    That salad does sound delicious!!!

    I've been eating a salad for lunch lately that I have found very satisfying and so good!

    romaine - 2 cups
    turkey pepperoni - 8 pieces, cut into quarters
    light string cheese - 2 pieces sliced into small pieces
    roasted sunflower seeds - tbsp
    kraft greek vinagrette -

    Holy crap it's so stinking good. It reminds me of the salads you get when you go to italian restaurants.

    Whole thing is 260 calories - plus you have the protein in it and the fats from the dressing. I recommend :)

    A tree's guide to corn tortillas (Dedicated to Darwin:)

    I use Bob's Redmill Masa.

    Please note: masa is not the same as corn meal, and it's treated with frickin' calcium type lime not fruit type lime. I want to shake people when they post "it already has lime in it."

    I follow the recipe proportions on the bag which are:

    2c Masa
    1.5c Hot water

    You can add other things, salt (I can't tell a difference,) lime juice, spices, etc. Some people use stock instead of water.

    You'll also want:
    plastic wrap
    tea towels
    HIIT timer (I use an app on my phone)
    A quart size ziploc cut in half. (To line your tortilla press)

    I guess the hot water thing is important, but I've never made it without so who knows. I run the sink on hot for a while and use that.

    -Wipe down your counters
    -Put masa in a bowl.
    -add 1.5c of hot water, and keep another .5c on reserve.
    -Mix as well as you can in the bowl then turn out onto the counter.
    -Knead for a while until everything comes together. You want the masa to feel like slightly wet play dough. Add more water or masa as needed. It is normal for the mixture to try to stick to the counter. This doesn't mean it is too wet. If you can push your finger in a bit and it comes away clean you're in the clear. Eventually you'll have a nice ball of dough.
    -Wrap the dough in plastic wrap and cover with a tea towel.
    -Let rest for 30 minutes.

    -At about 5 minutes to go I start to heat my griddle. For best results use cast iron. For fastest results use an electric pancake griddle.
    -After the 30 minutes are up I roll my dough into about 15 balls. I put them on the plastic wrap, and cover with a tea towel.
    - I set up a plate with a tea towel for my "on deck" tortilla, and another tea towel in my tortilla warmer for finished tortillas. If you don't have a warmer then just have an extra tea towel handy to cover your cooked tortillas.
    - I setup my HIIT timer for rounds of 45 seconds.
    -Press your first tortilla by placing the ball of dough on a piece of ziploc on the bottom of the tortilla press. The ball should be slightly off center, and placed more toward the hinge side of the press. Place the other half of the ziploc on top of the ball. Close the top of the tortilla press, and then push down on the handle. Try to only "press" once, but until you get the hang of it no big.
    -Remove your tortilla by peeling the plastic- NOT the tortilla.
    -Put the tortilla on the griddle, and start your HITT timer.
    -You cook the tortilla on 3 sides. Everything I've read says cook 30-60 seconds per side. Thus I settled on 45 seconds. It's just a guideline. If you go a little early or late things will be fine.
    -When you flip the tortilla for the 3rd time press down with your spatula (easier,) or a wet paper towel (prettier) and the tortilla will flair up and fill with air. This traps steam, and helps cook the tortilla.
    -When you remove the tortilla from the griddle cover it with a tea towel. This helps trap more steam, and helps soften the tortilla. You should wait at least 2-3 minutes before eating one from the stack.
    While on side 1 I:
    -Press another tortilla, and put it on the "on deck" plate. Cover with a tea towel.
    -Press another tortilla, and leave it in the plastic.
    -Don't press more than this at a time or they will dry out too much.
    -I use the timer so I can actually do other things while my tortillas are cooking instead of standing over them and staring. Chopping veg, preparing the rest of dinner, etc.

    ETA: I've read many people find these difficult at first. I read a ton of recipe reviews like the nerd I am, and used all the tips presented. Which I have compiled here for the benefit of my strong lady friends. Hopefully this makes it painless for you all as well should you decide to make them:happy:

    That salad does sound amazing - NO LETTUCE! I might chop up stiff bitter lettuces in there like frisee in there too but regular lettuce and I...we're not buddies.

    Lettuce. Peh. Also nick hates tomato so I'll have to sub that for something. Hmm. He also doesn't like black beans but, too bad.

    I would like to make my own tortillas, except, I don't, because it sounds like a lot of effort. I like it when restaurants make them FOR me though.

    Tameko, what's with the lettuce hate?

    Kel and I (that would be the husband-person) have a huge-*kitten* garden in our backyard and last year we did a ton of lettuce. Holy crap. It was so damn good that I have a hard time eating lettuce that I didn't grow myself, it pales in comparison. It was so awesome that the kidlets ate salads all summer long. I did some sort of blend that had some of the bitterish lettuces in there, so you might have liked it.

    Damn. I'm hungry.

    I like lettuce sometimes, specifically, if its flavorful and i can dip it in something vinegary, but I do not like shoveling it into my mouth with a fork. I enjoy it on occassion when I can take the dry lettuce and fold it up and dip it into a little dressing and eat it. But even then, its something I only want a little of. After that its just boring. And salads have really burned me on lettuce because I eat all the good bits and then there's just this PILE of lettuce and I think "what is this, is this even food?"

    I seem to get bored with food easily. I tried to go on a mega cupcake binge once because I was having a super bad day. Bought a big square of chocolate cake with frosting (like the sell at the grocery store) and a container with 12 minicupcakes. Had 3 mini cupcakes and a third of the cake square and then I was tired of it. Oh and a few spoonfuls of rocky road.

    @Darwin....I tried the pork in the oven the night before last and omg it was sooooo effing good! I didn't have rosemary though so I just used garlic, salt, and pepper! Yummo! It did smoke a lot though from the EVOO....I wonder if there is another oil that you could use that stands the higher heat better?


    @Sarah....Did a beef roast on the stove last night (I think you had mentioned doing it with pork, but I took your idea and ran with it!) and that was super awesome too! Threw some baby red potato's in with it towards the end and it was deadly!

    yeah mine usually smokes too, evoo has lower smoke point than most oils. You could switch to a canola oil I think that has a higher smoke point than evoo. I just keep evoo around generally. Or you could put the oven at a lower temperature as well. I highly recommend with the rosemary when you get a chance!!! So worth it!

    I'm making taco cups tonight using wonton wrappers - seriously love those little suckers. You can stick anything in them (that's what she said!) and they taste so effin' good! I'll admit, I'm totally a manwich fan and I'll do little manwich cups with some cheese melted on top and I'm in heaven. Doesn't take much ladies.....

    I'm totaly a cheap date.

    Hmm I've been looking for something to do with my leftover wontons. Beef and cheese sounds pretty good. I guess you could chop some veggies to add to it for fiber.

    Where do you find wonton wrappers? I usually just make taco salad but maybe my kid would be more excited about little cupcake type thingys lol

    It works best if you have a cupcake tin - You line the cupcake tin with the wonton wrapper and stuff it with whatever. you could do veggies or whatever - beans. Go nuts. It's also a good way to indulge in lasagna without all the lasagna calories.


    Vegas - at my store they have it in the produce sections, generally by the 'shrooms.

    Bake them till their toasty brown, let them sit a few minutes. You might need to run a knife around the outside if they are sticking.

    At my store, you can find them in the produce section...by the tofu and stuff. I don't know what your crazy Canadian stores have. :wink:

    My kids would love those wonton tacos/whatever the frell I put in there. I don't usually cook "kid-friendly" meals--my kids are pretty good at eating a bit of what I put in front of them, but if it's kid-friendly and mom-friendly, it's a win-win.

    We're doing chicken and beef fajitas either on Thursday or Friday. I make a simple and good marinade that I'll use for both proteins. It has:
    Salsa
    Garlic
    Italian Salad Dressing
    Lime Juice
    Salt

    Just mix everything up until it looks "marinadeish" and cover the protein with it--I usually stick mine in zipock bags for a day or two. If I don't have the salad dressing, I'll just approximate it with oil, vinegar, herbs/spices. I like to put fresh jalapeno in it if the kids aren't eating it.

    Yeah, I think we have them and I'm going to check it out. Maybe a lasagna one would be super tasty! Would anyone happen to know where I could find a recipe for those?

    I just realized that I come to this thread evey time there is a new post - like food porn.

    Re: wonton wrappers. They make nice little pizza bowls too! The Hungry Girl Cookbook that the MIL got me for Christmas has tons of wonton ideas.

    Who has a tried and tested recipe for Swordfish? I really like it, but I am alway at a loss of how to make it. I usually marinade it in soy sauce, EVOO, cayanne pepper, lemon, garlic, and ginger and black pepper and grill. I'd like to try something new.

    Anyways, use the wonton wrappers...place a couple pieces of (turkey) pepperoni and some mozzarella cheese and close up (or add some veggies to make it sorta healthy). Place on greased cookie sheet, I usually just spray some canola cooking spray on the pan...and then spray some on the wrappers and bake until golden! Then you can dip in marinara sauce :)

    dude i'm totally making those.....I have all the ingrediets. I could eat pizza every day.

    Also - Ham, yes, Ham. It comes from little piggies and used to go "oink oink"

    Not to totally dis on the canadian ham product that is small and circular and might be called "bacon" in some circles....

    and those circles would be incorrect.....

    cause man I love ham.

    I made ham for thanksgiving I love it so much. and a turkey that i used 2 lbs of butter with.
