    Nanc, going to take time but you are doing so great with PT and your bike, etc. Not to mention eating well even though you can't do much prepping. I bet Lulu is loving having you home all the time.

    Poor Carla! I am so sorry to hear you had such a rough time with the extraction. Hope you are back to normal soon. Yay for Kittens feeling better.

    I had a day. I have a strength class at 6:30 and that will take my mind off it, then I will get to bed early. Food today same as yesterday and will treat myself to a smoothie after the workout. I'll have earned it, plus I couldn't even get through half my lunch. Too stressed to eat.

    @Carla_wfpb - I will keep an eye out for Kasoori Methi and give that a try, too! The methi I am using is fresh.

    Are you starting to feel a little better after your tooth extraction? I hope so. It sounded like soup and pudding would need to be the thing for a while.

    Thanks for the reminder about pickled onions. I haven't done that in a while, and need to. I picked up a bunch of onions when I picked up some big bunches of methi at the market,

    Hurray for Kittens getting some more time in the sun. Enjoy that extra cuddle time. So precious.

    @magic71755 - I hope your knee is loosening up. Keep up the great work on the recumbent bike!

    @Mihani - I hope you are hanging in there, during your busy time! Your salad sounded inspiringly wonderful! Hmmmm.....

    I just came in from a 3 mile walk, and am off to eat some healthy veggies!

    Austin, 3 mile walk wow! I really need to get outside and walk when the weather warms up a bit. The treadmill is fine but I need some sunshine. Cooped up too much.

    My cooked veggies were looking a bit sad this morning so ended up doing leafside for lunch. Today was the smoky pea soup which wasn't bad but won't be a favorite. Dinner is a salad followed by blueberries and diced apple with a little PB.

    Today was a little better but so behind on so many things and clients are clamoring. I'm going to work a LOT this weekend and see if I can get my head above water.

    Nice walk, Austin! I missed that you are using fresh methi! I will definitely be on the lookout for that. I searched Safeway but no luck there. Lots of Canadian Indian produce and spice stores right across the border but I can't bring fresh stuff back across.

    I hope you get through what you need to this weekend with work, Mihani. Is it still cold there?

    My face is starting to feel a lot better! I haven't had any ibuprofen yet this morning and I'm hoping I don't need any more. Yesterday I was feeling good enough that I helped Joe finish up with the big trees in the orchard.

    When Ruby had her surgery, we bought a 2-pack of portable octagonal pens and that second one paid off yesterday when she was able to hang out outside with us in the nice weather.

    I learned how to do a good lashing knot the other day so I set aside some of the straightest apple tree shoots to use for a trellis and to make bean pole tripods. If they turn out cool I'll take a pic. I'm thinking about how I can incorporate some hand spun yarn or something woven to artsy up the property. Sheep hang around outside all of the time in their wool coats, so I don't see why my wool yarn can't last a few seasons out there!

    Joe and I are both gaining back some weight and hating it. We have to get through a few birthday celebrations over the weekend and by Monday I want us on track with food. We have a ton of work to do on the property so our activity is going to ramp up naturally. Yay for spring!! Fall used to be my favorite season, but I think it has to be spring now.

    And speaking of spring, how are you doing @SparkSpringtime69 ? What is the weather like there? Are you able to get into your gardening yet? Still waiting on that superhero costume :)

    Howdy all... had a party to go to after work. Only stayed about an hour but it was fun. Got to talk with a bunch of people from the court that I see so rarely ever since Covid. It was really loud and crowded though and I don't do that well with that so I didn't stay long. Didn't have any of the food or a cocktail. Yay! That's 3 gatherings now that I've skipped the non-compliant food and alcohol.

    Carla, glad to hear you are feeling better. It is getting more springy here warmer during the day (when I'm stuck inside the office) but gets really cold at night. Yay for Ruby getting to hang out outside with you. Your new project sounds interesting will look forward to the pics!

    B - Dr. McD soup and a few walnut halves
    L - leafside thai veggie bowl (really liked this one)
    D - salad, an apple

    After I get through tomorrow I will have 3 full weeks totally sticking to my plan. Been a while since I've had that long a streak! I'm down 6 pounds and the pants I put on this morning were baggy.

    After 3 weeks of sticking to it 100% I'm down 6 pounds which I'm more than happy with. All set for another week on track.

    Stopped at the grocery last night and will be prepping and cooking when I get home from the office today. For salads I have red and green leaf lettuce, carrots, zucchini, orange peppers, grapes, and will make pickled onions and shane & simple vinaigrette. For my cooked veggies I have red and purple kale, collard greens, mushrooms, onion, black eyed peas. Also japanese sweet potatoes to bake.

    It's working out well having the leafside meals to fall back on at the end of the week. Keeps me on track when I'm out of prepared cooked foods. My salad stuff generally lasts all week. On the leafside days I have some veggies or oats for breakfast around 10:00 at the office, then a leafside early afternoon and a salad when I get home with an apple or other fruit.

    Today's plan...
    B - nothing
    L - leafside lentil pasta (will be early like 11:00)
    S - apple with a smidge of PB
    D - big ol' salad, ezekiel muffin with a tiny bit of kite hill cream cheese

    Heading out shortly to the office because I want to be home by 4:00 to do my cooking and laundry. Then back to the office tomorrow. I may do all leafside days after this week until tax season is over.

    Just an update on my day! I ended up staying at the office until 5:00 so I'm not going back in tomorrow. I'm really beat and don't feel like doing much tonight. I can get into a strength class tomorrow so I'll have to think about that. I plan to get up in the morning and do all my cooking and laundry then maybe the strength class, then working from home the rest of the day. I was so busy I forgot to eat my apple but it was fine. The leafside lentil tomato pasta was very good.

    Happy Sunday, all!

    Mihani, congratulations on your weight being down. You have been great about eating on plan all month, and it's paying off! I hope you got in some good rest today.

    I did a long martial arts workout again yesterday (3 hours), and was kind of beat after that. Today I did a long walk. I need to do prep for the week this evening, but I think I am going to rest for a bit!

    Wowza, 3 hour martial arts workout, Austin! Did you get all your prep done?

    I did a lot of cooking/prepping yesterday. Baked japanese sweet potatoes, lettuce and veggies for salads, big pot of greens beans onions 'shrooms. For the salads I had picked up two packages of the mini sweet peppers which I roasted with sprinkle of balsamic, no salt seasoning and black pepper. They are so good that way you don't need oil at all. I ate several of them getting them put away and they are delicious sliced up and thrown in my salads.

    Food I made should last through Wednesday maybe Thursday and then I'm going to do leafside lunches for a few weeks while I get through the end of tax season. The only thing I'll have to do is prep salads.

    B - oats with berries, sliced banana, cinnamon, chia/flax, a few walnut halves, chopped baby spinach
    L - sweet potato and cooked greens, beans, etc.
    D - big ol' salad

    I made the strength class on Sunday. Have classes scheduled tomorrow and Thursday as well.

    Quick check-in. Strength class kicked my behind tonight! My arms are soooo tired. Over 8000 steps for today. Woohoo!

    Lunch and dinner same as yesterday. Skipped breakfast. I just got done with class so I still need to eat my salad.

    Mornin' All... cruising through another week on track. I got my lab report and everything looked good but glucose and A1C were on the high side of normal which my doctor won't like so I need to stay the course and get that down into the lower end of the range. We'll see what else my doc has to say when I go in on Monday.

    Strength class tonight. Been trying to get consistent again taking classes Tuesday, Thursday and either Saturday or Sunday depending on when/if I'm going to the office on the weekends.

    Plan for today...
    B - half a Dave's bagel with kite hill, cup of berries and some oats with cinnamon
    L - leafside (not sure which one yet)
    S - fruit if I want a snack
    D - salad

    Stopped for more lettuce and salad goodies last night. Got two more bags of mini peppers. Those have been a wonderful addition to salads this week. I think already mentioned they are so easy just sprinkle with a little balsamic, no-salt seasoning, black pepper and pop in the oven whole at 425 until nice and roasty. They are great leftover just slice and toss in the salad. Between those and the pickled onions I don't even need salad dressing and just add a little dijon.

    ETA: after looking at those Dave's bagels again I realized I didn't look at them very closely in the store and they have oil in them. Oops! I am going to take them to the office and give them to my boss. So breakfast will be some oats and the berries.

    @Marilynsretired Funny comic, Marilyn! Are you starting to get some spring weather out your way?

    Spring has sprung over here. Yesterday was a lovely day and I spent a few hours mowing the yard and field perimeter for the first time this year. It mostly involves just sitting and riding so not a ton of calories burned, but the grass bins are pretty darn heavy when full and I have to carry them over to a tall fence and dump them over. A little bit of weight lifting there at least. But it was so windy! After I mowed the orchard, which has filled up with mole holes since Ruby has been stuck on her leash, I was absolutely coated in dirt. I had an amazing, albeit streaky, tan going on. (sunscreen as the base for sticking).

    Joe and I usually cook our dinner together, but he's going to be in the office for the next several weeks training a new employee, so I'm going to plan and make the meals.

    Apparently, I've made this Smoky Quinoa Black Bean Falafel before (https://minimalistbaker.com/baked-quinoa-black-bean-falafel/). It is marked as made on Copy Me That and apparently I thought it was a 5 star recipe. I'm doing a double batch and Joe can take extra to work if he wants. I'll do that over mixed greens.

    I'm also going to try this mango curry https://minimalistbaker.com/thai-yellow-coconut-curry-mango/
    with a few modifications to make it compliant.

    Spaghetti tonight. Oh, and I had to switch back to whole wheat pasta. That bean pasta is an amazing substitute but it really gives me an extreme case of the farts and my system never adjusted. Seems like this is the perfect subject to end on, doesn't it? Farts!

    Hi Carla - yes we are getting some spring weather - today marks 3 days in a row of sunshine - mornings are still cool but afternoons are in the 50's so think we are onto spring finally.

    Had blood work done this week. Next week I have another iron infusion and then a visit to the surgeon to have a talk re getting my arm prepped for dialysis - though I am not really looking forward to the operation on my arm I need to get it done so that my body is ready for dialysis when the time comes - and the kidney specialist feels it will happen in the next years. Difficult thing is this means I am on the downward side of life as most people don't survive long on it but if it can give me 5 years of comfortable life guess I can't complain - have all things in order at any rate should I be called to home eternal home - but am praying that I will have a few more years with hubby and the children (I am 75 so not like I am a young person)

    Sorry to hear about the dialysis Marilyn. Was hoping your numbers would continue to improve. Glad you are getting some nice weather though. I don't know about everyone else but I am tired of being cold.

    Carla, that's too funny about the bean pasta. I never mentioned it when you all were talking about it but I rarely eat it because of that exact problem and only have it on a Friday or Saturday when I know I don't have to be in the office or anywhere else the next day. LOL

    Sounds like you are getting busy on your spring chores around the homestead. That's great exercise!

    I looked at that recipe and apparently you must have shared it a while ago because I had it bookmarked. I have so many recipes bookmarked I'll never make them all.

    Tried the leafside broccoli cashew alfredo today. It was just okay won't be a favorite.

    Strength class at 6:30 so better get moving.

    Mornin' all. Slept in until 6:00 and going to enjoy a cup of coffee and an ezekiel english muffin before I head to the office. Planning to put in full days today and tomorrow in hopes of getting on top of everything. If I can get through enough today to work at home tomorrow that would be nice but we'll see how it goes. Planned on taking a half day on Monday for a doctor appointment in the afternoon but I may change that to the whole day off.

    Made roasted brussels sprouts and fennel last night and a pot of farro. They turned out tasty but not as good as the recipe I had some years ago and can't find now. I have bok choy and plan to saute that with some frozen stir-fry veggies tonight and prep my salads. Monday will be back to leafside and I don't plan to do any more cooking for the next few weeks so I can concentrate on work, exercise, and some projects around the house.

    If anybody has ideas for the April thread get it started. I am not awake enough yet to be clever.
