  • I've found a really good organic, whole-grain bread that has sunflower seeds on the crust. I toast that, and top with a slice of Havarti cheese (very soft & mellow). I splurge by putting cinnamon creamer in coffee. Often add fruit (banana / tangerine / apple) to round out the meal.
  • Zucchini Tomato Salad (all measures are approximate - suit yourself!) 1 small-medium zucchini 1 cup grape or cherry tomatoes 1/4 cup feta cheese 2-3 Tbsp balsamic vinegar Slice zucchini thin using a mandolin or grater.   • I'm in the same boat - got a bad report card from my doctor last year, did a lot to improve so now I'm about halfway to my goal.
