Rosemary Seared Lamb Chops and Steamed Cauliflower

Ingredients:
1.4 pound rack of lamb
1 fist of garlic, peeled and chopped
1/4 cup rosemary, leaves removed from stems
1-2 tablespoons of coconut oil
Salt and pepper to taste

Process:
Preheat oven to bake at 400.
In a mini food processor, pulse the rosemary and garlic until finely minced.
In a small skillet, saute the rosemary and garlic in 1 teaspoon of coconut oil until soft. Set aside.
Rinse rack of lamb under cool water.
Cut rack of lamb into individual chops.
Pat dry on either side with a paper towel.
Heat an oven save skilled over medium high heat, adding 1 tablespoon of coconut oil to the pan.
Sprinkle both sides of the chops with salt and pepper.
Sear chops 2 minutes a side.
Top chops with garlic and rosemary, and place in the oven.
Bake for 2 minutes, remove from oven and serve.

    Meatzza

    Prep Time: 10 minutes
    Bake Time: 20 minutes
    Serves: 2-4

    Crust

    1 lb. Ground Pastured Pork, 80% Lean
    1 Tbsp. Penzey’s Italian Sausage Seasoning
    1 Large Organic Egg
    Sauce

    14.5 oz. Can Muir Glen Organic Diced Tomatoes with Basil and Garlic
    2 Tbsp. Bionaturae Organic Tomato Paste
    1/2 tsp. Celtic Sea Salt
    1/4 tsp. Coarse Ground Black Pepper
    1/2 tsp. Dried Basil
    1/4 tsp. Dried Oregano
    Toppings

    Organic Red, Yellow, Green Bell Pepper
    Organic Yellow Onion
    Black Olives
    Applegate Naturals Uncured Pepperoni
    Bella Vita Sun Dried Tomatoes
    Mt. Sterling Co-Op Creamery Raw Goat Cheese
    Directions

    Throw all sauce ingredients into high speed blender and blend on high for one minute.
    Pour sauce into saucepan, bring to boil then reduce heat to simmer.
    With hands mix together pork, egg and Italian sausage seasoning.
    Line a sheet pan with parchment and then pat sausage into desired shape about 1/4″ thick.
    Bake at 450°F for 10 minutes.
    While crust is baking, dice up veggies and shred cheese.
    Top cooked crust with sauce, veggies and cheese, return to oven for 10 minutes.
    Slice and serve, use any remaining sauce for dipping.

    Pumpkin cinammon sludge. That's a whole kg (1000g) of pumpkin, a tad bit of cinnamon and stevia, left to chill in the freezer for a few hours. Truth be told... that's only half of it. I ate the other half while mulching it up - it's too damn tasty, hot, to cold.

    Goat steaks and baked potato, all coated in a homemade goat-feta gravy, because I felt like being ironic.

    please please tell me how you made this! i really want to start cooking with organ meats but i just don't know where to start. i made steak and kidney pie not too long ago, but i didn't marinade the kidneys long enough :cry:

    Like potatoes, it's considered a "safe starch". Whether you choose to have t or not, I guess, is up to you.

    Sure. :)

    You will need:
    -Bacon (at least two strips)
    -Potato (of your preference)
    -Ox heart (cow)
    -Ox liver (cow)
    -Assorted vegetables (mushrooms, capsicum, broccoli, carrots, nori wraps)
    -Tomatoes (canned or whole)
    -Spices of choice (Paprika/Cumin/Tumeric/Etc)

    Preparing the heart and liver:
    -This deserves a little section of it's own. Basically, get the heart and slice all the fat off it. Why? Because it looks gross and adds unnecessary chew factor to the meal. Bleh. Then, slice the heart into thin strips - then, slice the strips into cubes. Do the same with the liver - thin strips, then cubes. Place both the liver and heart chunks into a bowl and mulch together.
    -Note that the heart is a lot like a steak in texture, whereas the liver is a lot more... Squelchy. When mulching together, keep that in mind.
    -If you have a meat grinder, then I'm jealous. Use tha, instead.

    1: Slice your bacon strips into pieces, then lay them out in a pan and leave to fry.
    2: Slice your potato(s) into very thin crisps and lay upon a baking tray. Garnish with a seasoning of your choice (I use garlic pepper and salt) and place in the oven at 180 degrees Celsius (I think 350 Fahrenheit, not too sure)
    3: Now a good put of bacon grease is bubbling in the pan, pour your heart/liver mulch on top of it. Stir, making sure all of it gets to taste the heat.
    4; Once a good deal of the mix is browned, pour in your canned tomatoes. The meat will now cook a lot slower. Leave it to simmer for a bit.
    5:Whilst simmering, slice up your veggies - mushroom, carrots, broccoli - whatever, doesn't matter. Try to get a lot of 'em, because they add a good deal of bulk to your meal.
    6: When veggies are sliced, pour them into the pan and stir. Mix it in nicely so the meat/veggies are balanced throughout the pan - you don't want to have one serving meat, half serving meat tasting veggies. That would be weird, and disappointing for whoever received the latter dish.
    7: While stirring, add in your spices. Try not to add anything to spicy... It can really ruin the taste. My favourites are smoked paprika, cumin and Tumeric.
    8: WHOA. Better check on your chips. Srsly, you should have been keeping an eye on them throughout the whole process; they only take about 15-20 minutes to bake. Take them out of the oven and distribute onto a plate(s).
    9: Once your satisfied the mixture is complete, spoon out your desired serving (for me, all of it :D) on top of the chips. Ay leftovers can be stored in a Tupperware in the fridge - assuming some are left over.
    10: Enjoy! :D

    That's all there is to it, really. If you eat dairy, put some cheese on top and microwave it to get it all nice and melty. I also love to top it with Greek yoghurt, guacamole and salsa... Because nachos just isn't nachos without guac and salsa. ^_^

    GOOD IDEA! you should start a blog.... I need to take better pics of my food with my regular camera instead of just my phone.
