It was. I *may* have to sneak another piece after dinner.

Basically, It's Trader Joe's Pumpkin Bread & Muffin mix, but instead of oil I substituted with a Mott's Peach Applesauce cup and I added some mini semi-sweet chocolate chips.

It's really good. Ended up 197 calories a piece and there's 12 pieces.

Even by itself it's really good. I just like to make it more exciting :)

    That looks awesome, Jen.

I finished my macarons today. One was vanilla coconut-- I couldn't really taste the coconut, which was fine with me. The other one was, I think, orange with thyme. It was an interesting flavor combination. Not bad, just interesting.

today i stopped at a roadside ice cream stand on the way back from class after seeing a "pumpkin milkshakes" sign. I ended up getting a scoop of their pumpkin ice cream with a scoop of cinnamon ice cream on top. It was damn good. I might have to go back next week & try the milkshake.

So I tried one of the dozens of pumpkin and fall-themed treats available at Trader Joe's -- this is TJ's "Mini Ginger Pumpkin Ice Cream Mouthfuls." Nice but nothing spectacular; I do like gingerbread and the combo with pumpkin ice cream is nice (but again, nothing too special).

One thing that really resonated though for some reason, was the color scheme. It reminded me of something that I had trouble placing, but was familiar and also top of mind . . .

    About time you found us!

The fudge came out really good and was a very simple condensed milk fudge recipe added baileys and vanilla, split into 3 equal portions, 1 layer with no coloring let chill for 15 minutes, color the 2nd orange pour that on top chill for 15 mins, 3rd yellow chill for a few hours and you can add candy corns to the top (not really needed but looked nice)

    No caramel macaroons?

There was a caramel one that I had the other day. It was really good. But the pistachio is still my favorite.
