  • Vegetarian currys can be very yummy. One chickpea curry recipe that I love is here: http://norwayveggie.blogspot.com/2008/11/chickpea-curry.html Don't worry, it's in English as well as Norwegian. I make it super-spicy so that it helps me drink more water :) One serving is about 250 calories, I think. It'll be more if you…
  • Congratulations Wendy, Cinthia, Anna and CindyK on completing the challenge! Great job! I wish I would be able to do 22 work outs in May as well, but it turns out that my legs are only happy with running 4 times a week, not 5. I know should have added some other exercise on the fifth day, but, well, that hasn't happende :/…

  • I usually have just plain oatmeal, or oatmeal mixed with some other grains, with milk and some fruit/berry/jam on it. Quick and healthy!

  • You could alway try, but I think it would need quite a bit of change of the recipe if you are to skip the banana entirely. The banana is the glue that keeps this cookie together, and I don't think apple sauce would work the same way. An egg and a bit of peanut butter might work, though, but I'm no expert, so I can't…
  • I've made these cookies twice now, and I really like them. The first time I used nuts (hazelnuts, I think) instead of fruit, the next time I used a mixture of sunflower seeds and flaxseeds instead of fruit and used peanut butter instead of applesauce. I must say I prefer them with peanut butter. Sure, it adds more…

  • After my last post, I got an urge to bake a good, healthy bread, and came across this recipe (in Norwegian, but with lots of pictures): http://www.kjernedryss.no/brukervennlige-matoppskrifter-det-er-broedet-mitt/article126-110.html I happened to have most of the ingredients, so I started baking, and now the bread is just…
  • I'm 176 cm tall (5'9") and my weight is about 150 lbs (don't have a scale). MFP gives me 1400 calories a day, and I eat at least that, usually more. I exercise (run) about 4 times a week, burning 400-500 calories on each session. Sometimes I will also go for a walk in order to have more calories to eat.
  • I have a few recipes that I love, but unfurtunately I don't have any nutritional information on them and they are all in Norwegian. I'll be happy to both share and translate (as well as I can), though. They are not really "diet-food", but I think they are reasonably healthy and very tasty! Rye-bread with honey, about 2…

  • I'd love to join this challenge, and I think I need it in order to remember to work out even during my exams :P But I'm curious, what do you define as a work out? Is it okay just to go for a walk, or should I only count harder work outs (i.e. 60 minutes of running)?
  • Also, if you run you could also bring your running shoes. In general, there should be lots of possibilities to go for a run (after all, if you can walk some place, you can also run there ;) Where in Europe are you going?
  • When running, I mostly listen to Pennywise, the Ramones, the Sex Pistols and Raga Rockers. I think a lot of their songs has a nice beat that keeps me going at a good pace.
  • This "spagetti squash" everyone is talking about sounds very interesting. Do you have a recipe? I haven't done any huge discoveries, the only ones I can think of of the moment is that no-fat milk taste is just as good as normal milk, and that tuna is great and can be used in pretty much anything :) I never used to like…
  • My breakfast is usually somewhere between 350 and 600 calories, and it is easily my biggest meal. I like to run in the morning, so my breakfast often consist of two meals, a prerun banana and a glass of milk and then the "real" breakfast postrun. I usually have oatmeal with milk and some kind of fruit/berry/nut and a cup…
