I leave the peel on and just cut off what I need, then I put in a ziplock bag & put in fridge. It gets a little brown where it's been cut but it is still good. I've had them last for more than a week this way.

I agree with you about allowing ourselves to have treats vs cheats. Knowing it's ok to have a treat every so often is what keeps me on track.

I love it mixed with any type of fruit. I also put it on salads or I just eat it plain with pepper on it.

Don't be discouraged about what the scale says. I find it takes my body a couple of weeks before I see a big change in the scales after changing up my workout or a week of hitting it really hard. Just keep up the hard work & you will see changes!!

I take a 1 step angel food cake box mix and a lemon cake box mix and mix the dry mixes together well either in a ziploc bag or a storage container. You can also make with a spice cake mix & 1 can of pumpkin. My husband & teenage son love these!! We always make a double batch at a time & they last about 2 days. Another one that was a big hit was Triple Chocolate Fudge cake mix.

Sorry don't have any suggestions for you! I am scale obsessed also. I weigh myself every morning, every night before bed, and even in between most days. I know my normal weight fluctations for any time of the day, so for me the number doesn't dictate my mood but keeps me on track. Eager to hear what others have to say!
