I like making oatmeal pancakes. I mix a serving of dry oats and one egg (or 3 egg whites). If I use plain oats then I add in some cinnamon. I heat it on the stove, a few minutes on each side. Top with a little syrup and fruit.....yum!

For the cardio recovery I burned 250 cals if that helps at all!

Thanks for the advice! It actually came today so I plan on starting tomorrow, I'll have a full week in and just pick up where I left off when I get back and get in some activity when I'm away.
