Breakfast (light because spin class, and eaten on the road):
Coco lite pop cake (it's a tortilla-sized cracker-like thing, 20 calories) with peanut butter
    Kefir
    Hot vanilla skim milk

    Lunch:
Oatmeal with berries, walnuts, flaxseed, hemp seed, Greek yogurt, cinnamon, molasses
    Iced matcha with lime wedge
2 cups coffee with hot skim milk

    Dinner:
Omelet with mushrooms, kale, onions, garlic, seasoned tomato sauce, parmesan
Romaine lettuce with cucumber, beets, onion, feta, red wine vinegar
    Thinly sliced black radish
    Cut-up raw celeriac

    Snacks:
    Oh MI chocolate
    Grapefruit vodka with sparkling water
    Crispy salted broad beans

(In case you hadn't guessed, I'm vegetarian ;) . I'm also in maintenance.).

@BBee5064, I don't think I've ever put sweet corn on a sandwich: I'll have to try that. Since I'm a veggie, it wouldn't be tuna, but I can think of some tasty options. Great idea, especially for later in the year when the fresh local corn comes in!

Breakfast: Oatmeal with fixin's like yesterday's lunch, 2 coffee with hot skim milk, iced matcha

    Lunch:
cottage cheese with nutritional yeast, turmeric, black pepper
    Prickly pear fruit
    raw jicama
    crispy broad beans

    Dinner (odd combination!):
spaghetti and kale with a black bean/rice vinegar/chili paste/onion/garlic/miso sauce
Side of cold cooked beets with vinegar
    Stone Delicious IPA

    Snack: Oh MI chocolate

Cold green tea & lots of water.

What a delicious sounding menu Ann.
I'm mostly a veggie but occasionally I have tuna or salmon. Pescatarian I think is the term.
Try sweetcorn in your sandwiches it's delicious .

Yesterday I had yogurt & a banana for brekki
Lunch I had a Thai veggie noodle dish
With a yogurt buiscuit bar for afters
Dinner veggie lasagna with garlic mushrooms & salad.
    Green tea ☕️

Thank you, RodaRose. I feel very emotional today because tonight is my last workout with my challenge team. My last weigh-in with them is tonight too. I've led the group in weight loss because I had the most to start with... but all of us have made incredible improvements in health and fitness. Very moving.

Have some members of the group decided that they want to stay together?

We're getting into the summer farmers market season up here in the palm of Michigan's mitten. I love farmers markets!

Asparagus season is winding down, strawberries ramping up. Every kind of greens is available: Beet greens are my favorite. I recently put some baby turnips in my omelette (with mushrooms, onions, garlic scapes, parmesan).

Awaiting consumption: Tomatoes (local but greenhouse), more beets & greens, more turnips & greens, bok choi, radishes, romaine lettuce, local feta cheese, more asparagus, more garlic scapes . . . . yum.

Tonight, I'm thinking stir-fried bok choi with onions, garlic scapes, and extra-firm tofu. Maybe a side salad with home-made blue cheese dressing? :)

    I put in a pan
    Kale
    Spinach
    Onion
    Coriander
    Chillies
    Peppers
    Chopped tomatoes
A couple of teaspoons of Harissa

You put it all in the pan with a little bit of oil, cook it up until boiling & then gentle put in your eggs & poach them. When the eggs are done to your liking. The dish can be served.
    Bon appetit

    My husband loved it.
    Result :)
