    CHicken taco chili

I made this the other night and it was a huge hit and so easy to do!

    4 chicken breasts
can of reduced sodium black beans
can of reduced sodium kidney beans
2 cans of diced tomatoes with green chilies
1 small can of tomato sauce
1 package of reduced sodium taco seasoning
    1tbsp cumin, 1tbsp chili powder

stir all together in crockpot and cook on low for 10 hours or high for 6 hours. Take chicken out 30 minutes before done and shred and stick back in crockpot.

    1 Package Taco Seasoning

    Directions
Layer chicken in bottom of crock pot. Add the rest of the ingredients in the order written. Do not stir. Cook on low 7-8 hours. Take out chicken and shred. I'm making this tonight!

So I made this and I would change a few things....first of all one large can of diced tomatoes should be used and not drained. All other cans of beans should be drained. I also used fresh chilies and added jalapenos which cooked up nice. All in all it was OK not great but good for a meal.

Roasted chicken in a slow cooker

1 chicken, rinsed and patted dry
seasoning- use whatever you like - I usually use lemon pepper and garlic salt, and sometimes get more creative. Today I used a little pepper, onion powder, garlic salt, and paprika.
season your chicken- in the cavity, and on the outside, place in the slow cooker breast side up
I usually drizzle a little EVOO on the chicken, and maybe give a brief rub
    1/2 cup of white wine

(on the liquid side- I tried the recipe with 1 cup of water, then changed it to 1/2 c of white wine, 1/2 cup of water, then just went a heaping 1/2 cup of white wine, and add water if I need to).

Cook in slow cooker on high for 1 hour, then on low 6-8 hours, until chicken is done- this will depend on how big the bird is, and your slow cooker.

***I started a thread in October - it has a TON of Slow Cooker recipes on there- it rolled over twice, so you might have to find #3, but def take a look at the recipes in the first 2 sets, they're awesome!

Wow!! Will have to try this. I would like to add vegetables too.

    Herb Crusted Beef Roast
    Make a paste with
1/2 cup dijon or brown mustard
    3 cloves garlic
    1 tsp crushed coriander seed
    1 tsp dried thyme
black pepper and sea salt (personal preference on these)
    fresh nutmeg

Rub the paste all over the roast. Put it in a ziplock bag and refrigerate over night . Cook on low 8-10 hours.
Notes** You could brown it before you put it in the slow cooker. It looks prettier that way but I just throw it in the pot. I'm more concerned with taste.
You could also use any spices you prefer. This was just my latest concoction.
Last time I did it in the pressure cooker and OMGosh! It was sooooo good.

Anyone have any dinner ideas that don't involve chicken? Almost all of the posts are for chicken recipes. How about something "other"?

    Chipotle Pork Tenderloin

    4 Tbls Chipotle seasoning
1 jar of sugar-free rasberry preserves
    2 Tbls fresh chopped cilantro

I tried this recipe with 1 pork tenderloin. I kept it in the crockpot for low for 5 hours. It tasted fantastic but it was all dried out. Fortunately there was enough liquid left in the crockpot to use as a sauce to pour over the pork to kind of save it. Next time I will try 3-4 hours on low and keep checking it.

I have a 4qt crockpot and I'm wondering if 4-6 would be OK if Idouble the recipe.

Try a pressure cooker... it cooks fast and pushes moisture into the meat by "steam cooking" it.

Also wondering if maybe the original poster used a LIQUID chipotle seasoning instead of powdered... more moisture? Which did you try?

Yesterday I put a roast in the crock with a packet of mushroom gravy and a packet of beef gravy, water, Mrs Dash, and carrots cut up small and let it cook 9 hours while I was at the museum . Delicious! Tonight roast beef sandwich! Yum!

    Crock Pot chicken stew
    2-3 boneless chicken breasts
    1 box chicken broth
    1 can diced tomatoes large
1 package frozen vegetables (like soup mix)
    1/2 package frozen onions..peppers
    1/2 cup brown rice
    1/2 package taco seasoning
You can also add red potatoes
Cook for 6 hours on high
I first put chicken broth and rice then add all other ingredients
I cut each chicken breast in 3rds..when its done I scoop out and cut into smaller pieces
    Also use some salt pepper
    About 120 calories per cup
