I am with montana_girl. If you are getting your carbs from healthy sources--grains, fruits, veggies... don't worry. Carbs are GOOD for you when they aren't overly processed.

I've gotten great results from machine work outs. Some work better than others, I prefer doing both free weight and machine, but I am more consistent with machines and saw plenty of definition working machines 3 to 4x a week. Just pay attention and increase your weight accordingly.
