I made paleo/primal fried chicken yesterday. Chicken thighs coated with almond flour, egg white, paprika, salt and pepper, then fried in coconut oil and baked for 10 minutes. The moistest, yummiest chicken ever.
This doesn't look very appetizing but it's the makings of my shrimp, spicy sausage, kale and butternut squash soup.

jennaworksout recipe for Spicy Chicken Stuffed Peppers
1 onion
2 garlic cloves
1/2 cup coconut milk
350 grams of skinless boneless chicken thighs diced
3 large peppers
1/2 tsp of smoked paprika
1 chili (de seeded)
1 cup canned tomatoes
handful of raw mix nuts (i used almonds, macadamias, and pistachios)
1 tbsp coconut oil
Blend onion, garlic and chili until smooth. Heat oil in a pan and add the onion mix and smoked paprika. Cook for two minutes then add the chicken. When the chicken is almost cooked through add coconut milk and tomatoes and season well, then set aside. Half the large peppers and stuff with the chicken pieces. Place in a baking tray and top with the remaining sauce. Top the peppers with roughly chopped nuts and fanbake at 180c for 30 mins. Serve with home made guacamole.0 -

I used sirloin instead of tenderloin and i didn't use whole grain mustard because of whole 30.... and I didn't have a vacuum sealer or a immersion circulator but it still came out fab.0 -

Yum, I have only tried lamb a handful of times in my past but looking at these pics I may need to delve into that again!
Also, I've seen a lot of people talking about freezing bananas and I still haven't done it yet! time for a weekend treat0 -

Here's some eats from the past few days - been hectic, due to Uni, and kind of a struggle to prep meals and get the calories in, so nothing all that fancy.
Salmon fillets with white rice and assorted veggies.
Frozen bananas, four tablespoons almond butter, blueberries and half a bar dark chocolate.
Three of the most AMAZING (hnnnng!) dark Belgian chocolates I have EVER had.
Ground beef and white rice. With gherkins, because gherkins are badass.
Cottage cheese, berry sludge.
And, tonight's dinner:
Ground up (with my meat grinder - awesome buy, btw ) oxheart/lambliver nachos with guac and gherkins. Mixed in a crapton of veggies with the mix this time round, so I have enough leftovers for the next couple of days.0 -
Chicken pizza - similar to meatza. Just real thin seasoned chicken breast.

That... looks... delicious. I've been thinking of doing something with chicken breast myself, maybe a "Primal Double-down". i dunno. :P
As for the cottage cheese sludge, it really couldn't be any simpler: step one, empty full fat cottage cheese (tastes waaaaay better than lite) into a bowl. Step two, pour berries of choice onto cottage cheese. Step three, stir the mix.
Done. Add some sweetener if you like or enjoy as is.
Tbh, it's the same as my Cottage Cheese ice cream recipe, just without the blender; been a little too busy lately to make stuff like that.0 -

Homemade coconut ice cream on frozen bananas covered in a drizzle of honey. Honestly, the ice cream was fantastic - and I whipped up a big batch on Sunday so i don't have to worry about desserts throughout the week, I can get at least another three generous servings of the stuff.0 -

Leftover salmon becomes Sunday morning brunch: salmon, artichoke & spinach fritatta w/ easy blender hollandaise
edited to add: Hollandaise is great for fritattas & omelets, b/c you use the yolks for the sauce and then you can toss the extra whites in with your fritatta--no waste! I use butter in my hollandaise, but I think I've seen some recipes that use coconut oil instead.0 -
