One pot good, right?
Had 680g "fingerling" potatoes bottom of fridge. Boiled them yesterday. Randomly came out perfect after unknown time boiling!🤯
Nuked 750g bag "Italian veggie" mix normally has more water so nuked uncovered 8 minutes 😝
Added 50g fresh red onion, 153.5g of the "maple" roast ham from Safeway and 365g of the boiled pot from yesterday.
Split into a couple of glass containers. Had one already.
Quite good actually--at least for me!!!!🤷♂️1 -

Assembly Yoly, assembly! The maple ham comes from next to the bbq chickens!🤯😝 Though I'm actually thinking of getting one from the fridge or freezer next time and putting it in the air fryer at a low(er) setting!1

So Yooly: I had the brownie from a hungry person dinner for breakfast! and added the corn from that dinner to 750g of (prev frozen) cute baby peas, together with 150g red onions, 200g of that maple ham and 470 of "fine herb" Castelli garden select spag sauce. Plus 6.4g sugar, 6.7g lemon pepper and 2g red chili flakes. Friend suggested ginger but haven't tried yet.
That was yesterday. Having finished my whole thingy.... It reminds me that I used to do thingies like this (ok they did involve more than a microwave but what the hay, right? )

Hmmm. Fellow Canucks. I've noticed that club house lemon pepper mix (or any lemon pepper mix) is nowhere to be found at Costco, Superstore or Safeway.
If anyone sees the Large size container (or any container) let me know pls! Lemon Pepper not lemon herbs. Thank you!

So basically a deconstructed Hungry Man dinner? What did you do with the main part of that dinner? It doesn’t seem to be incorporated into today meal. I’m not sure about ginger and herbed spaghetti sauce.
But seriously - a frozen brownie for breakfast? You’re a grown-*kitten* man!!!
I’m struggling with actual meals versus grabbing snacky but semi healthy food all day. I do much better with structured meals on a schedule. But the pesky health concerns have taken over my brain temporarily. More tests scheduled.
So right now I’m prepping for next week in New Orleans where food control will be thrown to the winds.1 -

What’s in the Texas rub? Generally most Texas bbq is just salt and pepper. Diehard Texans don’t even believe in bbq sauce of any kind. And god forbid any beans in the chili!
I’m trying to stick with scheduled sensible eating for the next few days. Because there will be gumbo, shrimp n grits, grillades, pralines, etouffee, beignets, muffulettas next week. Can’t do NOLA without sampling the goodies.1 -

Baked spaghetti squash topped with Cincinnati chili. A sprinkle of kidney beans and onion. No cheese - even though we had some lovely shredded smoked Gouda. There was also a green salad.1

1 egg, 3 egg whites, 2oz diced ham, 1/2 oz shredded cheddar, some green onions, all scrambled together. My new pans did not require even non-stick spray.
A little later for desert I ate two little individual pumpkin pie things (filling, no crust) that I made, with a dab of reddi whip on top of each. Gave very much a pie vibe.1 -
The good? canned salmon with onions and baby peas with onions, tomato sauce, and cauliflower rice for bunnies.
The NOT so good? A bit of an excessively excessive intake of accidentally acquired chocolate which in mini treats form are remarkably easy to consume in the errr... well sort of approaching right at the cough cough 200g range. That's on top of the creme brule and the cup of the pineapple orange ice cream cough sneeze frog in my throat... Not sure if I should shake my head or despair at ever learning to be smarter or ????
Just a TAD over maintenance for the day... by a half lb of real weight gain at a minimum...1 -
Nic - try this crustless pumpkin pie recipe. Basically it’s just filling. I amp up the spices and use low-fat evaporated milk and topping.

I made mine with 1 can pumpkin puree, 8oz of a high protein vanilla shake, 1/2 cup egg whites, 1tsp maple extract, 1tsp cinnamon, 1 tsp pumpkin pie spice, 1/2 tsp nutmeg and 3/4tsp liquid splenda. I baked them as individual portion in silicon muffin cups.
It made 12 exactly and they're delicious. Texture is good, not eggy at all.2 -

The previously mentioned salmon with onions and green peas with riced cauli rice onions and herb spaghetti sauce--I mean tomato sauce!
And may I point out the versatility of the veg in sauce bunnies! You can add meat products such as ham or sausage or even sprinkle olive oil (or nothing) and eat either hot or cold by itself or over rice or rice-like or even with bread or bread-like (such as Halloween cheddar rice cake packs in 20g bags)

Cheesy eggs/whites with ham chunks and scallions.
Dinner is pork ramen: I bought some pork (and chicken and beef) ramen seasoning, so mushrooms, leftover pork Tenderloin, bean sprouts and egg white noodles and scallions in the broth.2 -
hmmm.... I "run" into a take-out chinese bbq pork and roast pork on rice "portion" with a token two pieces of bock choi -- it probably ought to have been TWO dinners... 'nuff said.
Somethink like this only with about 33% more meat and bock choi instead of broccoli:

Well at least PAVs meal had some redeeming qualities. Mine blew the calories out the door! Fried shrimp and fried green tomato po’boy sandwich with remoulade sauce. Decadent, waaay too much but delicious 😋.
There will be penance next week!2 -
