    Welcome home SG! Gosh, I love all your travels. Exciting! I mean, not for me, bc I'd be worn out, lol, but I love the vicarious thrill of it :D.

    Danny, high recommend on the avocado toast, especially with a whole tomato charred in the pan with an olive oil cooked egg :)!

    Wow @mkksemail - you are inspiring! I'm shopping tomorrow for my grees and going to have the avocado toast for breakfast! Yum! I have a huge Florida avocado ready to eat. When I go to Sam's club, I buy a bag with 6 of them. I make sure they are very firm. Then store them behind the toaster on the counter for a couple days. When they feel ready to eat, they get moved to the fridge and keep for days. They always seem to stay nice. I eat one a day.
    I need to start adding in broccoli again but it may be too gassy for me(

    Ohhh, @aalley5 , good tip on the avocados ! They seem to have a very short 'ripe' window, lol ... I didn't try putting them in the fridge once they get there. I will try that next week. We used up the last avocado this morning, and didn't buy any new ones when we went shopping on Sunday ...


    Monday Greens! Avocado toast, and a smoothie ... Starting the week off strong, tick mark for all three categories :D!

    I had avocado toast this morning :D. No picture today, I figured you guys are probably sick of pictures of avocado toast by now, heh.

    I *did* make a smoothie tho!! Yayyyyy (Hubby said it was really good, too ... ) It's been a couple weeks since I made one 😬 ... and I forgot to put the carrot in 🥕 🤦‍♀️. Ingredients:
    • Organic Spring Mix
    • Mango
    • Kiwi
    • Berry Medley Mix (frozen)
    • Pure Peanut Powder
    • Unsweetened Vanilla Oat Mil
    • A bit of water, to 'clean' out the blender ...

    Plus, NOT in the blender, but on the side ;-):
    • Merkt's Swiss Almond Cheese Spread,
    • Brad's Sea Salt Cauliflower Crackers,
    • Walnuts

    Made some toasted almond wraps w wild smoked salmon &
    🥬 red leaf lettuce
    🥑 avocado

    💚Celery juice. 🧃 I love how many minerals are in celery juice. I’ve tried making my own.. but this brand tastes great. Just celery and lemon.
