Day 2 on Annie's program and she focused on how drinking effects sleep, never realized the impact. Now I know why I would wake up at 3 AM, not be able to fall back asleep and feel like I never slept at all. Watched a Craig Beck video on peer pressure where he specifically addresses spouses who still drink. Guy is very good.

In my opinion atlantic salmon has the best flavor. Having said that, also living in the midwest (central Wisconsin). we can buy Atlantic salmon pieces reasonably. I skin the pieces and make salmon patties with fresh salmon and they are the bomb!! Totally keto, totally low carb, totally tasty!!

Coconut flour , like almond flour, will not thicken anything. They do not have gluten, like unbleached AP flour, which is used for gravy. Use xanthan gum or arrowroot like others mentioned.

Plenty. Normal "fasting" for blood work is no eating or drinking after 6 PM the night before if your blood work appointment is the next morning.

I will get up at 4-5 am and test at 12 noon before my first meal, and it will still be high. Trying to find out why and control it.

Wow. Fit GOAT, you give a person a lot to think about and who can argue with your results? It would be cool to not have to log everything. Sometimes it almost feels guilty not to log food. What you propose would be much simpler. I gotta try it. What do I have to lose? (no pun here)
