A good book to read about going wheat free is "Wheat Belly" by William Davis. He has some gluten-free recipes in the book, but he also explains how eating wheat, which is where the gluten is, gets you to eat non-stop.

Today I have completed the 182+ miles. This experience has helped me to keep my eyes on these dear victims -- most have had life altering wounds. My heart and prayers will continue to go out to these victims and their families as they will have a lot of adjustments to make in their lives.
