My family loves slow cooker chicken tacos... I use a 3 lb bag of boneless, skinless chicken breasts (usually frozen when i put it in), your favorite taco seasoning, and a medium jar of salsa. Cook on low 4-6 hours and then shred with forks. Delicious! I love it on top of my salad.

I had the same problem. After tracking a little while, i saw i was strugglung to get my protein and fiber goals. I added a pritein powder and benefiber to my morning smoothie. I keep a couple different Fiber One bars on hand for the times when fruit won't cut it. They are either 90 calories or 150, depending on which one you choose. My kids enjoy the also. My daughter loves the salted caramel cheesecake bar. They taste good and help me get more fiber in my day.
