I do keto and primal. I think there is a lot of room for overlap between the two lifestyles. It happens to everyone. At least you recognized and learned from it! :) I fell off for like 2 months. Luckily I didn't gain too much, but I felt like crap. At least the weight I gained seemed to be mostly water weight and came off relatively quickly when I started back again.

I eat stir-fry a couple times a week. Usually on Sunday I will just cut up some chicken and whatever veggies I have a saute them all with some coconut aminos/soy sauce. Super easy and warms up decently. Or steak with veggies and worcestershire sauce.

I'll have to try these. I despise chocolate, so I've been looking for a fat bomb recipe without it. The cheesecake fat bombs mentioned previously sounds great, as well.

If it's not chicken livers, I grind it up and add it in with ground beef. For chicken, I like to make a version of Julia Child's mousse. It's delicious with apples.

Buttermilk is thicker than regular milk and tastes sour. I think it's mainly used in the southern US for biscuit making and baking. I think I've heard of it as a chicken marinade, also.

No carb? What do you eat? Just meat? Are you opposed to low carb? I don't know all the carb counts of vegetables, but I can't imagaine you're getting many if you are completely avoiding carbs.

I do low carb, but count calories, as well. I don't worry if I go over my target much (1300), but I do try to stay around that. Have you calculated your macros? That may work better for you. I don't think I'd do well with so many restrictions.
