THURSDAY! - Avocado Toast, with Paprika, Lemon Juice, Olive Oil, and Topped with Olive Oil Fried Grape Tomatoes, & Egg, with Greens & a Drizzle of Balsamic Vinegar
What is becoming a staple for me - Avocado Toast w/ Olive-oil Fried Tomatoes and Eggs - with a twist! Topped with Greens, and a drizzle of Balsamic Vinegar .- Heat a skillet on medium heat, while that's heating,
- wash 13 Wild Wonders Grape Tomatoes; then add
- a tsp or so of Olive Oil to heated pan, then add the washed Wild Wonders Medley grape tomatoes; let them cook/char while you ...
- toast 1 slice of Dave's Killer Bread Good Seed (I used Thin-Sliced yellow stripe), and also mix up ...
- 1/2 avocado
- 1 tbsp lemon juice
- 1/2 tbsp olive oil
- 1/2 tbsp smoked paprika
- Mix the avocado mixture well, leaving some chunks, and not making it all smooth; then ...
- flip over the tomatoes to let the other side cook/char; push them to the side, and add to the pan ...
- 1 egg, with a
- generous sprinkling of organic ground black pepper; while that begins to cook ...
- spread the avocado mixture on top of the toasted bread; then ...
- turn the heat off the pan; flip the egg ... finish cooking until desire doneness; top the avocado toast with the fried egg, then on top of that, add ...

Picking myself up from the barren greens desert that was my Friday π¬ - I repeated this (now) staple dish for us - Greens x 2 ! (avocado, and baby spinach/spring mix).
Considering a salad for dinner, but I'm not locked in on it yet ;-).

I went shopping today in the pouring rain, and I have some new greens for more smoothies this week.
@SafariGalNYC I found the Cocoa nibs⦠wow reading the label was impressive⦠I ate some right out of the bag driving back home to the farm⦠I love them

We ate out for brunch today. I had a smoked salmon salad: lettuce, cucumber, tomato, pepper, avocado, egg, chickpeas, red onion, seaweed, langoΕ‘ and sour cream herb dressing.
In the evening, I had pasta salad with tuna, sweetcorn, spring onion, kidney beans and a little mayonnaise.
Then I had my daily drink of tonic water, ginger shot, turmeric and frozen fruit, which was raspberries today.

I loooove the beautiful food art, guys !! So many colors, so delicious!
All three of our kitties went to the vet at dinnertime, they had to get vaccinations updated, for boarding, while we're away. All three are rescues. Fat Ralphie, who was 22.5#s and had crystals in his urine, and a blockage, had his first 'Senior' checkup today. My daughter is his vet, she's also the one who rescued him, I told her he'd been vomiting recently, so she did an ultrasound - his bladder was very cloudy, and they spun up a urine sample there, instead of waiting to send it out to IDEXX, he is making crystals again :-(. He'd gotten down to 6.1kg about a year and a half ago, he's up to 7.9 kg today. We have to be much MUCH more careful with feeding him :-(. She's waiting for urine samples to come back to see if he has an infection, and needs an antibiotic. 𧑠daughter π§‘.
The little guys - brothers (names are Hoolie & Chance), almost 3 years old, were born under her stoop. She rescued them, too. They're doing fine. . We got lodging booked in Copenhagen! And for the 1st night in Istanbul. Next 5 nights in Istanbul will be with daughter, but we still need to book lodging for the last 4 nights in Istanbul, still. And make pet ressies.

Had a bit too much coffee today. (Itβs only 9:30am) π΅βπ«
So made a shake with lots of greens, matcha and acai. No more coffee for the day! (Matcha does have a bit of caffeine but doesnβt make me jitteryβ and itβs green and filled with antioxidants soβ¦ π₯ )
Supplemented my Smoked salmon sandwich with microgreens, avocado, butter lettuce, endive, radish and cucumber.

I'll be having avocado toast w/ and egg, fried cherry tomatoes, and baby spinach & mixed greens for a late lunch in a couple hours Still sipping on protein tea (Orgain Protein Powder, nonfat dry milk powder, cylon cinnamon, tsp molasses, & green tea). I am very caffeine sensitive, so I only use 1 teabag per day - tho I make several cups of tea with the one teabag ;-).

I gotta tell you - I don't really love avocados! I always gave my guac to my husband or daughter whenever we got Mexican food. This avocado toast thing is new for me, it was a suggested 'break your fast' meal for Day 6 after a 5-day Prolon FMD fast.
Well, one whole avocado makes 2 toasts, and it's mixed with a tablespoon each of olive oil, lemon juice, and smoked paprika, so it doesn't taste 'avocado-y' to me, lol ! And, surprisingly enough (to me), I'm really starting to dig it! Especially with cooked tomatoes

Well I skipped the Avocado tonight.
Instead I tried to tackle frozen shrimp for the first time.
Getting the shells off was fun lol
I think I cooked them too long in the air fryer.
I did add
Baby spinach
Celery
And tomatoe dried dressing and franks hot sauce.
Having greens every day is all new to meβ¦. I bet thereβs some great benefits after a while.

Yessss, me too, on the greens and the group! Thank you SO much to @SafariGalNYC for this great idea, and the gentle reminders throughout the summer, to finally get it going!
Looking forward to labs in Nov, I bet I'll see improvements! After my trip, I'm diving into the smoothies. I just have not had a chance, we're doing a reorganization and stuff is eevverrrywhere around here! I can hardly breathe, lol'

Morning all! π
Early morning - made scrambled eggs with microgreens, shallots, garlic, herbs. Placed in a bed of red butter lettuce and flax toast. (Itβs hiding under there.)
Greens shake - tried something new this morning:
Matcha, cucumber, baby spinach, baby kale, a few carrots for a touch of sweet. Collagen for protein. π₯¬ π₯ π΅ π₯
It came out so fresh and fragrant!! @dannytrees1 - I think I have you to thank for the cucumber in shake idea!
The photo doesnβt really capture the pretty light green color. I had to share it next to with my hydrangeas to show the color.
