Log your food and additional exercise for a couple of weeks, then see how much you lose. The difference between your expected weight loss and actual weight loss could be largely attributed to the calories you burn whilst doing your job.

Is it emotional/habitual hunger or physical hunger. If its a more sudden feeling then it is probably emotional/habitual hunger, if it is more gradual it is more likely physical hunger. For the evaporated oil in cooking what should the person who cooks the food do? If they are over the pans all the time they will be breathing in so many calories it could make them fat.
