Nanc, how'd the follow up appointment go? I keep brazil nuts around and eat one or two a few times a week when I remember them.
Countdown is on to boss leaving on vacation Saturday. I have four more days to make sure all our deadlines are covered. Of course, he's in touch now when he's out not like the good ol' days when he went away and left me alone. This is when I really miss the days of no cell phones and emails.

Had a brazil nut just now since Nanc reminded me. I slept in a bit this morning and almost skipped the treadmill but got on there anyway and got in 2200 steps.

Mihani, Good luck with getting everything ready at work...man, do you ever have a lot of responsibilities...yikes! And WTG on getting on the TM. My exercise routine, lately, is not ever there.
I just stir-fried up a bit of broccoli...made a huge batch of rice yesterday...so that will be something for the week. I am just not sure about the broc once it hits the microwave, to heat up for lunch. Hope it doesn't get too mushy or whatever.
Spinach everyday keeps my insides working ... but maybe I eat too much? Anyone have insight into the oxalates*? I guess maybe I shouldn't be eating so much? But the way they sell spinach nowadays...everyone is eating too much it seems.

Since I've been staying so late at the office I've been taking my dinner with me too so I don't have to eat so late. If I manage to get out then I just bring it home to have here.
I think I'm pretty close to having all the deadlines covered before the boss leaves. One of my coworkers has been coming in the past few weekends to help with catching up and it is starting to make a difference.

I had a cantaloupe this week and it was superb. sweet, juicy and great texture. maybe i was just lucky. I had another one I forgot about last month and it went bad, so I'm not sure how consistent they are.
I'm walking on the treadmill lately instead of outside. too hot for me out there! I'm getting 4k to 5k steps out of the way in the morning. while watching youtube. it is working well, now i just have to keep it up to make it a permanent habit.
Speaking of heat, I bought a neck fan. It works great! Looks odd, but once I get warm enough I no longer care about that!

5 weeks to move. Packing away. Friend gave me gluten free black bean burgers from Costco to dry! Delicious.
Magic you are right about toxic sister….lots of distance for next couple of weeks. Kitchen is the worst to pack up. Not a military move so I don’t have luxury of packers.
Have a contract with a moving company to move all the heavy stuff for us. Have a painter lined up to give me an estimate. House is painted very dark with several walls brown and dark yellow. Going with sherwin Williams alabaster white with bright white on trim. Painters starting 3 days before we actually move big stuff. Committed to getting rid of big black leather couch, 25 years old and a dining table I never liked that was given to me.

I am not back in the 150s but I did gain from my lowest...like 6-8 pounds. Staying off the scale until Saturday. I think weighing myself DAILY is not a great idea...well, it sure is NOT working. So I am going to change things up. Different approach.
Make a plan for the day, stick to it ...perfectly for three days and see if I can't get the scale to move. What I had been doing was, oh, this won't hurt me, weigh next day, oops...ok, better today. Next day, better. But then I screw up that day. Up and down and Up and down.
I am sick of being pudgy. SICK OF IT I TELL YOU! LOL I have been in such a slump for so long, well, since June...
I did make a budget and this month I get to see my MONTHLY savings in reality. I need to keep it going 32 months...and then this place is OURS. Huge goal for me from where I started. Long story short, almost homeless in 2002 (lived in SRO, cheap place) Single Room Occupancy.
Anyway, my Brother In Law told me to do Reverse Mortgage and just enjoy life now...keep paying but when you want to retire RM. NO NO NO. First of all, I plan on sticking around a long time. Money could run out. BUT even more importantly, THE FLIPPING BANK WOULD END UP OWNING MY HOME. F THAT!
This little home of ours is my pride and joy, next to LML, of course. And Ernestine! Those two girls helped get me here...so off to make my breakfast, get to Sprouts, get to work and do this thing!

Quiet before the storm this am. Sipping my Vanilla Earl Grey tea. Walk dogs, meet friend outside of base to swim, yoga, walk dogs again and lunch. Then heat of the day packing packing packing. Possibility of finishing kitchen today. THIS WILL BE 3rd move in 3.5 YEARS. Including to Japan and back.
Positives to focus on: a fenced yard with a dog door for pups. I can be gone longer than 4 hours. A huge refrigerator compared to this tiny base housing refrigerator. I can freeze more soups! Close to a 1000 acre park for walking that has a ton of trees and shade. Closer to all of my friends.
Magic - do you think my sister who is so concerned I might stress out and gain weight back has called to see if I am doing ok?….

Carla - good for you getting those steps in! Sweet cantaloupe is the best. My mother use to cut up fresh cantaloupe in the summer. She also bought me Raineer (?) cherries the month of July. I just noticed they are gone from our grocery stores this month. 😢
Mihani - yay..the boss will be gone and less stress for you!
Trying to break up and distance myself from evening chocolate. 😂I am not having a lot but it is there keeping me company instead of a bowl of fruit. Maybe I will buy some watermelon or cantaloupe for a treat. Afternoon snacking due to packing and heat has been under control. I take time for lunch, a salad and then have an apple and pure almond butter for snacks. Plus lots of fluids. Behind in card making for aquarium stores. Obi

Great plan for paying off your home Nance. Agree with you about the reverse mortgage. Great to avoid if you can. No origin sticker left on the remaining half of the cantaloup. I'll keep an eye out next shop.
Donna, a fresh coat of light paint is perfect! Hopefully you are able to avoid moving for a while now if that is what you want. I love cherry season. It is always over too soon. We have 4 cherry trees and always buy from the store as well for as long as we can.

We have to cook our own meals this week while the Plantage people are on vacation. We made drunken noodles with veggies and tofu in a big vat. Enough for 3 or 4 days. It turned out good but I don't miss cooking and the clean up after.
We've been talking about retirement. It is so hard to determine how much we'll need. It depends on what we want to do with our time and where we want to live and how much we'll be travelling. So many unknowns at this point, but we're guestimating and aiming for 8 years from now.
To help us determine our retirement lifestyle, we're going to do some traveling to see where we might like to be or if we even want to move at all. We are thinking of checking out Eastern Canada, Florida, and Spain to start. Eclectic mix of options so far! All for different reasons & different lifestyles in mind. There are so many places to go as digital nomads but alas the dogs keep us where we are for now.
I did a 40 minute walk this morning at 2.8 mph. I will ramp up the speed and time as I go.

oh and Nanc, I was reading back and saw how you're switching to kale because of oxylates. It is a good reminder for me. It was a nasty shock a few years back when I read the list of foods high in oxylates and I was eating 3 of them in large quantities nearly daily: almonds, dried apricots, and spinach. I need to get back to kale too.0

Carla, I'm with you on the treadmill. I'm not breaking any speed records. I start out around 2.5 and after a few minutes I move it up between 2.8 and 3.2 (depending on how awake I feel haha!) for the remainder of my walk.
Got up a little earlier this morning so was able to get in 1.5 miles instead of my usual mile. I was short by about 400 steps last night after a sedentary day at the office so I jumped on the treadmill again. I have a good streak going of over 5,000 steps every day and need to keep it going.
Last day before the boss leaves. Yay! I have been putting in really long days all week and while I'm going in tomorrow for a while, I'm taking Sunday OFF.

Mihani, we have the same situation going on here regarding our mortgage. We got it locked in at such a low rate that the payments are much lower than they would be if we bought a less expensive place and needed a mortgage for it. Even paying it off more quickly just doesn't make sense since that money can make more in an investment than it costs to have borrowed in the mortgage.
It seems like lately everyone I am talking to is thinking about retirement and/or their finances right now.
We have a bunch of ripe peaches right now but they are not quite good enough to eat. I don't think it generally gets hot enough here to grow fantastic peaches, and like you, Nanc, I am picky about my fruit. I made some peach cobbler which was good but just to sweet for me. I'd rather have a delicious fresh peach.
Apples, anyone? Our pears are non existent this year but we have a thousand or so apples. I need to get out there and pick them for donation before they fall to the ground and we get a bunch of wasps on them.
Gearing up for another walk. Dinner will be leftover drunken noodles. And a confession: I had banana bread for breakfast. so good. moving on.

That's a really nice idea to donate the apples, Carla. And yeah, it was crazy when I was looking at condos recently and crunching numbers, even putting every cent of equity from my house into the down payment my monthly mortgage payments would be more on a new mortgage. Crazy. There's just no sense in moving when overall I love my house, it's just way more house than I need, so I'll stay put probably until I retire.
Made it through yesterday, met up with friends for a cocktail, got a good night's sleep. Getting ready to head to the office but not going to put in a full day. I need a break from that place.
Going to do a very simple couple weeks of potatoes and salads starting tomorrow. I have been stuck on the scale for a couple weeks and want to get it moving again.

Well, I lied and actually worked about 7 hours. But it was nice to get stuff done with nobody bugging me.
I am going to make black bean and tofu enchiladas tonight. I want something good and homemade and super easy to throw together. It's a recipe from the first Happy Herbivore cookbook. I am not that big a fan of her recipes most are so basic, and I got rid of the two follow up cookbooks a few years ago, but they were helpful when I first moved from vegetarian to vegan. I do like these enchiladas a lot and haven't made them in a few years. I got some of the Good Foods brand queso and some green onions for serving up.
Tomorrow I may do a little work from home and I may not. I need to do laundry and visit family, and take a nap. I've been working every weekend lately and miss my Sunday naps. Soooo looking forward to this week with the boss away to try to get caught up.

Same here with mortgage. Our loan is a 2.25% assumable VA loan. We could sell our house overnight BUT our next mortgage would be 2-3 times that rate. I fear we will never get out of San Antonio. Plus when Brooks retires next year, due to his cancers he will get a 100% VA disability rating and in Texas property taxes are waived. That is $1000 a month and hard to ignore.

I slept in until 6:30, have laundry going, had leftover enchilada for breakfast. I am going to work on a couple files that I brought home but knocking off by noon to run some errands before a quick visit with family. Tonight I want to cook up enough potatoes for a couple days.

Mornin' all... got all my household chores done yesterday and had a nice visit with family although it was short because I still had things to get done here at home. It was just nice to take a day out of the office. I did manage to mostly avoid working maybe put in two hours.

My vegan matzo brei...I use JUST EGG, 4 oz. Carton has 16 oz I think...3 oz works ok, too.
Heat pan, Add a lot of fresh, baby spinach, Add the Just Egg, keep it moving in the pan so it doesn't stick...I use a bit of avocado spray to start. Wet one sheet of matzo under the faucet...both sides, NOT SOAKING...just damp. Break into pieces, add into Just Egg and spinach...kinda turns into a fritata type of thing. Make sure all the Just Egg is cooked. DONE and enjoy.
I have eaten with a touch of jam on the side and without. I prefer without. It works, IMHO, because of the liquid JUST EGG...that is how you make authentic matzo brei, with scrambled eggs.
I have been without for several days...having oatmeal and I did end up finding a good concoction that I am happy with. HOWEVER, I still miss my matzo. -sigh-
Growing up, matzo with butter, that was IT for me. I think it's a Jewish thing. LOL Most people say it tastes like cardboard. NOT TO ME.
Yesterday, I was making my dinner (rice and sauteed broccoli) and I was making Lulu's dinner at the same time.
I have to turn her toppers into powder, or she will eat them whole and leave the rest of her kibble. Anyway, I had just served up my HOT broc and rice dish. Just about to add the kibble to Lulu's powdered INSTINCT toppers...and:
I added LULU's KIBBLE to MY dinner. DARN! And it was sooooooooooooooooo perfect. I usually just heat up the rice int he mic, cook the broc separately...but this time, I added the rice to the broc and added 1 T maple syrup, 1 tsp roasted sesame oil, 1 T tarmari/low sod...oh well, I will try again tonight.
I did end up with a kale salad, it did not turn out great. I winged it and nope, I need to follow a recipe.

I just finished my walk and then had a shower. I treated myself to a new sports bra since I've been very consistent with my walking and needed a new one anyway. It works good and isn't too tight so I can actually breathe. Important while exercising!
I think Joe and I are going to cut our meal plan in half, and start dinner with a salad. There are often salads in the meal plan but it isn't the 'main dish' most of time. We will try that out next week as it is too late to change our order for this week.
Time to get back to work. Hope everyone's week is off to a good start!

Made a repeat dinner tonight...this time my dinner was ONLY rice and broc, NO kibble! LOL
It is so tasty, made two portions. One for tomorrow night. Will make it for work week. I make a huge batch of rice...the broc is cheap ... only have to go across the street to pick up more...and it's good and firm...so no trips to Sprouts, for expensive and crappy broc. Yay, Fry's Market.Dentist today (cleaning)...implant is going great...dentist was pleased...and said it is not usual for implant to be put in same time as extraction...YOU are a HEALTHY GIRL! Plant Stars Rock!

Good idea with the plantage meals, Carla. I am not buying much from the place I was going lately. I just prefer fresh and simple. Come winter and cold weather I'll probably want the richer foods again though.

Yesterday flew by so fast which made me sad. I have so much on my hope to get done this week list.
Started the veggies and potatoes plan yesterday. It was fine. I like potatoes so it's pretty easy to stick with for a week or so, which is enough to break through plateaus.

back to Matzo brei...miss the spinach. I have never had problems with spinach...in fact, it keeps me very regular, more so than any other veg.

My heel is bugging me today, so I decided to do an arms workout rather than pushing it. I got a new-to-me VR workout. Ragnorak ... drumming to the beat of songs on a Viking ship. The better you do, the faster your buddies on the ship row. Tons of fun. I get more zone minutes out of the VR workouts but less steps than walking.
Joe and I looked into the Dr Fuhrman retreat. It would be wonderful but it is SO expensive. We're going to get back on track on our own for now, but we're keeping it in mind. They recommend spending at least 2 months there! We'd have to figure out what to do about the dogs. My cousin can't be here for that long.
