Good morning, Mary! LOVE ..... !! I'm so excited about this, I absolutely need to focus on Getting My GREENS ! I got so much inspiration and ideas from your smoothies when we did that May Green Smoothie challenge with Tatilove. Even tho I never made it past the salads stage, into the smoothies stage, lol !
I made a salad on Sat and Mon (yesterday) ... missed Sun, dang it. Will post photos and ingredients later today!

SATURDAY (July 13 ... )! - Roasted Veggies w/ Walnuts.
This is a recipe from the Prolon Transition Day Guide, for Day 6, following their 5-day FMD Fast. It was soooooo big, I only ate part of it, and ate the leftovers a few days later ... heh- Orange Bell Pepper ยฝ small bell pepper cut into cubes
- Red Bell Pepper ยฝ small bell pepper cut into cubes
- Garlic 2 cloves, minced
- Portabella Mushrooms 2oz, cut in halves
- Red Onion ยผ red onion cut into cubes
- Zucchini 1, sliced thick
- Summer Squash ยฝ, slicked thick
- Fresh Basil 1 tbsp, snipped
- Walnuts ยผ cup, chopped
- Olive Oil 1 tbsp
- Balsamic Vinegar 1 tsp
- Sea Salt 1/8 tsp
- Enjoy~!

SATURDAY! - Peaches, Pecans, & Feta Salad, w/ Honey & Olive Oil Dressing.
This is a recipe someone in my Prolon 5-day FMD (Fasting-Mimicking Diet) Support Group posted, that she ate on her Day 6/Transition Day from the Fast. It's soooooo easy, and sooooooooo good!- Take the fruit of 1 whole peach (she used white peaches, I've tried it with both - this is yellow peaches, hubby says white peaches seem sweeter ), cut into slices (or cubes), put in the air-fryer at 400F for 10 mins, along with 1/4 cup pecans, 1 tbsp Blue Agave Syrup, Monkfruit Syrup, Molasses, or whatever sweetener you like, and 1/4 tsp Ceylon Cinnamon.
- While that's cooking, wash 2 cups of greens (whatever you like), add to a bowl, along w/ 1oz Feta Cheese, 1 tbsp honey, and 1 tbsp olive oil. Toss together. (This was made with Vegan Feta, but you could use Regular Feta, too )
- When the peaches/pecans are done, toss them together a bit, to disperse the heat, and blend the syrup onto the peaches and pecans, add mixture on top of greens.
- Enjoy~!

- 1/2 z Vegan Feta
- 1 z Crumbled (not vegan) Feta
- 1/4 c Shelled Walnuts
- 2 Dried Pitted Dates
- 2tbsp Raw Pumpkin Seeds
- 2tbsp Ken's Fat Free Raspberry Pecan Dressing

TUESDAY! - Avocado Toast, with Paprika, Lemon Juice, Olive Oil, and Topped with Olive Oil Fried Grape Tomatoes, & EggsThis is another Prolon Transition Day Day 6 post-5day FMD Diet Recipe - well, their recipe is without the tomatoes & eggs, and a sprinkling of red pepper flakes rather than a 1/2 tbsp of smoked paprika . I don't even like avocados very much, but oh my heck, this tastes sooooo amazing as a 1st meal to break your fast, after the 5-day FMD fast ๐. I like it so much, it's been a regular part of my menu since my first FMD Round in early May.471 calories
Hubby doesn't care for me making the avocado mixture red (lol I use soooo much paprika), so when he's joining me, I add my paprika after it's already on the toast; he adds salt to his, b/c he likes his with olive oil, lemon juice and sea salt ;-). ๐ค
Normally I have just one slice of toast, and not always with an egg (but yes, always with tomatoes), on regular thickness Dave's Killer bread, but today we had thin-sliced Dave's in the fridge, and I was pretty hungry, so I had 2 slices of Dave's thin-sliced Good Seed (yellow stripe) bread, with 2 fried eggs. Same amount of avocado and tomatoes, tho!- Heat a skillet on medium heat, while that's heating,
- wash 13 Wild Wonders Grape Tomatoes; then add
- a tsp or so of Olive Oil to heated pan, then add the washed Wild Wonders Medley grape tomatoes; let them cook/char while you ...

I didn't take any photos but I had a homemade salmon fishcakes with a salad of cherry tomatoes, cucumber, spring onion and jalapeno with yoghurt. In the evening, I had Aloo Gobi, so potatoes and cauliflower in a tomato based curry sauce.

Got some fresh veggies today.
(I thought I'd try to remove the background but it looks a bit odd ๐ )
Evening meal, made by my hubby: salmon fishcake with yoghurt, hummus, coleslaw, spinach, cucumber, spring onion, cherry tomatoes, jalapenos and hemp seed oil dressing.
I had yoghurt with oats, raspberries and blueberries for breakfast.
No veggies at lunchtime though.
