Chicken & mushroom risotto. No cream, use spray oil. It's a cheating one though because after cooking off the wine I chuck all the stock in, put a lid on the pan and leave it for 20 minutes before coming back to check it. Still tastes awesome!

I love chicken parm too, we had it for dinner on thursday - too yummy! I like the sound of the bean mix over brown rice. I think I will try that and mix in some cooked chicken at the end. Never tried huevos rancheros before, will have to give them a go. Thanks!

My current favourite snack. Peanut butter stirred into full fat Fage Total Greek yoghurt with pink lady apple segments to dip in. Delicious! 323 calories.

My lunch today. 3 egg omelette stuffed with ham & mozzarella and some more of the ham on the side. It's Marks & Spencer Wiltshire cured honey roast ham and it was delicious. I should have used cheddar as the mozz wasn't flavoursome enough for me but a decent enough lunch anyway. 535cals all in.

Is that a low fat/cal Pastitsio? I have a recipe I love but it's too many calories for me to fit into a usual day. Would love to get a recipe for a tasty low cal version.

This was my lunch on saturday. Breaded chicken fillet in a wholemeal bap (both from Marks & Spencer) with extra light mayo and a salad of mixed leaves, orange peppers, olives and extra light salad cream on top. Yummy! 491 cals all in.

Thanks! I like the idea of weighing it and then putting it on as the mince. I'm sick of dry fat free meat products, so I'm happy to spend the calories on the fattier stuff :)

When I lost weight before it was with weight watchers. I am currently on 2400 cals a day which I got to by using the fat2fit radio method, and this includes my exercise calories.

5'10" here. Always happy to have new friends. I have lost 40lbs and am now 247.5lbs. Am hoping to get to around 175lbs but I am going to concentrate more on body fat % that BMI. Just to add I wrapped these individually in cellophane and they still taste great when defrosted. Just got them out the freezer in the evening and left them on the side for the following day. I'm going to make a HUGE batch next time.

Yes, it is much lower in pretty much all the bad stuff (sugar, bad fats, empty carbs) and higher in all the good stuff (protein). Plus it tastes LUSH! Here in the UK they have an advert on to try and convince you to give Nutella to your kids for breakfast as it's soooo healthy. Very misleading IMO. Almond Butter is a great…

This has always been my thinking up until now. I keep reading though that drinking diet sodas make your body think it's getting suagr and can mess it up and make you crave sweet food more.
