  • I had to limit my iron due to kidney issues, and my nephrologist suggested I start taking a B complex vitamin for my anemia. I’m no longer anemic, but it wasn’t severe to begin with.
  • I view potatoes as wholesome carbs! They are a complete protein, have fiber, loads of potassium, and other micronutrients (not sure if that's the word I'm looking for). Keep the skin on!

  • My stumps below the knee are very short and don't bear weight. When I stand on my knees, my balance is compromised and I sometimes fall backwards onto my butt. It seems dangerous to me to be lifting barbells that could land on me if I lose my balance.
  • Resistance bands can be super cheap! I got mine from PT clinic, and they have spools of them. They just pull out a length and cut it off. I wonder if you could go somewhere that offers Physical therapy and see if they'll sell it to you, or even just give it to you.

  • What are sweet cubes? Mustard for sure, sometimes extra pickle juice in addition to relish, and chili paste like sambal oelek. I also make a tofu or bean based mayo for salads like this!
  • I like my oats both ways! One of my favorite ways is sautéing peppers, onions, and garlic and topping my oatmeal with it, along with black beans, corn, and salsa! For other ideas, just think of toppings you might use on a baked potato!

  • I eat popcorn everyday. One, because I love it, and two, I've found it helps with constipation issues :D A piece of toast can be great, too! Spread with refrieds and salsa and avocados. Spread with hummus and topped with spinach leaves and tomato slices. Filling enough when you're peckish but don't want a full meal!

  • If I have a snack and then get engrossed in something I may forget dinner, and by the time I realize it, I'd rather go to bed than eat. But then when I get up I'm super hungry and have a big breakfast :)

  • Yay for popcorn!! I eat a bowl every day, and usually as the last thing I eat. I find if I have it as a midday snack I tend to forget dinner if I get involved in something, and then oops! It's 2 am and I just turn in. Late night popcorn ensures I eat dinner :)
  • I like to make a batch of baked potatoes and freeze them. Then you can take one out at night to defrost and all you have to worry about are the toppings. Black beans and salsa is one of my favorites. You could also make a batch of light cheesy sauce and put over broccoli from a freezer pack!
  • I became ill in early Jan, but my weight has blown up, and gone pathetically thin. Now I'm a little chubbier than usual, but from the drastic weight changes, I do notice a change in skin elasticity. Booo :(
