I know I should, I'm just being a little intimidated for some reason. Travelling alone, eating in restaurants alone, etc, doesn't phase me at all but when it comes to a gym in another country, it's a different story for some reason... I've got a lot of travel ahead of me so I really need to get the hell over it :)

You are NOT falling short on calories though! Your diet sounds perfectly balanced to me but if you're not weighing your food, you're underestimating its calorie content. There is just no way you can be eating the things you're saying you're eating and be so far under your calorie goal. Please take this advice from people…

Yeah, I agree that there's no way that you've only eaten 800 calories given that list including rice and peanut butter. Please buy a food scale. It is the only way to really have any accuracy with your food. If any of us were any good at guessing and portion control, we wouldn't have gotten fat in the first place...
