I agree that you should check out The Paleo Approach. A great resource for autoimmune issues. In addition to dairy and gluten, I've found corn, tomatoes and eggs (egg whites) also to be a big trigger for for my inflammation.

Have you tried kombucha? Its fizzy, tastes good, is loaded with probiotics and, if you don't want to buy it, it sounds relatively easy to make. Might be a good sub for those soda cravings?

I love avocados so I don't typically hide them, but do put a half avaocado in my morning smoothie every day. Its makes it really smooth instead of gritty with only veggies and fruit. My 3 year old daughter hates them, but never complains about it in a smoothie.

do you have access to a pool? With your joint problems, swimming or water aerobics are great workouts, but are so gentle on the joints! Good luck with the functional medicine doctor and primal living. With the endocrine stuff, it may take your body a bit longer to respond, but stick with it!

I just read "New Rules of Weight Lifting for Women". Its a quick read and has a great program that is easy to follow. Even if you don't want to follow the program exactly, it has lots of good info on lifts and form.

I took a quick look at your diary and agree with other's comments. Try a week or two of increasing lean protein and vegetables and reducing the amount of bread/pizza crust (refined carbs) and see what happens.

Me too! Every summer I struggle to keep my weight off and its totally related to social eating and wine/beer drinking! Usually I can hold the weight gain to a couple of pounds, but I've gained 7 since June!!! I am embracing fall and am determined to get those pounds back off!

I've been running in Brooks Adrenaline for years. Love them, they don't change and have been basically injury free since (including training for 3 marathons and several half marathons). I add the Down Unders insole and for me its a perfect combo.

I use 5 or 8's depending on the day... I find 5's not challenging enough for some things (squat and press, lunge and bicep), but 8's are too hard. I cannot (workout 1 - side lunge and lifting arms straight out in front and squat/fly). I guess that tells me where my weaknesses are???

One doesn't need dairy to get their calcium. There is an option to track calcium in the macros. I suggest doing that for a week and see what your numbers are.
