So Delicious Cashew Milk ice cream in the Dark Chocolate Truffle flavor is my faaaaaaaaaaaaaavorite. Even my husband, who isn't vegan, will steal it. I also like to make my own with just frozen bananas, a splash of almond milk, and maybe some vegan chocolate chips.

Make your own homemade bars or opt for a piece of fruit. Bananas are cheap, easy to pack and eat on the go, and they're delicious.

I was lazy and just cooked up a Tofurky Kielbasa and cut it into chunks to mix into one of those bags of steamable grilled veggies. Quick, easy, and a ton of food for under 500 calories.

Have you tried tofu, tempeh, or seitan? They're great for protein. Also, if you're lacto-ovo, eggs and unsweetened Greek yogurt are great sources as well.

It's easy enough to get protein in with vegetables, grains, and legumes. If she chooses to eat meat replacements, like Quorn or veggie burgers, those are usually full of protein. I don't start a new day until I wake up. I'm a college student who doesn't get off work until 1-2 AM. This means I'm usually eating dinner around 11 PM or even after I get off work at 2 AM. If I started a new day at midnight, logging my dinner before my breakfast would just throw me off completely.

Don't be overly concerned with fruit in sugar. I'd watch out for added sugars in processed foods more. Fruit is amazing and can be a great source of vitamins, minerals, and fiber. Just don't overdo it. If you're worried about the fruit in sugar, just exercise moderation, especially with very sugary fruits.

Another thing that will be helpful is planning ahead. If you know you have 5 hours of class back to back, pick up a snack in an on-campus market or the dining hall (if they allow it). Grab a piece of fruit and throw it in your backpack so you're not tempted to get chips or a candy bar from the vending machine in between…

The grocery store I go to does put out extra meat they didn't sell, but I haven't noticed a specific pattern. Occasionally my fiance and I will find a big pack of meat with a "Price reduced!" sticker on it and we freeze it immediately. It will last us a while once it's frozen.
