Last night I had a tomato sandwich for dinner. I had a gyro for lunch and it was HUGE so I wasn't super hungry. So I made my first meal on the George Foreman grill last night. Hi all. I was here awhile ago, but have recently started to look around the group again. I am not vegetarian or vegan, but I am trying to cut down on the amount of meat I eat. Which is why I loved this group before. You were always so welcoming even to those of us who have not given up the meat totally. So thank you.

I do something similar, but I sauté the spinach and then put on top of the chicken under the cheese.

I know you are right Yooly, but I am a planner. So it can be really hard for me to just jump right into things like that. But I do have a plan for starting Saturday.

I do like to mix it with scrambled eggs. Makes them super creamy and I don't notice a difference in texture or flavor.

Making taco bowls tonight. Seasoned ground beef, lettuce, black olives, salsa, pepper jack cheese, sour cream, and guac. Will have it with a serving of tortilla chips. May also add some beans. Not sure yet.

I am thinking next week will be a good start for starting to try and log again. I don't have any big plans between now and September (Disney) that could throw a wrench in to things. I would start now, but I didn't plan for it and am kinda just surviving this week.

Tonight I am making baked BBQ Chicken thighs, glazed carrots, and a box of pasta roni. Trying to eat what I have to cut back on costs the next few weeks.

Another week of insanity at work just about done. There are 2 times a year where things get crazy. This is one of them. Tonight is beef bulgogi (frozen from Trader Joe's), rice, and stir fried veggies. I have some fresh Bok Choy along with a bag of frozen stir fry mix so will do it all together.

Did another mile walking yesterday. Then was going to go for a walk today, but pulled something in my back and fell this morning. I may try and do some stretches a bit later, but gonna let the back rest otherwise.

Did a loaded baked potato last night. While I do some of the fun stuff like butter, sour cream, and cheese, I measure them all out and add broccoli. So it ends up not being too bad and it is REALLY filling. I will be doing the same tonight.

Walked 5 miles yesterday... no idea how long it took. I wasn't watching the clock. Just enjoying the weather and seeing all the people out and about.

I walked around 5 miles yesterday so today I am resting to hopefully not trigger my fatigue. It was just so beautiful yesterday that I went down to the lakefront and kept walking. Downside? I forgot the sunblock so today I am nursing a sun burn on my shoulders, upper back, and upper chest. Yay for aloe gel! Going to meal…
