I normally get 1-2 colds per season. I am not good with a cold virus. I usually take at least 1-2 days off during the worst of it. Having said that I am fairly healthy for my age. My body just does not do good against that virus.

While I do not count tea as water, I do get a lot of medicinal herbs from a CSA (Community Supported Agriculture) with who I have a subscription. I normaly eat some kind of grain oatmeal, grits or kamut cooked in skim milk with a little maple syrup. Maybe a piece of fruit and a soy smoothie. I do not have a solution. But I have the same problem when I have used dried beans. I have even soaked the beans for up to 3 days. Maybe a pressure cooker might work?

I do not see what the problem is with you logging everything and taking your health seriously. I personally would kind of enjoy the fact that you take such good care of yourself. Maybe log it when he is not around if it is such a problem. You need to have a certain amount of freedom in any relationship (IMHO).
