Need to eat more fat!

I recently had my cholesterol tested and it turns out I’m golden in all aspects but my HDL (good cholesterol). As a female I should be hitting over 50 mg, but it turns out I’m well below that… even below the male target of 40 mg. The doctor told me I need to eat more healthy fats.

I eat olive oil, almonds, peanut butter, drink almond milk, fish, chicken, you name it nearly every day or at least once a week. I have no idea how to add more unsaturated fat into my diet.

Does anyone have any other recommendations? There has to be something I’m missing that would be easy to add daily. And I hate avocados and dairy milk so please don’t recommend them.

Saturated fats also raise your HDL. Coconut oil and butter come to mind.

More nuts - macadamia nuts, cashews, walnuts, but in small amounts if you're trying to lose weight (I try to stick to 1/4 cup).

Also almond butter, avocados, and coconut oil.

Ick to avocados. I cannot get past the taste no matter how good they are for you.

Hmm... never used coconut oil before. Would it be treated like olive oil?

Yep you can cook with it as per olive oil. It's cold here at the moment so mine is in solid form and I can literally eat it by the spoonful because it's delicious

With dairy milk out, does that rule out ice cream?
