"Salsa Chicken" - a favorite of mine for the slow cooker; quick to fix, if you don't mind starting it ahead
4 boneless chicken breasts (around 2 lbs)
1 envelope taco seasoning
1 jar salsa
1 can chopped green chiles or jalapenos (optional)
Combine in slow cooker; cook until chicken will shred easily (around 4 hrs). Remove chicken, shred with forks, return to cooker and heat another hour.
Serve as you like - in tacos, burritos, tostadas; over a taco salad; over black beans or rice; scoop with tortilla. Add toppings (cheese / sour cream / guacamole / lettuce) as desired - make a taco bar for the kids.1 -
So easy this, barely a recipe: a hot griddle or saute pan. A smidge of olive oil to heat. Scatter some Mrs. Dash and black pepper on some white meat chicken, both sides, and toss it in the pan. When it's golden, turn the chicken over and let that cook too. I do the same thing with top round beef slices. On Sundays, I make a week's supply and use the meat as a foundation for lunch sandwiches or salads.1
