It really comes down to your deficit. I would guess that your calorie intake or outtake isn't accurate. If you're consistently in a deficit, then you will lose weight. On days that you're not in a deficit, your intake should be the calories you need to maintain your weight, which will prevent you from gaining anything back.

Long-term, I definitely don't want to function. Once I'm in a position to maintain, I absolutely want to exercise for the enjoyment and having a higher caloric intake will certainly help to minimize that feeling of "earning food".

Well, if we're being honest here, the worst thing to happen to our environment has been humans. If you're comparing the damage that cows do to the environment to the damage that humans caused, humans will come out as the bigger villains every time.
