How can I make this healthier?

This is one of our family favorites. I'm wondering how I can make this healthier without compromising the awesome taste? I was thinking of maybe using milk instead of butter before the breading? Or could I use Pam olive oil spray instead? Also, any ideas on the calorie count for this? I couldn't find it in the database.

Maybe use a different binder instead of butter? Try some skim milk instead of butter. Cut the parmesan cheese in half maybe?
It looks pretty healthy already except the butter...... try some different corn flakes that are the healthiest you can find at the store???0 -
I'd use a beated egg white instead of butter to make the coating stick to it.0

Instead of cornflakes, try fiber one cereal. Parmesan cheese isn't really terrible and I just don't think that's worth cutting out. I don't know about using milk instead of butter. When I make chicken parm I usually use eggs and flour, then coat in a mix of parm and italian bread crumbs, but that isn't healthier at all.
good luck!0 -
I'd use a beaten egg (whole) to coat the chicken, then coat in Panko bread crumbs with the Parm mixed in. One egg is more than enough for several chicken breasts and you'd be surprised how few calories are in the bread crumbs and cheese mixture.0

I agree with the above posters. Skip the butter, wash and dry the chicken really well, coat in a mixture of 1 egg white beaten with a tablespoon of water or milk, dredge in panko/parmesan/ranch mix, bake 'til done.
That sounds pretty good, actually. I may have to try it myself.0 -
Shake N Bake has a ranch and a parmesan coating which are only about 35 calories a serving. You could mix both together and coat twice as much chicken!0
