Well blast, not an idea about what is happening this week but I obviously need to change something.........1 -
Finished May with a whimper. Lost 7.6 pounds for the month but only one of those pounds in the last three weeks. Hopefully, June will be more consistent week by week. These pandemic restrictions are messing with my normal routine. No excuses though, I just must get use to a new normal. I’m going to keep keto a constant in my life and adjust to changes in my activities.

Here is how I make the mashed “Potatoes” with cauliflower ...super easy & quick if you have an instapot.
I use a whole head of cauliflower. Cut it into big chunk. Use the wire insert in the bottom of the insta pot. Put about 1 cup of water in the bottom. Place the cauliflower on the wire insert. Close the lid and set it to steam for about 7-8 min. Take the cauliflower out and put in a mixing bowl to mash. I use my hand held mixer. When I mash them together I use about 1/4 c cream, real butter, salt & pepper. Sometimes I add a little garlic salt and Parmesan cheese😋
The texture is a little thinner than mashed potatoes but honestly the taste isn’t very different.0 -

Thanks Tina! I love my instapot. We just had shortribs made in the instapot last night. When I make shortribs I use the liquid to make gravy. Tonight I'm going to make "Your" cauliflower mashed potatoes substitute and smother them with my gravy. Yum!!!! Thanks for the easy instructions.

Hey @tinafortenberry, I use cream cheese instead of butter and it gives me a firmer/thicker texture more likened to potatoes. I also add a little blue cheese sometimes when I pair mashed cauliflower with beef based dishes.1
