So what's everyone's game plan? I'll be swimming 3-4 days/week, prepping, tracking (honestly!) and drinking water! No specific food plan yet, but working cleaner foods back in to my days.

Shake N Bake has a ranch and a parmesan coating which are only about 35 calories a serving. You could mix both together and coat twice as much chicken!

Ghiradelli makes an individual packet of coffee that is peppermint mocha... (one of my personal favs!!) you can usually find it at Target. If you're used to eating 2800 calories a day, I would start a little slower and maybe go for 1/2 a pound a week and drop your calories gradually or else your body might think it's starving and hold on to the weight. Like you said you didn't gain it overnight so you won't lose it overnight.

knock out the sugar and grease asap, lots of protein and veggies first. The dumping is primarily due to sugar. It's an awful feeling.

For the coffee issue, since this is what seems to be the issue, what if you try replacing some of the creaminess in your coffee with some skim milk and some of the sweetness with a splenda/stevia and using the creamer for just the flavor... so maybe a tablespoon of creamer, a tablespoon of milk and a packet of splenda.
