I just put veggies in the oven to roast for tonight, and tomorrow. I added carrots to the broccoli, so half of these carrots will be for tomorrow, and a third of these broccoli will be for tomorrow, too. The half cup of extra broccoli here, plus the extra half cup from yesterday will make a full serving of broccoli to have tomorrow, with my 1/3 leftover chicken from last night, plus the 1/3 leftover chicken that will be put in the fridge from tonight's chicken.
I have a bit of a cold today; EatingWell pushed out a Fall Soup Quiz earlier today that really sounds absolutely perfect for my mood, and the day (it's drizzling all day up here in Maine). If I didn't already have the next couple days dinners planned and started, I'd make the soup that the quiz produced for me βΊ. It's what looks like a delicious White Bean & Pasta soup recipe. It also has tomatoes and spinach and some other stuff in it. I'm going to make it either this weekend (if hubby wants some), or early next week after he leaves for 4 weeks in Wisconsin (if he doesn't). I put the recipe in the group in a separate thread .
Edit! Veggies roasted, covered, for an hour at 425F. I lowered the temp to 350F, and added the chicken. Cook for another hour-ish ...
Edit again! Chicken and veggies are ready - I added 4 tbsps of lemon juice for taste, and for Vitamin C for my cold π€§:
2/3 of the chicken, and 1/2 of the veggies, plated for tonight's dinner:
