    Sounds like my beef stew today - well except for your secret ingredients. I used some canned crushed tomatoes instead. I used fresh veggies rather than frozen. But the results were much the same!

    Change of plans. I broke the glass cooktop on my 22yo oven today, so we had to go buy a new one for installation Monday. So I made a "frittata" in the air fryer.

    1 egg, 2 whites, 2 pieces of Canadian Bacon diced into little bits, some bacon pieces, mushrooms and diced onion, plus 28g mozzarella cheese. 9 minutes at 390.

    Yup. Since we had to buy a new one, we went induction/convection. Giant upgrade over our glass top electric coil current one. I look forward to water not taking 15 minutes to boil.

    Oooooo: sounds like a new adventure! I admit that I've eyed them... before returning to a one pot microwave 🤯 I guess you'll be telling us about the adjustment? Is it simmering that is harder to arrange?

    My new pans are supppsed to work stovetop induction or coil, but have not tried induction nor convection oven. Will be interested to hear about it.

    My parents have an induction cooktop and I love it. Easy to adapt to, pans heat quickly, temperature is super easy to control, the cooktop doesn't get hot, so no concerns about burns or damaging anything.

    Wow! This looks good!!!!😎

    Here it is a danger day as we went for breakfast and I ended up with French toast and poached eggs and bacon.... I've logged it as just under 1000Cal.... but it FEELS more 🤯🤯🤯

    Better bargain: dutch stroop. Thick. Use less . And only on the one slice

    I guess the part I can't count is butter that they used in cooking the French toast🤯

    Obviously Dutch stroop is not available in Texas! Probably could get it on Amazon but there’s no point in unnecessary temptation. French toast is not on my breakfast list. However, a bowl of cheese grits….. oh my! 😋

    Best to stick with my plain yogurt, fruit and one hard boiled egg. 😏

    Spoilsport. Added 400Cal for butter and cream. Both of which I had forgotten to account for. Now at over 1300 it feels as I would expect! Hwy roberry of a meal spending excess calories for a fleeting breakfast hours ago!!!!🤯🤯🤯🤯

    I love French toast. Superior to both waffles and pancakes. Something about thick cut, eggy/custard deliciousness.

    So far today I'm orange (about 800g of carrots 🤯)!

    and.... half a medium pepperoni pizza 🤯.

    Still under 2k overall even with the mash potato envelope that went with the carrots and the big half of the oh Henry from last night (33g)

    Now let's see if I keep it together if i come back frozen from wind and rain!!!!😖🤔🤔🤔

    4oz of 85/15 ground beef, mixed with 14g shredded reduced-fat cheese and 14g onion, plus Kinder's salt/pepper/garlic seasoning. Gave it a quick grill. Had a half-serving of air-fried mini tater tots on the side and also 3oz of grilled asparagus.

    Lunch was soup:

    2oz cooked chicken breast, 4oz mushrooms, some ginger paste and minced garlic, chicken broth, scallions, soy sauce and a pack of egg white noodles. First time cooking in the new induction stove top since I just got induction capable pots for it yesterday. Love it.

    That soup sounds very very interesting!
    I admit that ever since I've signed on onto the counting bug, ground beef throws me for a loop!
    I mean unless it is super extra lean and I don't drain, then I am not keeping all the fat.
    And if if throwing out most of the fat (but also juices) how the bleep do I estimate what amount of fat remains? :anguished::pensive:
    Of course, lucky USA denizens have the wisdom of https://fdc.nal.usda.gov/fdc-app.html#/food-search?query=beef, ground, cooked&type=SR Legacy but in Canada we only have regular (MAX 30% fat), medium (MAX 23% fat-seldom seen @ retail), lean (MAX 17% fat), and extra lean (MAX 10% fat)!
    Lean (max 17% fat), is the most commonly available, but it has no direct correspondence to a USDA value! :disappointed:
    I suppose averaging 80% and 85% for the weight would do... but it is painful I tell ya, painful!!! :lol:

    Yeah, I used the value for beef, Ground, Cooked, broiled, patty, 85% lean last night because I cooked it on the grill so I know it dripped. And the standard is the raw 85% lean loses about 25% of its weight, so my 4oz patty's cooked weight was logged as 3oz (I mixed about an oz of extras into the meat, but a quick weigh of the patty correlated closely enough, taking that into account).

    If I'm pan cooking ground beef for Crumbles, I use 90 or 93% Lean and don't drain and either use the raw value (cooking for me only) or cooked weight (like if I made tacos for all).

    Oh an pan sauteed mushrooms.

    I took an 8.5 mile hike (with almost 900 feet of elevation change) so you'd think I'd be starving. But I am not.

    THAT is a GOOD hike! Awesome! Where did ya go? Might hit you tomorrow (for the wanting food to compensate)... then again you're probably quite active at work and such under normal circumstances...

    Uh, we live in The Tennessee River valley, but right at the foothills of the Appalachian Mountains. It was at one of the land-trust nature preserves here in town, only 30 minutes from our place, apparently in the saddle between Huntsville Mountain (on which we have a state park with loads of hiking) and Green Mountain (which has another nature preserve). Below is the view from the top, and a bonus picture of me and the husband after, with the top down, lol.

    Well the view is awesome from up top! So glad to see you guys taking advantage of it... I won't even ask about the temperatures with the top down!
    I admit to looking up your area! Not to mention that Travis S Taylor and John Ringo mentioned Huntsville a few times in books I may have read back in the day and in a universe far away.
    I was surprised to find out that Huntsville has significantly fewer people than I would have though. In my mind your population was about 4x higher!
    You've got a lot of trails around there by the looks of it! The ai's think you should explore Monte Sano, Blevins Gap.... and the Huntsville Paddle Trail! :smiley: I think they got a bit confused there about which human appendages are involved in hiking... but hey... it still could be a nice outing for you!

    Blevin's Gap is where we were yesterday. We've done a couple different Monte Sano trails in the past but may tackle some of the more adventurous ones in the future. Top down: it was 79°F (26°C for my fellow Canucks who still reside in the Motherland).
    Also, when considering the size of Huntsville, you have to include Madison (where I live) at the least, because we're one thing. The metro area is 414k, and growing every year. When we moved here in 2003 it was a measly 235k. So we've seen a 76% population increase since then. Madison alone has jumped from roughly 35k in 2003 to almost 61k, about 78% growth. Crazy.

    Yooly, he's been super supportive. He's a good man, which I should hope since we've been together 25 years!

    The leftovers from my steak, cut into strips. Fajita mix (peppers and onions). Greek yogurt mixed with hot sauce, shredded cheese. Fajita bowl!

    We’re lucky women! Hubby and I just celebrated our 50th!

    I think one of the surprises of losing weight was having my husband unable to find me in Walmart. Although we were together through the whole journey he had become “used” to a much larger woman by his side. So he wandered about and past me looking for the bigger lady!
