with veggies and lettuce

Ah guys, the seitan was the suck.
It could be that I didn't cook it long enough. Perhaps it was supposed to get more dense. But as it was, it sliced up nicely and browned in the pan but was had a very mushy texture. There's a lot left and Joe didn't even want to taste it (good choice really) so I am going to try air frying it to see if that helps.

Oh no Carla! Sorry about your seitan. But tell Joe he should have tried it. LOL
Next project is another cloth but this one has a pattern to it (first one was just straight knitting to learn) so I have to keep track of rows and stitches and knit and purl and everything! I don't know how much I'll get done before tax time is over but I'll do a little here and there just so I don't forget how to do everything.
Strength class at 6:30 then I'll eat a little salad and get to bed early. Up too late last night started reading after I went to bed.
Breakfast and lunch were repeats of yesterday. Dinner will be a salad with a sprinkle of pumpkin seeds after class. I also snacked on a small apple and a sumo mandarin today. I know I was more hungry because I was tired but at least I made good choices and didn't get into the snack cabinet.

Still kinda worn out today. I'm so busy at work and can't seem to make much headway. Planning to work from home on Saturday in hopes I can concentrate on things without interruption. Class last night kind of kicked my behind too. It was good though, and I'm not sore. Have another one Thursday night and two classes on Saturday. Trying to get back into the habit of at least one class during the week and two on the weekends.
Menu total repeat of yesterday except I didn't have the extra fruit for a snack. I think my preps are done for. I have enough left for one more day but I get nervous about eating leftovers after 5 days and I cooked everything Saturday. So tomorrow and Friday will be all leafside meals. Will be interesting to try eating those exclusively for a couple days and see what happens as far as how I feel and what happens on the scale.
Going to go to bed extra early and read/relax. Been a rough week.

@Mihani - I hope you got to rest up and feel frisky(er) today! And I hope that today's leafside meals are going okay. Your "pear bits like pencil erasers" horrified me. I hope other meals are better!
@Carla_wfpb - I am sorry the seitan wasn't so tasty. Reading a recipe, I can see that it might be challenging to get it right, especially the texture.
@magic71755 - I hope that you are getting up and about for all that PT, getting some good rest, and that Lulu is keeping you company when you slow down.

Austin, what did you hear from the college?
Busy day and got stuck late so I didn't have time for dinner before strength class.
B - leafside mint chip smoothie (this was pretty good)
L - leafside potato leek soup (pretty meh... probably wouldn't order again)

Didn't want to do another leafside meal so late in the evening so I just ate a salad. I guess I'm not being much of an ambassador for leafside so far. They just aren't that tasty to me, and I have eaten mostly SOS free for many years so it's not that. I will say I feel great and am very full for hours and hours after eating one of the meals. I had the smoothie at 6 am and didn't want lunch until noon, then I wasn't hungry at all and had plenty of energy for strength class 6 hours later.
Still hopeful I'll find a few that I truly like and have a bunch to try yet. I'm committed to sticking out my plan through the end of the month which is cooking on Saturday, eating my own food Saturday through Wednesday, then leafside on Thursday and Friday. If it stops me from straying into bad choices on Thursday and Friday because I don't have time to cook again then it's worth it.

Hi all, been a rough day. Had two fillings replaced early this morning and my neck and jaw are sore. I am going to bed early! Brought work home so I can stay out of the office this weekend. Have lots of cooking and chores to do so I can do all that in between working.
B - skipped it since I had to be at the dentist at 7 am and didn't feel like eating that early
L - leafside forest mushroom savory bowl (Finally got a winner! I liked this one enough to order again.)
D - leafside sweet potato dal soup (another winner... I actually really enjoyed this one)
I am giving the bowls more like 20 minutes to cook/rehydrate now and it seems to work out better. Glad that goji peach bowl didn't scare me off even trying any more of them haha! I like savory more than sweet anyway so I won't order any more of the sweet bowls. Maybe a few smoothies for a treat now and then.
Got chard, kale, mushrooms and black eyed peas to cook up with onion and garlic. Also got salad stuff to prep. Broccoli and cauliflower to roast. Japanese sweet potatoes to bake. And grapes, baby watermelon, cantaloupe. Should keep me more than happy through Wednesday or Thursday. I'll try freezing things if I have too much. Not sure how these items would do in the freezer but only one way to find out. So I'll be back on my own food starting tomorrow and try more leafside on my trouble days the end of the week.

I am so sorry the dentist trip was hard. I hope you are sleeping well! Hopefully once you recover, it will feel great to have all that handled.
Thanks for asking about the teenager. The most-desired college said no. He's still got great options, though, just a no from a stretch place. Now we hang tight to see if one of the other 2 stretch places say yes. Also long shots, but it was worth trying!

I managed an outing last night at a coffee + beer place without going off plan, which was nice. Then I got to drive home in a super-spectacular thunderstorm. Flash after flash of lightning. The light show didn't worry me excessively, but I was just a bit stressed about rain hard enough to affect visibility. My husband made me laugh when he got home because he had been at a business meeting with a guy visiting from Britain. London, as I suspected, does not get big light show storms, so the business guy from London was a worried. People did try to reassure him that this was not way off normal for here.
B - coffee w/spritz of sugar-free Torani hazelnut syrup (I will wean myself at some point)
L - 3/4 c cooked beans* with lots of spices, cauliflower-broccoli-spinach mash with lots of spices and ACV, steamed apple with cinnamon and a spoonful of all natural peanut butter
S - unsweetened cashew milk with cinnamon and turmeric
d (planned) - small salad w/ a few mushrooms, cup of blueberries
* The beans were extra yummy. I bought Adobe Milling Anasazi Beans (heritage relative of pintos) and doubled the spices from my recipe.0 -
Mornin' all! Slept in until 6:30 which was nice. My neck and jaw feel much better this morning. I don't really dread the dentist but I still tense up when they hit a nerve or something which I think made my neck hurt and then of course having your mouth jacked open for half an hour or better makes your jaw hurt.
Austin, sorry to hear your son wasn't accepted at his top pick. Hope one of the other two comes through but it sounds like he has great options no matter what. Congrats on staying on plan your night out. That's always the hardest for me because I want to have a cocktail or glass of wine, but I figure the more often I go and order club soda with lime the more habit it will become.
I don't like driving in lightning. I've always been terrified of it since I was very young, and then when I was in high school a neighbor's horse was struck by lightning and killed which just made it SO much worse. I have just in the past 10 years or so become less tense about storms.
Let's see... today's plan is pretty simple but a lot to do. I have been taking it easy this morning so far and sort of making plans for getting everything done. I need to do one more load of laundry, clean up the kitchen, cook and prep, get work done. I have two gym classes at 10:00 and 11:00 so I think I'll get my salads ready and prep all the veggies for cooking, then after class I can throw things in the oven and on the stove while I work at my laptop. When everything is done I can move up to my home office.
B - leafside blue brilliance smoothie (too sweet poured half out and will have an ezekiel muffin with a smidge of PB since I need fuel for all the exercise later this morning)
L - (planned) big ol' salad, some grapes and blueberries
D - (planned) baked japanese sweet potato, cooked greens/beans/mushrooms/onion, small handful of pistachios
I'm definitely not getting any more of these smoothies and sweet bowls. They are just too sweet for me. I've only tried 3 of the smoothies and one of the sweet bowls. The only one I liked so far was the vanilla cinnamon smoothie which was very good.

I really messed up today! Got through my two classes and I was so tired that I decided to nap and slept 3 hours. Then spent 3 hours cooking and prepping, cleaned up that kitchen mess, and now it's bedtime. Didn't get any work done today. Oh well, I must have needed the rest and since I got everything else done I'm clear tomorrow to work all day. I did sign up for another strength class at 11 am tomorrow but it's virtual so I'll work a few hours, do the class, eat lunch, then be back at my desk by 12:30.
It was a big day of cooking and I should have more than enough to keep me on track through Wednesday. I didn't end up eating any lunch. Forgot that I bought asparagus so I cooked that up with green peppers, soy sauce, ginger and garlic, toasted sesame seeds, and had that for dinner with brown rice.
Nanc, glad you checked in. Hope all is going well.

@Mihani - How did your strength class go? Is it mostly body weight, or did you find a class that uses a selection of weights you had or could get?
I did a bunch of cooking yesterday. I made Aloo Methi for my son, his girlfriend and my husband. It has oil, so I skipped eating it. I might modify it next time, to skip the oil. Potatoes are not the best weight loss food for me, so I will hold off on eating this myself for a while. (I found methi/fenugreek at an Asian grocery.)

After cooking, it was time to go to a housewarming party. I ate apples and peanut butter before we left, and skipped the Girl Scout cookies and other party food. Yay!
My big workout this weekend was martial arts class. I had not been in a while, and my legs are still tired today.

Austin, the strength classes are a mix of exercises. The one I took Tuesday we did squats, lunges, planks, and several different lifts with dumbbells. I'm very pleased with how far I've come over the past 9 months even after taking off almost all of December and January because of work chaos. I notice how much strength and balance have improved every day just things like carrying laundry up and down, lifting a box of files, etc. I've been doing mostly 7 and 9 pound weights lately but I use 15 pounds for some things which is really cool! I struggled with some exercises even using 5 pound weights when I started, although part of that was my shoulder which (knock on wood) appears to be pretty well healed.
I forgot you do martial arts. Yay for getting back to it. And also yay for another gathering and sticking to your plan.
Your recipes sound really good. I wish I was a more ambitious cook. Maybe one of these days I'll get back into it.

D - big ol' salad (lettuce, raw carrot and radish, the last of the leftover stir-fry asparagus and green peppers, brown rice, pickled onions, sliced grapes, pumpkin seeds, shane & simple vinaigrette)
That salad sounds weird I know but I was trying to use up some leftovers and it was surprisingly delicious with all those different flavors and textures.

I tried cooking but it took a lot out of me. Too long standing. Using convenience foods a bit but also easy potatoes/spinach and frozen veg kinda things.
PT is tough and my bend is not that great. Lots more work ahead. I set my portable* recumbent bike in such a position that I am able to peddle without having to bend my knee quite so much. So at least I am getting good blood flow to the area to help heal.
Last night was my best dinner...I made a cabbage salad with baked potato and a side of steamed spinach. The most basic seems to work the best for me.

@AustinRuadhain I'm not sure if you were participating in the group at the time I realized that Kasoori Methi is the key for Indian dishes. My indian food was always lacking until I figured that out. I use soaked blended cashews for the fat and that works great for us.
I had to have a tooth extraction yesterday. I was in agony all weekend and then the worst of the pain was yesterday after the freezing came out. My dentist said it was the most difficult extraction she's had in years. (big root ball that was stuck under the adjacent teeth). In May I'm having a bridge put in, but I think that should be a breeze in comparison. This is a new dentist for me, and even though it was no fun at all, I really like her and her dental assistant. The office is only a 12 minute drive from my house which is a huge plus for me.
Mihani, I think the 3 hour nap was not a mistake. More like a necessity! I'm glad you had a bit of a break. Sometimes those odd combinations make for the best salads. It reminds me that it is time for me to pickle some more onions. Alone they are okay alone but in a salad they are amazing.
@magic71755 Nanc, good idea with the recumbent bike. Do you have it where you can watch t.v. at the same time? I hope PT goes well today!
I thought we were going to have to have our sweet 18 y/o kitty cat (Kittens) put to sleep. She has been in and out of the vet with severe constipation. I'll save yall the details. I was preparing for the worst yesterday, but things appear to be going better now, and I think she will get to enjoy her summer in the sun after all.
My food isn't really worth talking about. I'm not doing great with it. I found some dairy free rice pudding that I can suck on with my sore face, and I'm having some Amy's soup for dinner.
We got most of the big fruit trees in our orchard pruned and the branches hauled over the fence for the burn pile. There's more to go but I can't do much bending down or straining, so Joe is going to probably have to finish up. We have a nice day today, but a mix of rain and snow in the forecast coming up.
