We have made it to the last third of the year and we all have so many proud moments and accomplishments that the next three months will be a breeze! fansmiley.gif

I am feeling positive about the next three months...I do know I need to push harder to make more meals all fresh ingredients...but I am on the right path. I love that I found a market that does the prep work and does not charge an arm and a leg for the service.

Two new knees greeting me for my 75th birthday is what makes me the happiest. I no longer sleep with ice packs and my weekends are filled with activities and not just managing the pain.

I am so grateful to be this healthy at this point in my life, but it was work. I went through some very dark times...but I know I am a survivor and believe the best is yet to come!

    Thanks for getting things started, Nanc! Your plans for October are excellent, and yay you dang near out of the 150's! You'll do it this month I just know it. :)

    I have had a pretty productive day after being a bit of a slug yesterday. I did a few chores around here and went grocery shopping but that was it. Took a long nap in the afternoon.

    Today I was at my desk by 10:30 and got lots done. Took a break around 3:00 to cook and do laundry. Broccoli and mini peppers are roasted to be added to salads. Soup just got done. This week is onions, mushrooms, pigeon peas, mustard greens, chard. It's really more of a stew very little broth to it. I am heating up some frozen rice and going to eat some of the stew over rice here in a minute.

    Laundry just went into the dryer so once that is done I will head back upstairs to my desk. I'd like to get at least one or two more files done before bedtime. Still need to change the sheets.

    Plan for the week is smoothies or oats for breakfast, stew and fruit for lunch, big ol' salad for dinner. I only have apples and frozen berries and bananas, but that's fine for this week. I'm not grooving on fruit lately, not sure why. I'll stop sometime this week for more bags o' salad and see what other fruits might tempt me.

    Oh, and I made a microwave mug cake last night but changed up the recipe. I used applesauce instead of oil, whole wheat flour instead of white, and date sugar instead of cane sugar. I had to add a couple extra tablespoons of plant milk because it was too thick with the WW flour, and I also added a little extra vanilla and some cinnamon. It turned out really well and will be a good treat for those times when I want something sweet. I'm not much into eating sweets but every once in a while I want a little something so this will be a good go-to and I'll keep working on the recipe.

    Great job getting things DONE, @Mihani! Now, your month will be off to a great start.

    I am just waiting for Part 2 of the 90-day tell-all to air, to keep me company on the bike...just a dopey show...that's why I like it. NO brain cells necessary.

    I did manage to make 2 quarts of carrot/apple juice yesterday...will make two more tomorrow...that way I will have 16 oz a day for a week. Huge believer in the healing properties of carrot juice. No one has to agree with me.

    ETA: Just finished my 30 on the bike. I may move it back a bit and go 20 this first month. Or at least for two weeks and then re-eval. Just happy I did it today.

    October 2023 = cant believe it is this far along in the year.

    Doing better - working on following the plan for helping my kidneys work better as they are close to getting me to diaylsis which is not what I want. The change in eating habits can be difficult or should I say challenging. I no longer can have red meat of any kind, absolutely no sugar or salt and need 2 L of water per day. Add to that 10 minutes on the treadmill in order to repair my metabolism.

    I am learning to like vegetables - have 2 salads that I now enjoy though honestly would rather eat things that are 'carby' which we no is no good.

    Anyway new month so taking it one day, one meal at a time with the end goal of 5 pounds to be lost by October 31.

    Glad to hear things are getting a little easier for you, Marilyn. It can be tough to change your eating habits if you've never eaten this way. I guess I was lucky because I always loved veggies, but now they are the main dish.

    Nanc, you sound all full of energy right now! Happy you're enjoying the birthday present to yourself.

    Busy day but home a little early. Going to have a big ol' salad for dinner.

    Glad u got home a bit early to enjoy dinner, properly, Mihani. Yay U!

    Rode my bike 30 today...a bit easier. Not sure why I thought it was going to be a breeze...it's been 25 years since I was able to ride an upright stationary bike. (I had my own Life Fitness upright back in the day...drenching sweat was my ultimate goal each time I rode.)

    Just made three days of overnight oats, using a recipe (veganized) by Clean And Delicious, Dani Spies. I adore her. Her recipes are easily made vegan...well, most are. And she is just a joy to watch. She has over two million subscribers. She is a total pro at it.

    A bit later I will make a batch of stir-fried veggies and rice AND TOFU to last me the work week. Or at least three days. Three days might be my limit for eating the same stuff every day.

    Just a quick update on the patio...it turned into the worst experience ever...I have to pay $500 to get out of the contract...that is down from $3,100.00! I thought I was very clear in the fact that nothing could be done until the plans were approved by my HOA. The original guy that came out was nothing but a salesman (made to look like a designer). I got screwed royally.

    I have had heart-to-heart talks with my mom (in my head of course)...she says, it's done, you are out, your health is much more important than $500...let it go.

    Ok, enough of that...back to being healthy, and happy, and no more talk of fixing this joint up for a while. Back to paying off the mortgage...and watching my spending.

    Oh man, Nance. I am so sorry that you ended up having to pay out the $500 for that fiasco. But at least the nightmare is over and you can move on. Onwards and upwards as they say! Your new bike sounds awesome. Great workouts!

    Just a quick check in. Last week I walked over 21 miles on the treadmill, plus whatever I did going on walks with the dogs. I like being able to keep track of my pace and having solid footing. Yesterday I walked for 3.75 miles, so I am on track for this week as well.

    We're having leftover Greek food tonight. With Tzatziki to go with the Greek salad, I don't feel like I'm missing out by skipping the feta. I'm sure there's a vegan feta around but if I don't miss it, there's no point adding the calories and getting a taste for it again.

    The Tzatziki is great. It tastes just like the dairy version to me, at least as far as I can remember.

    Vegan No Oil Tzatziki

    • 1 large (2 cups, grated) cucumber
    • 2 cups Greek style vegan yogurt (I use Forager yogurt, not greek, works great)
    • 3 cloves garlic pressed
    • ½ tsp salt, or reduced to taste
    • ¼ tsp black pepper
    • 1 Tbsp lemon juice
    • Optional: 1 tbsp fresh mint or dill

    Wash and grate cucumber. Press it through a sieve or cheesecloth to remove as much of the water as possible.

    Mix all of the ingredients together. I like to make it early and let it sit in the fridge.

    I have it over Greek salad which for me is just english cucumbers, roma tomatoes, and thinly sliced red onion.

    My dressing:
    1 Tbsp olive oil (or omit)
    3 Tbsp red wine vinegar (or balsamic)
    2 tsp oregano
    1 clove garlic, pressed or minced
    1/4 tsp dijon mustard
    1/4 tsp of salt (I omit this when I'm having the Tzatziki on top since the salt is in there already)
    1/4 tsp of pepper

    Carla, that's funny you mention the tzatziki sauce because I had posted something the end of last month found this stuff: https://goodfoods.com/product/plant-based-tzatziki-style-dip/ and wanted a good falafel recipe and thought you might have made one you liked. LOL

    I've been looking at no-oil falafel recipes though, and going to try one this weekend. It has been fun learning about the cooked/uncooked chickpea debate. I think I'd like to try the soaked not cooked chickpea method.

    Not that need falafel to use the tzatziki sauce, but I loooove falafel so I bought it thinking I'd make some, and now I have to because I've got the crave.

    So that's the plan this weekend. Falafel with lots of yummy veggies and crisp lettuce in wraps or as salads with tzatziki sauce.

    Falafel sounds so much more appealing than "fried chickpea balls" doesn't it? Of course, I won't be frying them making them at home.

    It hasn't been an awful week at work, surprisingly. I feel like we're kind of on top of things. Still way too much to do but we've covered all the deadlines for the next week or two so we can actually work on things one at a time and not scrambling on everything. For now... it won't last, but I am enjoying feeling slightly less pressure.

    Okay, off for dinner! Big ol' salad tonight.

    Now you have me craving falafel! Just did a shop, so it will have to wait, but next shop I will be picking up ingredients for sure. Let me know how yours turns out! I just did a search of the ones I have, and I can't find a go-to recipe in my database. I did find one that I rated well when I wanted to get some variety by switching up the beans.     I wasn't feeling up to a walk yesterday on the TM (ear problems, specialist appt in November), but I managed to get in 1.75 miles anyway, about half what I have been doing but better than nothing.

    Nanc, I miss lara bars! I used to buy them pretty often but the price really shot up around here (like every other item in the grocery) and I just can't bring myself to buy them. I do have a container of dates and thinking of trying to make my own. A friend brought some date and nut balls to a party not too long ago and they were wonderful! Even better than lara bars, and not hard to make at all. Just a matter of getting up the motivation.

    Carla, I bookmarked that black bean falafel. Sounds good! But I want to try the traditional first. I haven't settled on a recipe yet so I doubt they will get made this weekend, plus I forgot my grocery list this morning which had the most commonly used ingredients on it and I totally forgot to get any of them when I did my grocery run tonight. Yeesh.

    I'm leaning towards this one: https://www.brandnewvegan.com/recipes/oil-free-falafels because it looks simple for a first try. A lot of recipes I've seen are pretty fussy and too many ingredients.

    Need to eat dinner and get a little work done tonight so I'm off!
