I'm not sure how you did this either, but when I cook sweet potatoes/yams in the oven, I usually bake mine at 400 degrees for about an hour (depending on size). I would try and stay away from red meats since they have the most cholesterol. Chicken, turkey, fish, shrimp, and most types of beans (black, red, white, etc) are all great ways to get in your proteing while keep cholesterol low.

That seems high for just vegetables with no meat, cheese or dressing. I guess it depends on how many veggies you put on the salad, but I'd double check it.
