I make a corn salsa type thing on Sundays. Black beans, corn, onion, cilantro, lime juice, garlic and a can of rotel. Every morning I have 2 eggs and 1 egg white. Put some of the "salsa" on top with a slice of low fat cheese. Delicious!

I like scooping some fat free refried beans, a small amount of cheese and salsa onto a low cal tortilla. Zap it in the microwave and it is like a burrito. My favorite however is to use a flat out flatbread and use the beans or meat with salsa, cheese and lettuce or tomato. Satisfies my Mexican craving!

I do frozen chicken breasts, can of rotel, jar of my favorite salsa, black beans, corns, onion and green bell pepper. Interesting, I have never heard of the rage side effect. I will definitely be on the look out for that-- I find it interesting as well I was put on it for "mood stabilizing" if it can increase rage tendencies. THanks for your response!
